For smooth curd gravy in besan ki sabji, whisk the curd until completely smooth before it reaches the pan. If your recipe includes besan in the gravy, whisk it in gradually so no dry pockets remain. Cook the spice base first, take the pan off the heat to add the curd mixture, then return it to low heat and stir continuously as it warms. These steps reduce the risk of lumps and splitting, though they cannot guarantee curd will never separate.

Why curd gravy gets lumpy or splits

Besan ki sabji, also called gatte ki sabji, combines gram-flour dumplings with a spiced curd gravy. Recipes vary by household and region, so use the proportions in the recipe you are following rather than assuming there is one universal curd-to-besan ratio.

Lumps usually come from besan that was not fully mixed into the liquid before cooking. Splitting is a different problem: it can happen as curd heats, particularly if it is added to a very hot pan or brought to a rolling boil. Besan adds body and, in a curd-based gravy, can help keep the mixture cohesive.

How to make the gravy smooth

  1. Whisk the curd first. In a bowl, whisk it until no lumps remain. If your recipe calls for besan in the gravy, add it gradually while whisking. Add the recipe’s liquid a little at a time and keep whisking until the mixture looks uniform.
  2. Cook the spice base. Prepare the spices and other gravy ingredients in the pan as your recipe directs. Finish this step before adding the curd mixture.
  3. Take the pan off the heat. Add the whisked curd mixture and stir promptly to combine. Starting with the pan off the burner avoids adding curd directly to the hottest part of cooking.
  4. Warm it gently. Return the pan to low heat and stir continuously as the gravy warms. Bring it only to a gentle simmer; avoid a rolling boil.
  5. Adjust the consistency gradually. Stir in a little reserved gatte cooking water at a time. The cooking liquid can contribute starch from the dumplings, adding body and flavor. If you do not have any, use water, adding it gradually rather than all at once.
  6. Add the cooked gatte. Simmer gently until the gravy thickens slightly. Stop before it reaches the final thickness you want: the gravy thickens further as it cools.

Which choices affect the result?

Choice What it changes How to use it
Full-fat or lower-fat curd The dish-specific recipe guidance favors full-fat curd; it warns that toned- or skim-milk curd may split more readily. This is recipe guidance, not a guarantee or a comparative test. Use full-fat curd if you want to follow that recipe’s recommendation.
Besan in the gravy or no added besan Besan thickens the gravy and can help prevent the curd mixture from separating. If your recipe includes it, whisk it thoroughly into the curd before cooking. Keep to that recipe’s proportions.
Reserved gatte water or fresh water Reserved cooking water can carry starch from the dumplings and contribute body and flavor. Fresh water loosens the gravy without that contribution. Whichever you use, add it a little at a time and stop at the consistency you prefer.

How to fix common gravy problems

There are flour lumps in the uncooked mixture

Whisk the besan into the curd gradually, then add the recipe’s liquid while whisking. If lumps remain and the mixture is still uncooked, straining it is a practical rescue option.

The curd is separating in the pan

Lower the heat and keep stirring. If you have not added the curd mixture yet, take the pan off the heat first; after adding it, return the pan to low heat. Besan may help stabilize the gravy when it is part of the recipe.

The gravy is too thick

Stir in warm reserved gatte water or warm water in small additions until the gravy loosens. Gradual additions make it easier to stop at the texture you want.

The gravy is too thin

Simmer gently to reduce it, then give it a short rest before deciding whether it needs more cooking; it thickens as it cools. Avoid tipping dry besan straight into the gravy, since it can form lumps.

The gatte are hard

Hard dumplings are a separate issue from lumpy gravy. The recipe guidance associates hard gatte with overworked dough or excessive boiling; its main method calls for a crack-free, semi-soft dough and cooking the dumplings until they float.

The method reflects recipe guidance from Dassana Amit’s Gatte Ki Sabji Recipe (Besan Ki Sabji), updated April 19, 2026, and Gujarati Kadhi Recipe, updated December 28, 2024, plus NNWA’s Gatte Ki Sabzi Recipe: Soft Gatte and an Intact Gravy, accessed October 4, 2026.
