Storage depends on what’s inside the chocolate. Chocolate-covered strawberries and other fresh-fruit treats are perishable: refrigerate them if you’re keeping them beyond a short serving window, and follow the recipe or seller’s directions. Solid chocolate candy without a perishable filling belongs in a cool, dry, dark place. The coating does not make fresh fruit shelf-stable.
How should you store chocolate-covered strawberries?
Make or buy dipped strawberries close to serving time. For a short hold, keep them covered loosely and out of heat; refrigerate them if you need to keep them longer. Use a clean container and avoid stacking or crushing the berries.
Recipe directions differ on how to cover refrigerated berries. Hersheyland’s recipe recommends a large container lined with paper towels and loosely covered. Betty Crocker’s recipe recommends a lined food-storage container that is tightly covered. Follow the directions for the specific recipe or product rather than treating either approach as universal.

Recommendations vary. Food Network Kitchen says the berries are best the first day and can sit on the counter for about a day under a loose plastic-wrap drape. That is recipe-specific advice, not a general food-safety allowance. The FDA says foods that require refrigeration should not sit at room temperature for more than two hours, or one hour when the air temperature is above 90°F. Keep a serving window short, especially in a warm room.

How long do chocolate-covered strawberries last in the refrigerator?
There is no single guaranteed duration for all dipped strawberries. Hersheyland recommends using its recipe’s berries within 24 hours for best results. Betty Crocker says its berries can stay fresh for up to three days refrigerated, depending on how ripe they were when coated. These are different recipe recommendations, not a validated shelf-life guarantee for every batch. The berries’ condition and the recipe or seller’s instructions matter.
Can you freeze chocolate-covered strawberries?
Freezing is a texture trade-off. Hersheyland advises freezing berries separately until solid, then transferring them to a freezer bag and thawing before eating. Food Network Kitchen advises against freezing because thawed strawberries can become mushy. Choose based on whether longer storage or a fresh berry texture matters more to you.

How should you store solid chocolate candy?
For chocolate candy without a perishable filling, choose a cool, dry, dark place away from strong odors and sudden temperature changes. Keep it well wrapped and follow the product label, which takes priority for the particular candy.

These are brand recommendations, not a universal standard. Do not apply them to a candy with a fresh or otherwise perishable filling; follow its label and any refrigeration directions.
Does solid chocolate need refrigeration?
Usually, a cool and dry storage spot is preferable. If heat makes refrigeration necessary, protect the chocolate from moisture: Lindt recommends an airtight container or double wrapping. Let it warm gradually toward room temperature before unwrapping so condensation is less likely to form on the chocolate.

Why does chocolate develop a pale or cloudy coating?
A pale surface can be chocolate bloom, which is a quality change rather than a reliable sign of food safety. Hershey explains that heat can bring cocoa butter to the surface, causing cocoa-butter bloom. Moisture can dissolve sugar at the surface; when it dries, sugar bloom may appear. Moving cold chocolate into warmer surroundings can cause condensation, as Lindt notes.
Hershey says bloomed chocolate is safe to use, although its flavor or texture may change. Do not use bloom to judge whether a fruit filling is safe: check the fruit separately and discard it if it appears spoiled. Food Network Kitchen specifically advises discarding strawberries with fallen chocolate or mushy tops.

Does a general chocolate shelf life apply to dipped fruit?
No. USDA FSIS lists chocolate candy and other confections as suitable for cold or room-temperature storage and gives a broad one-year category entry. That is a category-level reference for confections, not a promise for homemade dipped fruit, fresh fillings, or every packaged product. The filling and package directions determine the applicable handling; fresh fruit remains perishable beneath its coating.
