You can turn Nani’s recordings into a private digital cookbook, but only if every stage—import, transcription, recipe formatting, search, synchronization, and backup—keeps data off the internet. Preserve the original audio and recipe images, verify which transcription API is running, and treat AI-written recipes as editable drafts that require family review.
What “100% local” actually requires
“Local” is an end-to-end property, not a label attached to an iPhone or a cookbook app. The recording must remain on devices you control; transcription must not upload audio; recipe structuring and search must run locally; and synchronization and backups must use storage whose network behavior you have verified.
Apple documents materially different speech-recognition paths. Its SFSpeechRecognizer permission documentation says the speech-recognition process captures audio and sends it to Apple’s servers. Apple’s newer SpeechAnalyzer transcriber modules are documented as not sending audio to Apple servers. Select the specific API or app mode rather than assuming every Apple feature is offline.

- Gather and label the sources. Give each recipe a stable identifier such as
NK-001. Record Nani’s name, the recording date if known, the original filename, and any matching card, notebook page, or cookbook reference. - Preserve originals first. Keep the untouched audio file and photograph or scan of the original card. Make working copies for noise reduction, transcription, and editing. The National Archives recommends scanning for access and sharing while keeping originals safely stored; see “Preserving Family Recipes”.
- Check the transcription data path. Identify whether the selected tool uses SFSpeechRecognizer, SpeechAnalyzer, an on-device model, or a cloud service. Disable cloud processing and automatic uploads before importing recordings.
- Test offline behavior. Put the device in airplane mode, import a short copy, and confirm that the chosen feature still produces a result. This is a practical check, not a complete privacy audit: review permissions, synchronization, diagnostics, and backup destinations as well.
- Keep a verbatim transcript. Save the transcript exactly as produced, including pauses, repetitions, family shorthand, and uncertain words. Create a separate readable recipe rather than overwriting the transcript.
- Structure and review the recipe. Use AI locally, if available, to organize the transcript into ingredients and steps. Mark missing amounts as “not stated” or “confirm with Nani”; never let the model silently guess.
- Link every derivative to its source. Store the audio filename and scan path beside the transcript, structured recipe, confidence notes, and revision history.
Can I transcribe iPhone Voice Memos offline?
Sometimes, subject to the device, operating system, language, region, and transcription path. Apple Support lists built-in Voice Memos transcription for iPhone 12 or later, with English (all variants), Spanish, Portuguese, Italian, French, German, Japanese, Korean, Simplified Chinese, and Traditional Chinese, while warning that availability is not universal by region. Consult the current Voice Memos guide on the target iPhone before making it your only workflow. Apple says the transcript can be copied into another document.

For developers or apps using SFSpeechRecognitionRequest, Apple’s requiresOnDeviceRecognition documentation states that setting the property to true prevents network transmission only when the recognizer supports on-device recognition. Apple also notes that on-device requests may be less accurate. Confirm support at runtime and fail closed rather than permitting a silent server fallback.

- Identity: recipe ID, title, speaker, source filename, recording date, and linked card or page.
- Verbatim transcript: the complete transcription, with uncertain passages marked.
- Ingredients as spoken: preserve family measures and brand or ingredient names.
- Normalized ingredients: optional readable forms, with every conversion documented.
- Steps: the spoken sequence, including resting, tasting, and visual cues.
- Yield, temperature, and timing: enter only values stated or confirmed.
- Family notes: substitutions, memories, regional terms, and Nani’s distinctive wording.
- Confidence and questions: identify words, quantities, or steps that need confirmation.
- Revision history: who changed what and when.
Use Apple’s contextual strings or custom vocabulary where the selected transcription API supports them; Apple’s DictationTranscriber documentation describes this as a way to bias recognition toward unusual words, not a guarantee of correctness.

Confirm the high-risk details
Have Nani or another knowledgeable family member compare the draft with the audio. Check names, ingredient quantities, units, oven temperatures, timings, order of operations, and phrases such as “until it looks right.” If Nani is available, record a short correction memo and link it to the recipe instead of silently rewriting her words.

Do not let AI fill gaps
Speech recognition can mishear an amount, and a language model can make an incomplete recipe sound authoritative. Keep “not stated,” “unclear,” or “confirm with Nani” in the published family draft until someone supplies the missing fact.
Preserve voice and variation
Retain substitutions, sensory cues, family shorthand, and uncertainty markers. A polished format should improve cooking usability without turning a personal method into a falsely exact formula.

Protect the physical originals and create recoverable copies
For cards used in the kitchen, the National Archives recommends careful handling, flat storage where possible, and clear polyester film sleeves to protect against spills and greasy fingerprints. Larger collections can go into archival folders and boxes. Scan cards for convenient access and sharing while originals remain in safe storage.

Decide whether each backup is encrypted and local or cloud-based, document who can access it, and verify that automatic photo, file, and app synchronization does not upload the archive contrary to your privacy goal.

Privacy checklist before calling the cookbook local
- List every component: recorder, transcription engine, AI formatter, search index, sync service, and backup.
- For each component, document whether audio, text, telemetry, or thumbnails leave the device.
- Download required speech or language models before disconnecting, and verify that updates are not mandatory for basic offline use.
- Turn off cloud sync and automatic uploads for the archive’s folders and media libraries.
- Test a copy in airplane mode and observe whether the app queues an upload or reports a server-dependent failure.
- Keep originals immutable and restrict editing to derivative files.
- Use encrypted, access-controlled storage for local backups and record the recovery method.
- Recheck behavior after operating-system or app updates; feature availability and network defaults can change.
Choosing an implementation without pretending to have an accuracy ranking
Compare candidate tools on the questions that determine whether this archive fits your family:

No accuracy winner can be established without a controlled comparison using Nani’s actual accent, vocabulary, recording quality, and cooking terms. Evaluate a short representative sample and have a human verify it before processing the complete collection.
How can I make a family cookbook from voice recordings?
Process one representative recipe end to end, including offline testing, correction, export, and restore from backup. Once that record is reliable, repeat the same identifiers and folder structure for the collection. When the archive is stable, you can optionally commission a printed cookbook; services such as Tasteful Memories describe combining recipe or story recordings, transcription, and a printed book. Treat printing as a keepsake layer, not as a replacement for the preserved audio, scans, and editable text.
