Make a hearty meat-free chicken pot pie by cooking plant-based chicken as its package directs, building a vegetable-and-broth gravy, and baking it under pastry until the crust is golden and the filling bubbles. Choose a full double crust if you want pastry all around; use puff pastry on top for a simpler route.
Choose a crust style and plant-based chicken
A double-crust pie has pastry on the bottom and top, so it takes more dough work and chilling. A puff-pastry-top pie skips the bottom crust and uses thawed pastry over the filling. The first approach gives you pastry throughout; the second is a practical option when you want a flaky top without making dough.
| Format | Preparation | What to expect | Source example |
|---|---|---|---|
| Double crust | Make and chill dough; line the dish, add filling, cover, and cut steam vents. | Pastry on the bottom and top; more hands-on work and planning. | Beyond Meat’s Beyond Steak Pot Pie lists 2 hours prep and 80 minutes cook time, with at least 2 hours of dough chilling; these are timings for that recipe, not a general estimate. Beyond Meat recipe |
| Puff-pastry top | Cover the filling with non-dairy puff pastry and bake. | A golden, flaky lid without a bottom crust. | Daring’s recipe says to bake 15–20 minutes, until its pastry is golden and the mixture below bubbles. That cue and timing belong to that recipe. Daring recipe |
Use plant-based chicken pieces, strips, or scallopini that suit the texture you want. An older Classic Chicken-Free Pot Pie recipe names Gardein Chick’n Scallopini, MorningStar Chick’n Strips, and Beyond Meat, but products, ingredients, and availability can change. Check the package for breading, seasoning, allergens, and cooking directions; those differences can affect how much seasoning or cooking time the filling needs.

Potatoes, onion, mixed vegetables, and gravy make a familiar hearty base. For more depth, use carrots, mushrooms, peas, and herbs. The key is to thicken the broth before adding pastry so the filling is gravy-like rather than watery.

Ingredients for a flexible filling
- Plant-based chicken, prepared according to its package directions
- Onion, diced
- Potato, cut into small pieces
- Carrots and mushrooms, chopped
- Peas or mixed vegetables
- Vegetable broth
- Flour and a little oat milk or another suitable milk alternative, if desired
- Herbs, salt, and pepper to taste
Cook the filling
- Prepare the protein. Follow the product’s package directions. Cut larger cooked pieces into bite-size portions if appropriate for that product. Do not assume every plant-based chicken product should be handled or cooked the same way.
- Soften the vegetables. Cook onion in a little oil until softened. Add potato, carrots, and mushrooms; cook until they begin to soften. If using a product that needs separate browning or warming, do that as directed by its package.
- Make the gravy. Stir flour into the vegetables and cook briefly, then gradually add vegetable broth while stirring to prevent lumps. Add oat milk if you want a creamier gravy. Simmer until thickened and the potatoes are nearly tender.
- Finish the mixture. Stir in peas, herbs, and the prepared plant-based chicken. Taste and adjust seasoning. The filling should be thick enough to mound on a spoon; simmer a little longer if it remains thin.
Assemble and bake the pie
For a double crust
Roll chilled dough to line a pie dish, add the cooled or slightly warm filling, and cover with the second round of dough. Seal the edges and cut vents in the top so steam can escape. Beyond Meat’s published Beyond Steak Pot Pie recipe gives one source-specific bake: 375°F for 45–55 minutes, followed by a 15-minute rest. Use that timing as a reference for that recipe, not as a universal rule for different dishes or crusts. See the recipe.
For a puff-pastry top
Spoon the filling into an oven-safe dish and cover it with non-dairy puff pastry, following the pastry package’s thawing and handling directions. Daring’s recipe uses golden pastry and a bubbling filling as its cues and specifies 15–20 minutes; ovens, dish sizes, and pastry products vary, so watch the pie rather than relying on that timing alone. See Daring’s recipe.

- One 7.5 oz. box of Amy's Vegetable Pot Pie the whole family will love
- Made with organic carrots, peas, potatoes and made-from-scratch tofu
- Simmered in a creamy, well-seasoned sauce inside a tender crust made from organic whole wheat flour
- Non GMO, Certified Kosher and Tree Nut Free
- Convenient and easy to prepare, simply heat and serve!
With either method, let the pie stand briefly before serving so the filling can settle. The center should be hot, and the chosen pastry should be fully baked and golden.
Follow the protein’s own cooking and safety directions
Do not apply poultry guidance automatically to plant-based products. USDA FSIS recommends cooking poultry to 165°F, measured with a food thermometer, but that advice is for poultry. Beyond Meat separately gives a 165°F instruction for its own tenders; it does not establish a temperature for other meatless products. Follow the instructions on the package for the specific plant-based protein you use. USDA FSIS: Doneness Versus Safety and Beyond Chicken Tenders product page.
