To study nutrients in food, start with the right source for the question: use a package’s Nutrition Facts label for a specific branded product, USDA FoodData Central for food-composition records, and NIH reference-value resources to understand how food amounts relate to recommended intake. Compare like with like—same food state, serving or weight basis, nutrient, record type, and data date—because a label value is not automatically a personal dietary target.

Decide what you want to learn

Before searching for numbers, identify the food, the nutrients or other components of interest, and the purpose of the comparison. For example, you might want to know how much sodium a particular packaged soup lists per serving, compare the fiber in two cooked vegetables by weight, or understand how a nutrient amount relates to a reference intake.

Food composition includes more than the nutrients most commonly shown on labels. USDA’s National Agricultural Library describes macronutrients such as carbohydrate, protein, fat, and water, and provides resources on vitamins, minerals, phytonutrients, and other food components. Choose a source that matches the food

For a specific packaged product, start with its label

The Nutrition Facts label is the most direct source for the packaged product in your hands. Check the product identity and serving size, then read the nutrient amount and % Daily Value (%DV). Products with similar names can have different formulations, so do not substitute a generic food record for the label when the question concerns a particular brand or package.

For structured food-composition records, use USDA FoodData Central

USDA describes FoodData Central as “USDA’s comprehensive source of food composition data with multiple distinct data types.” Its datasets serve different purposes, so inspect the record type rather than treating every result as interchangeable. USDA’s front page lists these dataset descriptions and update schedules:

These descriptions and schedules are from the FoodData Central front page; USDA also explains the resource in its About Us page. When you record or share a value, include the dataset and the record’s date or context. A laboratory-based sample, a branded label entry, and a survey-oriented food entry answer related but distinct questions.

For interpreting reference values, use NIH resources

NIH Office of Dietary Supplements explains Nutrient Recommendations and Databases, including Dietary Reference Intakes (DRIs), and provides an overview of Daily Values. These sources help distinguish a food-composition number from a reference used to assess or plan intake.

Read serving size and %DV carefully

On a Nutrition Facts label, nutrient amounts are generally listed per serving. Compare the label’s serving size with the amount you actually eat, and check servings per package: a package may contain more than one serving. The serving size is a standardized label basis, not a recommendation for how much to eat. FDA explains these elements in What’s on the Nutrition Facts Label.

The %DV shows how much a serving contributes to a daily reference amount used on labels. FDA’s quick guide is that 5% DV or less per serving is low and 20% DV or more is high. Use that as a way to read the label, not as a personalized nutrition rule. FDA’s general label guidance encourages choosing foods with more fiber, vitamin D, calcium, iron, and potassium, and less saturated fat, sodium, and added sugars; what is appropriate for an individual depends on their circumstances.

Keep label Daily Values separate from personal requirements

Dietary Reference Intakes include the Recommended Dietary Allowance (RDA), Adequate Intake (AI), Estimated Average Requirement (EAR), and Tolerable Upper Intake Level (UL). NIH notes that these reference values are used to plan and assess intake for healthy people, and that RDAs and AIs vary by age and sex. A label Daily Value is a standardized reference selected for food and supplement labels; it is not necessarily the same as an individual’s RDA or AI.

That distinction matters when interpreting a percentage. A %DV helps compare label amounts against a common reference, but it does not establish whether a food or intake level is right for a particular person. For individualized dietary needs, consult a qualified health professional rather than treating a general label or database value as a prescription.

Compare food values on a consistent basis

When comparing foods, make the basis explicit and keep it consistent. A per-serving comparison can mislead if the servings differ; a per-weight comparison can be more useful for some questions, provided the food state and preparation are also comparable. Do not compare a cooked entry with a raw one without accounting for that difference.

  • Food identity and state: Match the specific food and whether it is raw, cooked, drained, or otherwise prepared.
  • Amount basis: Compare the same serving size or common weight basis, and note how the serving was defined.
  • Record type: Distinguish a branded label record from an analytical sample or survey food record.
  • Nutrient or component: Compare the same nutrient, using the same units where possible.
  • Data context: Record the source, dataset, and date or update context so the comparison can be interpreted later.

FoodData Central can help locate composition data, but the exact values depend on the selected food record. Avoid generalizing a value from one sample, product label, or survey record to every version of that food.

A practical study checklist

  1. State the question: which food, which nutrient or component, and what comparison?
  2. Choose a matching source: product label for a branded package; the appropriate FoodData Central dataset for a food-composition query; NIH resources for reference-value interpretation.
  3. Capture the serving or weight basis, preparation state, nutrient units, and the source record’s context.
  4. Interpret %DV as a standardized label aid, not as an individualized target.
  5. For decisions about personal dietary requirements, seek guidance from a qualified health professional.
