Nonstick pans are usually easier for everyday cooking and cleanup, especially for eggs, fish and other foods that tend to stick. Stainless steel takes more technique and sometimes more scrubbing, but it is more versatile for searing, sauces and metal utensils. The better choice depends on what you cook most and how much care you want to give the pan.
Which pan is easier to cook with?
For foods that cling to a pan, nonstick is generally more forgiving: its coating is designed to help food release, making it a practical choice for eggs, fish and low-fat cooking. Lagostina lists those among the suitable uses for nonstick cookware in its cookware care guide.
Stainless steel has no nonstick coating, so effortless food release is not its defining advantage. It is a flexible choice for everyday cooking, searing and making sauces, according to Lagostina. Getting good results may require more attention to the pan and cooking method; the amount of heat appropriate for a particular pan depends on its construction and its manufacturer’s instructions.

Choose stainless steel for searing and flexibility
- Searing and preparing sauces.
- Using metal utensils, which Lagostina lists as suitable for its stainless-steel cookware.
- Cooking without a coating that can be scratched or visibly deteriorate.
Which is easier to clean?
Nonstick is commonly simpler to wash after food releases cleanly. For its nonstick cookware, All-Clad recommends warm, soapy water and a soft sponge or nylon pad. That guidance is specific to All-Clad products; care instructions can differ across cookware collections.

Stainless steel can take more work when food sticks or burns onto the surface, but it is more tolerant of vigorous cleaning than a coated pan. For burnt food on its stainless-steel cookware, All-Clad recommends boiling water with baking soda and loosening residue with a wooden spoon. America’s Test Kitchen also reports that powdered cleansers worked well on stubborn deposits in its test kitchen, particularly on stainless steel. Check the pan maker’s instructions before using any cleaner or abrasive, since compatibility depends on the pan’s finish.
Routine washing
- Nonstick: Wash gently with a soft sponge or compatible nylon pad; follow the product manual for the exact method.
- Stainless steel: Wash according to the maker’s guidance. Stuck-on food may need soaking or a targeted cleaning method rather than routine washing.
Burnt-on residue
Do not treat burned residue as if it were an ordinary wash. For All-Clad stainless steel, the maker’s baking-soda-and-water method can help loosen burnt food. Avoid applying a cleaning method from one pan to another without checking the instructions: an abrasive that works on stainless steel could damage a nonstick coating.

How heat, utensils and care affect the choice
Nonstick requires a gentler routine. The Singapore Food Agency’s public guidance, last updated October 3, 2026, advises cooking on low or medium heat, not preheating an empty pan, using nonmetal utensils, washing gently and ventilating the kitchen. It warns against high heat and says to replace a pan if its coating shows excessive scratches, peeling, flaking or chipping. For product-specific care, the pan’s own instructions should take precedence.

The agency says PTFE can start producing fumes above 260 °C and that the coating begins breaking down beyond 350 °C. These are safety thresholds reported by the agency, not recommended cooking temperatures. Its warning against empty preheating matters because an empty pan can heat quickly.

Stainless steel has no nonstick coating to scratch or peel, and Lagostina says metal utensils are suitable for its stainless-steel cookware. That does not mean every stainless-steel pan has identical care requirements: dishwasher, cleaner and finish guidance varies by model. All-Clad also advises against putting a hot pan under cold water and warns against steel wool, steel scouring pads, harsh detergents, bleach, and peroxide-containing detergent on its cookware. Follow the instructions for the specific pan.
