Salt is the only seasoning Peter Luger’s steak gets before broiling. In an interview, Peter Luger vice president and co-owner Jody Storch specified kosher salt; an Eater kitchen account likewise describes the porterhouse as seasoned only with salt. Clarified butter appears later, as part of the serving and finishing process—not as another pre-broil seasoning.
What seasoning does Peter Luger use on its steak?
The reported pre-broil seasoning is salt. Storch called it kosher salt in a Food Republic interview, describing the restaurant’s method as salting the steak, putting it on the broiler, and taking it off. When does the butter go on?
Butter is part of the later serving and finishing sequence, not a second seasoning applied before the steak goes under the broiler. Peter Luger Tokyo’s process description says its cut steak is served with melted butter and returned to the broiler for several minutes. These accounts describe restaurant procedures; they do not establish that every location follows an identical present-day sequence.

Why the steak arrives sizzling
The presentation involves more than the seasoning. Eater reported that the restaurant’s broilers ran above 800 degrees and described the steak being sliced onto clarified butter. Peter Luger Tokyo separately describes using a special broiler and a further broiling step after adding butter. Those reported details help explain the sizzling presentation, but they are not a complete home-cooking recipe.
Does Peter Luger use its sauce, pepper, or mustard on the steak?
Not according to the cited descriptions of the steak’s pre-broil seasoning. Peter Luger Tokyo’s official seasoning-set announcement lists Luger Sauce, salt, black pepper, and mustard as items in the set. Its separate process description says the steak is salted. The set’s contents should not be mistaken for a list of seasonings applied to the famous steak.

The Tokyo announcement, dated April 1, 2026, listed the set for ¥7,200; price and availability may change. It also described that Tokyo product’s steak as dry-aged for a minimum of 28 days.
