For peelable roasted peppers, char whole peppers on a grill or directly over a gas flame, then cover them to steam before peeling. In the oven, you can either roast cut peppers for easier peeling or make tender, seasoned halves. The best method depends on your equipment, batch size, and whether you want soft pepper halves or peppers with blackened skins to remove.

Choose the method that fits your peppers and equipment

Method Best for Equipment and heat Starting time
Oven, cut-side down Cut peppers you plan to peel Oven at 425°F; foil-lined baking sheet 20–25 minutes, then 15 minutes wrapped in foil; Purdue University Extension, 2020
Oven, cut-side up Tender, seasoned pepper halves Oven at 450°F; rimmed baking sheet About 30–35 minutes; Oregon State University Extension Service / Food Hero, February 2020
Outdoor grill, medium heat Whole peppers with charred skins to peel Outdoor grill; turn occasionally About 20–25 minutes, then 15 minutes wrapped in foil; Purdue University Extension, 2020
Outdoor grill, high heat A small batch of whole peppers to char High-heat grill; turn every 2–3 minutes About 10 minutes total; The Kitchn, updated August 22, 2022
Direct gas flame One or two whole peppers with blackened skins to peel Exposed gas burner flame; turn with tongs About 8 minutes; The Kitchn, updated August 22, 2022
Broiler Several whole peppers with blackened skins to peel Oven broiler on high; rack near element About 8 minutes; The Kitchn, updated August 22, 2022

These are source-specific starting points, not guaranteed finish times. Pepper size, how many you cook, and the heat of your oven, grill, or burner all matter. Look for blistered or charred skins and softened flesh, and stay close to high-heat methods.

How do you roast bell peppers in the oven?

For peppers you plan to peel

  1. Heat the oven to 425°F.
  2. Halve and seed the peppers. Set them cut-side down on a foil-lined baking sheet.
  3. Bake for 20–25 minutes, using the time as a guide; the peppers should show blistering and softened flesh.
  4. Wrap the hot peppers in the foil and let them stand for 15 minutes. When cool enough to handle, pull off the loosened skins.

This cut-side-down approach follows Purdue University Extension’s 2020 sweet pepper guidance. The foil rest traps steam to loosen the skin.

For tender, seasoned pepper halves

  1. Heat the oven to 450°F. Wash four peppers, halve them, and remove the tops and seeds.
  2. Rub the halves with vegetable oil and place them cut-side up on a rimmed baking sheet. Season as desired.
  3. Roast for about 30–35 minutes, until tender and blistered in spots.

This is Oregon State University Extension Service’s Food Hero roasted bell pepper recipe, published in February 2020. It produces tender seasoned halves, rather than following the cut-side-down method for loosening skins. Refrigerate leftovers within two hours, as the recipe directs.

Xyingshine Griddle Pan for Stove Top & Oven, Ceramic Nonstick, Deep Sides
  • EASY FOOD RELEASE: For quick breakfasts, this ceramic griddle pan helps eggs and pancakes lift and turn with less sticking, so delicate food reaches your plate instead of being scraped off the pan. The smooth nonstick surface is made without PFAS, PFOA, lead or cadmium.
  • LESS SPLATTER: When turning food or stirring a saucy dinner, the 2.8 in deep sides help contain oil splatter and keep ingredients in the pan. Enjoy more room to stir with less mess around the cooktop.
  • ONE PAN VERSATILITY: Start dinner on the stovetop, then use the same pan as a roasting pan in an oven up to 428°F. Sear fish or chicken, then finish with vegetables without switching pans. Stainless steel handles, each secured with two rivets, give you two firm points to grip.
  • ROOM FOR MORE: For family dinners and weekend gatherings, the 15.56 x 10.83 in interior and 4.8 QT capacity make this baking pan a roomy choice for casseroles, roasted vegetables, breads and cakes. Bring a generous oven-baked dish to the meal instead of juggling several smaller pans.
  • EASY CLEANUP: After the meal, let the dishwasher handle the pan so you can spend less time at the sink. Four silicone cooking tools help with serving, turning, scraping and brushing; the included black flocked pouch keeps the tools together between meals.

How do you roast peppers on a grill?

Medium heat for whole, peelable peppers

  1. Heat an outdoor grill to medium. Brush whole peppers with olive oil.
  2. Place them on the grill rack and cook for about 20–25 minutes, turning occasionally, until the skins char.
  3. Wrap the hot peppers in foil and let them rest for 15 minutes. Peel when cool enough to handle.

Purdue University Extension gives this method and timing in its 2020 sweet pepper guidance. Use the charred-skin endpoint as well as the clock; grill heat and pepper size vary.

High heat for a quicker char

For a smaller batch, The Kitchn recommends turning whole peppers every two to three minutes over a high-heat grill until they are completely charred, about 10 minutes total. Its guidance suggests the grill for roughly four to six peppers. This is a different heat setup from Purdue Extension’s medium-grill method, so the times are not interchangeable. See The Kitchn’s three pepper-roasting methods, updated August 22, 2022.

How do you roast peppers on a gas stove?

Here, “stovetop” means placing a pepper directly over an exposed gas flame—not cooking it in a dry pan. This method is not suited to an electric coil or induction burner.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.
  1. Set one whole pepper directly over a high gas flame.
  2. Turn it occasionally with heat-safe tongs until the skin is blackened all over. The Kitchn gives about eight minutes as a starting point.
  3. Transfer it to a heatproof bowl and cover it to steam before peeling.

The Kitchn’s gas-flame method, updated August 22, 2022, is suited to one or two peppers and requires active turning. Use normal care around an open flame; pepper juices and charred pieces may land near the burner. Illinois Extension also lists an open flame as a way to char thick-skinned peppers in its pepper preparation guidance.

Broiler option: an oven-based alternative

A broiler is not the same as oven-roasting at a set baking temperature. To char whole peppers, The Kitchn’s method is to position an oven rack close to the element, set the broiler to high, and put the peppers on a baking sheet. Turn occasionally with tongs until blackened, about eight minutes total. The Kitchn suggests this method for four to eight peppers or more. Broilers vary, so stay nearby and check the first batch rather than relying on the time alone.

How to steam, peel, and keep the pepper juices

  1. As soon as charred peppers come off the heat, place them in a heatproof bowl.
  2. Cover the bowl with a plate, lid, or foil, or use another suitable cover. A food-grade bag is another option. Leave the peppers covered for about 15 minutes so trapped steam loosens the skins.
  3. When the peppers are cool enough to handle, peel over a bowl to catch the juices.

The Kitchn and University of Illinois Extension describe covering warm peppers to loosen the skin; Illinois also recommends catching the juices. Colorado State University Extension gives similar covered-container guidance for roasted chiles in its roasted chile instructions. Peeling is optional: remove the skin when you want a smoother texture, or leave it on if it suits the dish.

Handle leftovers safely

  • Keep fresh produce away from raw meat and its juices to avoid cross-contamination, advises Purdue University Extension in its sweet pepper guidance.
  • Refrigerate leftovers within two hours, as directed by Oregon State University Extension’s roasted bell pepper recipe.
  • Colorado State University Extension’s advice to cool below 40°F within two hours and use or freeze within three days is specifically for roasted chile peppers, not a general sweet-bell-pepper shelf-life guarantee. See its roasted chile processing guidance.

For freezing sweet peppers, Illinois Extension says chopped peppers can be frozen without blanching; its pepper preparation guidance describes tray-freezing pieces before transferring them to freezer storage.
