What will the Castle Hills restaurant serve?
Thai Bird’s signature is Asian-inspired, gluten-free fried chicken, and the October report also notes a curated wine list. The gluten-free description applies to the signature chicken; it is not a blanket assurance about every dish, preparation surface, or cross-contamination. Anyone with an allergy or medical dietary concern should confirm details directly with the restaurant.
In August, MySA reported additional planned menu examples including Thai-inspired rotisserie chicken, tenders, wings, lemongrass tofu, pad Thai, and fire-roasted lamb curry. Menus can change, so these dishes should not be treated as a guaranteed current Castle Hills menu. MySA’s August coverage has those reported details.

How is this location different from Thai Bird’s existing restaurant?

In a statement reported by the Current about the Castle Hills opening, Gilbert said: “We wanted to create something that brings those flavors together with the comfort of a neighborhood restaurant,” and “Castle Hills gives us the opportunity to introduce Thai Bird to a new community while staying true to what made people connect with us in the first place: really great food, hospitality and a genuine sense of community.”
