Potatoes take 6 growing days to mature in Stardew Valley. The planting day does not count, so potatoes planted on Spring 1 without growth modifiers are ready to harvest on Spring 7.
How the six-day growing time is counted
The Stardew Valley Wiki lists potato growth stages lasting 1, 1, 1, 2, and 1 days, for a total of six growing days. The crop reference explains that this count excludes the day you plant the seeds. In practical terms, a Spring 1 planting advances through its six growth days and is harvestable on Spring 7.

When to plant potatoes
Potatoes are Spring crops grown from Potato Seeds. To estimate a harvest date, start with the planting date, allow six growing days after that day, and account for any growth modifiers. The planting date matters because Spring has a fixed season length; leave enough time for the crop to mature before the season changes.
What can change the timing?
Six days is the base schedule. Speed-Gro and the Agriculturist profession can shorten crop growth: the Stardew Valley Wiki describes Speed-Gro as 10% faster growth and Agriculturist as 20% faster growth. These percentages do not by themselves specify an exact harvest date for every planting, so use the potato page’s growth comparison when planning a modified schedule.

How many potatoes does one plant produce?
A potato plant produces at least one potato, with a chance of additional potatoes that is partly based on Daily Luck. Extra yield affects how many potatoes you harvest, not how long the plant takes to mature.
