Both methods work at room temperature: leave tomatoes on the counter for a simple, hands-off approach, or use a ventilated paper bag when you want to hold some of the fruit’s natural ethylene close to it. A bag is an optional ripening aid, not a proven way to make tomatoes taste better or ripen faster in every home. Fruit maturity and temperature matter more than the container.
Counter or paper bag: how to choose
| Choose | When it suits | What to do |
|---|---|---|
| Counter | The tomatoes are already beginning to ripen, or you want the simplest room-temperature method. | Keep them out of direct sunlight and away from hot spots. Check their condition as they ripen. |
| Paper bag | You want to encourage mature-green or partly ripe tomatoes by retaining some of their natural ethylene. | Set them stem end up in a paper bag with several holes, fold the top over, and check daily. |
The University of Illinois Extension explains that tomatoes produce ethylene as they ripen and recommends a paper bag to keep some of that gas near the fruit: Tomato | Home Vegetable Gardening. The counter is also suitable for continuing ripening at room temperature; the bag is an option when you want to encourage it.
How to ripen tomatoes in a paper bag
- Choose mature-green or partly ripe tomatoes. Mature-green fruit is full-sized and glossy with a whitish-green color; fruit picked before it reaches maturity may not ripen normally, according to UConn Extension.
- Place the tomatoes stem end up in a plain paper bag.
- Punch several holes around the bag for ventilation, then fold the top over.
- Check the tomatoes every day and remove any fruit that has spoiled.
Illinois Extension estimates that its paper-bag method may take one to five days, depending on how under-ripe the tomatoes are. That is a source-specific estimate, not a guaranteed timetable for every variety or home.
Keep the temperature moderate
Temperature affects both ripening and color. The University of Florida IFAS Extension gives 55–77°F (12.8–25°C) as a recommended ripening range and 68–72°F (20–22°C) as the optimum for red color development in its tomato-handling guidance: Handling Florida Tomatoes—Round and Roma Types. UC Davis identifies 68°F as the optimum ripening temperature for sensory and nutritive quality in its postharvest guidance: Tomato.

At temperatures above 77°F, tomatoes may develop more orange or yellow color and soften prematurely, according to those postharvest sources. Illinois Extension also advises keeping tomatoes away from direct sunlight and notes that temperatures above 80°F can cause them to spoil quickly. Avoid a sunny windowsill or warm appliance area, whether using a counter or a bag.
Does one method taste better?
The available guidance does not establish that paper-bag ripening tastes better than counter ripening, or that it reliably saves a specific amount of time. The sources explain why a bag can retain ethylene, but do not report a controlled household comparison of the two methods.

UC Davis recommends storing purchased tomatoes on the counter rather than in the refrigerator to maintain best flavor, and says they can remain there for at least a week in that storage context: Should tomatoes be on the counter or in the fridge for storage after purchased?. That is advice about storage after purchase, not evidence that counter ripening beats paper-bag ripening in a taste test.

What to avoid
- Do not expect immature, undersized green fruit to ripen normally indoors; maturity matters.
- Do not leave bagged tomatoes unchecked. Daily inspection helps you catch ripe fruit and remove any that is spoiling.
- Do not use direct sun or excessive heat as a shortcut; hotter conditions can affect color, firmness, and keeping quality.
