Yes—mature green tomatoes can ripen indoors after the growing season ends. Pick firm, full-sized fruit before frost, keep it clean and dry in a cool, dark place, and check it often. Immature, matte-green tomatoes may not ripen successfully, and indoor fruit may not develop the flavor of vine-ripened tomatoes.

Which green tomatoes can ripen indoors?

Choose fruit that is full-sized or nearly full-sized, glossy green or greenish-white, firm, and free of bruises, spots, or disease. Colorado State describes mature green tomatoes as shiny, with a white-to-light-green star at the blossom end. Matte-green fruit has not reached maturity and is unlikely to ripen well after picking; use it in green-tomato recipes instead. Tomatoes that have already begun to blush can also finish ripening indoors.

Harvest mature fruit before the first frost or freeze. Frost-damaged or defective fruit is a poor candidate for storage.

How to store tomatoes for gradual ripening

  1. Harvest and sort: Pick firm, mature fruit before frost. Discard tomatoes that are soft, bruised, diseased, or spotted.
  2. Clean and dry: Remove stems, clean the tomatoes gently, and let them air-dry completely.
  3. Wrap and arrange: Wrap each tomato individually in newspaper and place it in a single layer in a box or on a shelf. Iowa State University Extension and Outreach recommends 60–65°F for this method; Nebraska Extension recommends 55–60°F for cool, dark storage. These are recommendations from different sources, not a single exact household set point.
  4. Keep them cool, dark, and well-spaced: Avoid direct sunlight and damp conditions. Check the fruit frequently and remove any tomato that starts to decay.
  5. Finish ripening at room temperature: Once a tomato begins to color, remove its wrapping and move it to room temperature.

Cooler conditions slow the process. PlantTalk Colorado estimates about two weeks at 65–70°F and three to four weeks at 55°F. A 2023 Colorado State University Extension article gives estimates of a couple of weeks near 70°F and about a month near 55°F. These are estimates, not guarantees: maturity and indoor conditions affect timing.

How to speed ripening—or slow it down

For faster ripening, place a ripe tomato or banana near the green fruit. Nebraska Extension also describes using a paper bag. The fruit releases ethylene, which encourages mature green tomatoes to ripen; no special product or sunlight is needed.

To slow a batch, remove tomatoes as they ripen rather than leaving them with the green fruit. For a slower, staged approach, use individual newspaper wrapping and inspect the tomatoes regularly.

Temperature, moisture, and flavor: what to watch

Avoid storing tomatoes below 50°F. Colorado State and UC Davis warn that chilling can lead to bland or off-flavor fruit and, with prolonged exposure, failure to ripen fully, uneven color, softening, pitting, browning, or decay. Excess moisture and condensation encourage mold; very dry conditions can cause shriveling. Keep household fruit dry and inspect it rather than trying to reproduce commercial storage humidity.

UC Davis lists 55–60°F for commercial mature-green storage and 65–70°F for standard ripening, with high relative humidity in its controlled postharvest guidance. Those humidity conditions are for commercial handling, not a household target. Iowa State AnswerLine and Colorado State Extension both caution that indoor-ripened tomatoes may not taste as good as fruit ripened on the vine.
