Sea cucumbers are animals—not vegetables—and belong to the echinoderm group alongside sea stars and sea urchins. They live in oceans around the world, from shallow habitats to the deep seabed. Many feed by taking in sediment and digesting the small amounts of food it contains, helping move nutrients through seafloor ecosystems.
What are sea cucumbers?
Sea cucumbers are marine invertebrates in the phylum Echinodermata. NOAA reports more than 1,000 species worldwide. Their soft, leathery bodies look quite different from the conspicuous spines or rigid plates often associated with other echinoderms, but they are relatives of sea stars and sea urchins. NOAA Ocean Service explains their classification and basic biology.
The name describes their general shape, not a plant-like nature. They are animals, and the group includes varied body forms and ways of life. Although many live on the ocean floor, some deep-sea species can lift off the bottom and swim; others spend their lives in the water column. “Sea cucumber” therefore does not mean only a slow-moving animal crawling over the seabed. NOAA Ocean Exploration describes these deep-sea forms and behaviors.

Soft body and feeding tentacles
A sea cucumber has a flexible, leathery outer covering. Around its mouth are modified tube feet that gather food particles. Tube feet are characteristic of echinoderms, though their arrangement and use vary across the group. NOAA’s overview of sea cucumbers describes how the mouth-area tube feet collect particles.

Breathing through respiratory trees
Deep-sea sea cucumbers do not have lungs. NOAA describes a pair of water-filled respiratory trees beside the digestive tract: water moves in and out through the animal’s rear opening, allowing gas exchange. This arrangement avoids relying on air-filled spaces that would be vulnerable to the extreme pressure of the deep ocean. NOAA Ocean Exploration outlines this respiratory system.
What do sea cucumbers eat?
Many sea cucumbers are scavengers or deposit feeders. They collect small particles, including bits of algae and microscopic marine animals. On the deep seabed, where food can be scarce, some ingest sediment, extract the nutrients attached to its grains, and pass the remaining material out of the body. The animals are sometimes nicknamed “vacuum cleaners” for this deposit-feeding behavior, but that is an informal comparison, not a biological category. Feeding strategies are not identical across all species. The sediment-ingesting pattern is especially useful for understanding many bottom-dwelling deep-sea cucumbers; it should not be taken as a universal description of every species or habitat.
What role do sea cucumbers play on the seabed?
As sea cucumbers ingest and expel sediment, they process and redistribute material on the seafloor. Their activity can help aerate sediments, while the food particles they consume are further broken down by bacteria and contribute to ocean nutrient cycling. These are meaningful ecosystem functions, but they do not mean sea cucumbers alone determine the health of a seabed. That expedition page records a Pannychia sea cucumber observed at 2,320 meters (7,610 feet). This is the depth of one observation during the expedition, not a maximum depth for the species or for sea cucumbers generally. The example shows one way deep-sea animals interact with sediment; the group as a whole occurs throughout the oceans, and NOAA describes it as particularly plentiful in the deep ocean. Sea cucumbers are eaten by fish and crabs. People also eat some species, particularly in parts of Asia. Processed products are often known as bêche-de-mer and supply Asian markets. NOAA summarizes their predators and human consumption; the Food and Agriculture Organization’s 2008 global review of sea cucumber fisheries describes the processed products and markets.

That FAO review documented substantial fishing pressure and overfishing in many of the areas it examined, alongside the importance of fisheries to some coastal livelihoods. These are findings about the period and places covered by the 2008 review, not a current global stock assessment. A later FAO management report said at least 60 species were fished in more than 40 countries as of its 2010 publication-era account; it emphasizes that management measures should reflect the particular stock, ecosystem, and socioeconomic setting.
