To prevent sticking, gradually preheat the stainless steel pan over low to moderate heat, add enough oil to coat the cooking surface, and put in dry food when the oil is hot. Let the food cook without constant movement; when it releases easily with a gentle nudge, it is ready to turn. If the oil smokes or food hits the pan with an aggressive crackle, lower the heat.

Use this sequence before and during cooking

  1. Preheat gradually. Set the dry pan over low to moderate heat. Do not leave an empty pan unattended. All-Clad lists insufficient preheating among the causes of sticking and recommends lower heat for stainless steel cooking (All-Clad care and use guide; All-Clad support FAQ).
  2. Check the pan, if useful, with a few drops of water. All-Clad describes water dancing on a ready pan; Made In describes droplets beading and skittering (All-Clad care and use guide; Made In stainless cookware guide). Treat this as a rough readiness cue, not a precise temperature test: pans and burners respond differently. If water just sits and evaporates, continue heating cautiously; if the pan seems overheated, lower the burner and let it cool.
  3. Add enough cooking fat. Pour in oil or another suitable fat to cover the cooking area, then wait for it to heat. All-Clad describes a faint vapor or shimmer as a cue. If the oil smokes before food goes in, the pan is too hot; take it off the heat briefly, let it cool, and resume at a lower setting (All-Clad care and use guide; Made In egg guide).
  4. Add dry food. Pat wet ingredients dry to reduce surface moisture and splattering. Food that is not refrigerator-cold can be easier to manage, but do not leave perishable food out for an extended period just to bring it to room temperature. All-Clad identifies cold food added to a hot pan as a possible cause of sticking (All-Clad support FAQ).
  5. Let it cook before moving it. Repeatedly pushing or flipping food can interrupt browning. If it resists a gentle nudge or spatula, give it more time rather than prying. All-Clad’s release cue is that food is ready to turn when it no longer sticks; Made In gives similar guidance for eggs and fish (All-Clad care and use guide; Made In egg guide; Made In fish guide).

Adjust for eggs, fish, and other delicate foods

Eggs and fish are less forgiving than many foods, so take particular care with preheating, heat level, and fat. Follow the same release cue: wait until the food loosens rather than forcing it. These technique adjustments improve your chances of a clean release; they cannot guarantee that every recipe or preparation will release flawlessly.

Diagnose sticking by when it happens

Food sticks as soon as it hits the pan

  • Check whether the pan was preheated gradually.
  • Make sure the food is dry and that you used enough fat to coat the cooking area.
  • If the food is very cold, remember that the sudden temperature change may contribute to sticking.

These are causes All-Clad identifies in its support guidance (All-Clad support FAQ).

The oil smokes before you add food

Lower the heat. Move the pan off the burner briefly if needed, let it cool, then continue at a lower setting. Smoking oil is a sign the pan is too hot in Made In’s egg-cooking guidance (Made In egg guide).

Food will not release when you try to flip it

Give it more time to brown, then test again with a gentle nudge. Avoid scraping or prying aggressively; the release cue is that the food loosens from the pan (All-Clad care and use guide).

Browned bits remain after cooking

Those browned bits, called fond, are not proof that the pan is ruined. If your recipe calls for it, deglaze with wine or stock to loosen them into a sauce (All-Clad care and use guide).

Burnt residue is left behind

Use the care instructions for your particular pan. All-Clad discusses soaking and cleaning, as well as baking soda or a vinegar-and-water boil for certain residues; do not assume every pan has identical care guidance (All-Clad care and use guide).

What the water-drop test can—and cannot—tell you

Water behavior can help you judge whether a pan has heated, but it is not a universal calibration method. Manufacturers describe the cue differently, and the response depends on the pan and burner. Do not rely on one exact burner setting or temperature for every stainless steel pan; use the water cue alongside the fat’s appearance and behavior, and reduce heat if the oil smokes.

What to expect from stainless steel

These steps help food release from stainless steel, but they do not turn the surface into coated nonstick cookware. Some sticking can still occur, particularly with delicate foods or unsuitable heat and moisture conditions. Manufacturer guidance offers practical technique rather than a guarantee of a flawless release.
