Keep your refrigerator at 40°F (4°C) or below and your freezer at 0°F (-18°C) or below, then sort bulk groceries by how quickly they need to be used. Refrigerate perishable food within two hours of purchase—or within one hour if the surrounding temperature is above 90°F (32°C)—and freeze portions you will not use within their refrigerator storage window.
Set safe refrigerator and freezer temperatures
Use an appliance thermometer to check actual temperatures; a refrigerator dial setting alone does not confirm that food is being kept cold enough. FoodSafety.gov’s U.S. consumer guidance sets the refrigerator maximum at 40°F (4°C) and the freezer target at 0°F (-18°C). The range from 40°F to 140°F (4°C to 60°C) is the danger zone, where bacteria that cause food poisoning can multiply quickly. FoodSafety.gov’s four steps to food safety
Put refrigerated and frozen groceries away promptly. The general limit for perishable food is two hours at room temperature, shortened to one hour when the surrounding temperature is above 90°F (32°C). For a large shopping trip, prioritize cold items rather than leaving them out while unpacking shelf-stable groceries.
Sort bulk meat by its refrigerator window
These refrigerator timeframes are for food held at 40°F (4°C) or below. Use the shorter window when deciding what to cook or freeze first. The freezer durations in the chart are quality guidance, not safety deadlines: food continuously held at 0°F (-18°C) or below remains safe indefinitely, though its quality can change over time. For bulk purchases, divide meat into amounts you expect to use at one time, wrap or seal each portion, and freeze what will not fit within its refrigerator window. Label portions with the food and date so you can use older packages first. Do not thaw meat, poultry, or seafood on the counter; thawing in the refrigerator is the safest option described in FoodSafety.gov’s guidance.
Cool and arrange large amounts safely
- Portion large cuts and leftovers: Divide them into smaller portions or shallow containers so they cool more quickly. Avoid cooling a large pot or deep mass as one unit.
- Keep raw meat contained: Seal it securely and store it apart from produce and ready-to-eat foods. Place it where juices cannot drip onto other items.

- Separate foods while shopping and unpacking: Bag fresh produce separately from raw meat, poultry, and seafood.
Store and prepare produce with care
Refrigerate perishable produce—such as strawberries, lettuce, herbs, and mushrooms—in a clean refrigerator at 40°F (4°C) or below. Refrigerate purchased pre-cut or packaged produce, too. For intact produce where refrigeration needs are unclear, ask the grocer; storage choices can affect quality as well as safety. Choose produce that is not bruised or damaged. - Before eating or preparing produce, rinse it thoroughly under running water, even if you plan to peel it.
- Scrub firm produce, such as melons and cucumbers, with a clean produce brush.
- Do not wash produce with soap, detergent, or commercial produce wash. Washing can reduce bacteria but does not eliminate them.
- Refrigerate cut produce promptly and keep it separate from raw meat and the utensils used for raw meat.
Keep dairy cold and follow package directions
Put refrigerated dairy products away promptly, keep them at 40°F (4°C) or below, and follow the package’s storage instructions. The federal guidance cited here does not establish item-specific refrigerator durations for milk, yogurt, or cheese, so use the product label rather than assuming one shared timeframe.

FoodSafety.gov says an unopened refrigerator can keep food safe for up to four hours. A closed freezer holds a safe temperature for approximately 48 hours if full, or 24 hours if half full. Keep appliance doors closed during the outage. If moving food to a cooler, use enough ice to keep it at 40°F (4°C) or below. Do not taste food to judge whether it is safe; use FoodSafety.gov’s item-specific power outage discard chart to decide what to keep or discard.
