For a varied charcuterie board, choose olives that contrast in size, firmness, and curing style: for example, large Gordal or Sevillano, firm green Picholine, and tender purple-black Kalamata-style olives. For cooking, match the olive to the texture and flavor you want—Picholine can hold its shape, California ripe olives are mild and buttery, and Kalamata-style olives bring a richer, smoky note. Color alone is not a reliable guide to taste.

Why olive labels can be confusing

A label may describe an olive’s cultivar, its color or maturity, or a preparation style. Those terms are not interchangeable: “green” and “black” describe appearance or maturity, while “Spanish,” “Greek,” and “California” can refer to recognized preparation styles rather than a single cultivar. Curing helps make olives palatable and shapes their flavor and texture. UC ANR describes brined olives as fermented and generally saltier than lye-cured olives; water curing changes the flavor less. Olive types to consider for a charcuterie board

A balanced selection gives guests more than one size and texture to try. The flavor notes below are source descriptions, not a universal tasting guarantee: curing, brine, and the particular product can change the result.

Picholine

Picholine olives are small, elongated, and firm, with fruit that ranges from green toward darker shades as it matures. Sevillano

Manzanillo or Manzanilla

Manzanillo, also called Manzanilla, is a large, rounded-oval cultivar used for both oil and pickles. The U.S. International Trade Commission identifies it as one of the two main U.S. varieties used for ripe olives. The cultivar name does not mean every jar described as “Spanish” contains Manzanillo. Kalamata-style

The USITC describes Greek-style Kalamata olives as purple-black, tender, and rich, with a smoky flavor. Their darker color and softer texture contrast with firm green olives. “Kalamata-style” on its own should not be treated as proof of geographic origin. California ripe olives

California ripe olives are made from Manzanillo or Sevillano and are described by the California Olive Committee as mild and buttery after a traditional seven-day cure. How to put together a varied olive selection

Home curing is a separate food-safety question

These choices concern commercially prepared olives, not a do-it-yourself curing or canning method. UC ANR’s home-pickling publication is dated 2007 and warns that preservation recommendations may change, so check current tested guidance before preparing or preserving olives at home.
