A tomato with its first pink or red blush is at the breaker stage and is the clearest choice for ripening after harvest. A fully green tomato can also ripen indoors if it has reached mature green: look for glossy skin and near-full size, and check the inside of one sample fruit if the signs are unclear. Matte-green fruit is generally too immature to ripen well off the vine.
Check the color and skin first
Tomatoes pass through a useful distinction for home harvest: breaker, mature green, and immature green. These are practical signs rather than a guarantee that every tomato will ripen identically.
Breaker: a pink or red blush has appeared
The first pink or red color means ripening has begun. Colorado State University Extension says breaker tomatoes ripen off the vine without flavor loss. If frost is approaching, this is the most reliable green-looking fruit to bring indoors. Colorado State University Extension

A mature-green tomato is still green but has developed enough to continue ripening after picking. It is usually close to full size and has shiny rather than matte skin. Colorado State Extension also describes a white-to-light-green star-like area at the blossom end; a shift toward lighter green or a small blush is another helpful sign. These visual cues are useful, but they are not conclusive on their own. Colorado State University Extension and Ask Extension

Immature green: matte, small, or poorly developed
Fruit with matte-green skin is less likely to have reached mature green. It may fail to color properly or shrivel rather than ripen acceptably. Appearance alone is not a perfect test, so use the inside check below if you have several similar fruit and need more confidence. Colorado State University Extension
Use a cut-fruit check when the visual signs are ambiguous
If you have a group of similar green tomatoes, cut one representative fruit through its middle. A mature-green tomato has fully developed seeds that are not sliced through easily, with jelly-like material forming around them in the seed cavities. Immature fruit tends to have soft, pale seeds that cut readily and little or no developed jelly. This test sacrifices the sample tomato, so it is best used to judge a group rather than every individual fruit. What to expect from each stage
| Stage | How to recognize it | Likely result after harvest |
|---|---|---|
| Breaker | First pink or red color is visible | Best-supported choice for off-vine ripening; Colorado State Extension says it ripens without flavor loss. |
| Mature green | Glossy, near full-size green fruit; sometimes a pale star at the blossom end. Developed seeds and jelly are stronger evidence if checked. | Can ripen indoors, although flavor may not develop as fully as it would on the vine. |
| Immature green | Often matte; seeds may be pale and soft, with little or no jelly around them. | Unlikely to ripen acceptably; it may stay poorly colored or shrivel. Consider using it in a cooked green-tomato recipe. |
The mature-green distinction is also used in postharvest guidance: UC Davis defines minimum commercial maturity using internal development, not simply green color. A home cut-fruit check is a practical clue, not a promise that all fruit will have the same eating quality.

Choose firm tomatoes without defects, and harvest before frost if you plan to ripen them indoors. Remove the stems, clean the fruit, and let it dry. Iowa State University Extension recommends storing tomatoes in a single layer in a cool, dark place, individually wrapped in newspaper, and checking them often. Remove fruit that becomes damaged or decays. Once a tomato starts to color, unwrap it and move it to room temperature. An alternative is to pull up the plant and hang it upside down in a cool, dark place. Iowa State University Extension

Choose a moderate temperature and avoid direct sun
For home ripening, about 60–70°F is a practical range. Cooler conditions slow ripening; warmer conditions within that range generally speed it up. Colorado State Extension recommends 55–70°F and estimates roughly a couple of weeks near 70°F versus about a month near 55°F. The University of Alaska Fairbanks describes 65–70°F as the fastest range and says fruit at 60°F ripens more slowly but stays firmer. These are source-specific guidance and estimates, not a fixed schedule for every tomato. Colorado State University Extension and University of Alaska Fairbanks Cooperative Extension
Avoid prolonged storage below 50°F, which the extension guidance warns can impair quality. UC Davis gives 68°F as the optimum ripening temperature for sensory and nutritive quality in its postharvest reference, and warns that above 77°F tomatoes can become softer and more yellow than red. Tomatoes do not need light to ripen. Keep them in a well-aerated place, out of direct sun, and inspect them regularly. Sunlight can heat fruit enough to inhibit pigment synthesis, according to Cornell Cooperative Extension; a sunny windowsill is therefore not a good default ripening spot.
