There is no single plant-based color that behaves exactly like carmine in every recipe or food product. Beet-derived color, anthocyanin-rich extracts such as sweet potato, red radish, black carrot and elderberry, and tomato lycopene are all possible alternatives. The right choice depends on the food’s acidity, processing conditions, target shade and tolerance for flavor changes.

Why look for an alternative to carmine?

Carmine and cochineal extract are made from insects. The U.S. Food and Drug Administration explains that “One, cochineal extract (and its lake, carmine), is derived from an insect.” FDA also requires cochineal extract and carmine to be declared by name on U.S. food labels because some people may have allergic reactions. People may seek alternatives for dietary, ingredient-preference or formulation reasons. A plant-derived color can offer a different source, but it may also produce a different shade or behave differently in a recipe. “Natural” does not mean exempt from food-coloring rules: the ingredient and its intended use still matter.

Which natural red color alternatives are available?

Color source What it may offer Important caveat
Dehydrated beet or beetroot red (betanin) FDA describes dehydrated beets as bluish-red to brown. EFSA has assessed beetroot red, E162, and color supplier Oterra lists beet/betanin as an alternative. Its shade may differ substantially from carmine. Recipe behavior and flavor depend on the specific product and amount; the cited sources do not establish a universal home dosage.
Sweet potato, red radish, black carrot or elderberry extracts These are anthocyanin sources listed as options by Oterra. Its supplier guide describes selected sweet-potato colors for heated applications and sweet potato paired with black carrot for bright red shades in low-pH applications. Shade and stability depend on the extract and formulation. Supplier guidance is application-specific, not an independent guarantee.
Tomato lycopene EFSA’s overview includes lycopene, E160d. Oterra describes tomato lycopene as heat stable and reddish in neutral-pH bases. It will not suit every base, target red or food application.
Fungus carotene Oterra includes it among potential alternatives and describes a beet-and-fungus-carotene blend for selected applications. The cited information is supplier-authored. Confirm the ingredient’s identity, authorization, labeling and suitability for the intended market and use.

Oterra’s 2024 supplier overview lists red beet, Hansen sweet potato, red radish, black carrot, elderberry, fungus carotene and tomato/lycopene. Its performance descriptions apply to particular ingredients and uses; they are not side-by-side independent trials.

How to choose a color for a recipe or product

Check acidity and pH

Ask whether the food is acidic or close to neutral, then test the color in that actual base. Oterra describes some anthocyanin options for bright red in low-pH applications and notes that sweet-potato color appears redder at higher pH in its examples. Those observations should not be treated as universal behavior across all extracts or recipes.

Account for heat and light

Consider the complete process, including cooking, hot filling, storage and exposure to light. Oterra describes selected sweet-potato and lycopene applications as heat stable and some combinations as having good heat and light stability. These are application-specific supplier claims; performance in a different food or process may vary.

Set the target shade

“Red” can mean pink, bluish red, purple red or orange red. FDA’s description of dehydrated beets as bluish-red to brown illustrates why the actual color needs to be checked in the finished food, rather than inferred from the ingredient name.

Consider flavor and the food matrix

A color source may affect flavor or otherwise change the product, and the effect can depend on the food and amount used. The cited sources do not provide standardized flavor or dosage comparisons across these alternatives.

For home recipe testing

Food-grade beet powder is one practical starting point for a small home experiment. It is not a guaranteed drop-in replacement for carmine: test a small amount in the recipe, since it can shift the shade and may affect flavor. The reviewed evidence does not establish a standard amount that works across recipes.

For commercial formulation

Request samples and technical and regulatory documentation from a supplier for the specific food, process and market. Confirm the ingredient identity, permitted food categories, any limits and required declaration before using it in a product.

What do U.S. and EU rules mean for alternatives?

United States

FDA says color additives require approval before use in food, and each is permitted only for the intended uses in its listing regulation. Being exempt from batch certification does not remove the applicable identity, purity and use conditions. FDA identifies cochineal/carmine as an insect-derived exception among colors that are generally plant- or mineral-derived and exempt from certification. Consult FDA’s color-additive guidance and the live rules for the ingredient and use in question.

There is also a dated regulatory distinction for beet color. FDA reports that it issued final orders on February 6, 2026, approving beetroot red and expanding approved uses of spirulina extract in human foods, then delayed the orders’ effective dates on March 20, 2026, while evaluating objections. That delayed order is separate from existing rules for dehydrated beets. Check FDA’s 2026 update for current status rather than assuming the new beetroot-red order is already effective.

European Union

EFSA says food colors must be authorized before use, undergo safety assessment and be identified on labels by name or E number. Its overview of food colors includes beetroot red E162 and lycopene E160d. Authorization and labeling requirements should be checked for the specific ingredient and use.

Why there is no universal drop-in substitute

The available options differ in source, hue and behavior across food bases and processing conditions. The cited sources do not establish a standardized independent, side-by-side comparison, a universal dosage or a single alternative that reproduces carmine across applications. Treat supplier performance guidance as a starting point for testing, not proof that a color will work the same way in another recipe or product.
