The secret ingredient in the featured smoky bison chili is a 12-ounce can or bottle of coffee stout beer. It adds subtle coffee and chocolate notes to a rich, velvety chili. The “best” in the title is the author’s personal verdict, not the result of a controlled taste comparison.
What goes into the chili
My Husband’s Smoky Bison Chili is built around ground bison, beans, fire-roasted tomatoes, peppers, and aromatics. The coffee stout brings the recipe’s distinctive flavor addition; it is not a separate spice blend.
- Ground bison, avocado oil, chili powder, cumin, smoked paprika, salt, dried oregano, and black pepper
- Garlic, yellow onion, green bell pepper, chipotle peppers in adobo, and an Anaheim chile pepper
- Three cans of beans, fire-roasted diced tomatoes, and 12 ounces of coffee stout beer
The recipe suggests scallions, diced white onion, sour cream, cilantro, grated cheddar, or jalapeño as toppings. Cornbread with honey is suggested on the side.

The recipe gives two preparation routes: brown and simmer the bison on the stovetop, or smoke the seasoned bison first and finish the chili in a Dutch oven. They differ in equipment and workflow; the article does not report a head-to-head taste test.

How the stovetop chili comes together
- Season the ground bison with the recipe’s spices and brown it in avocado oil in a Dutch oven.
- Add garlic, yellow onion, and green bell pepper; cook until the vegetables soften.
- Add chipotle peppers in adobo, coffee stout, beans, fire-roasted tomatoes, and the Anaheim pepper. If using the stovetop route instead of smoking the bison, include ¼ teaspoon liquid smoke.
- Simmer the combined chili for 30 minutes.
For the smoker route, smoke the seasoned bison at 350°F for 90 minutes, then continue making the chili in a Dutch oven.
