Put refrigerated and frozen foods away as soon as you get home. FDA and USDA guidance allows no more than two hours without temperature control at ordinary room temperatures—or one hour when the air is above 90°F. Then sort the haul by safe storage time: keep the refrigerator at or below 40°F, the freezer at or below 0°F, and freeze surplus meat or other perishables promptly.
What to do first when you get home
- Make room before unpacking. Clear space in the refrigerator and freezer so cold air can circulate. If you do not know whether the appliances are holding safe temperatures, check them with appliance thermometers rather than relying only on the control dials.
- Unload chilled and frozen items promptly. The two-hour limit is a maximum, not a goal. FDA guidance says refrigerated foods should not sit at room temperature for more than two hours, or one hour if the air temperature is above 90°F. USDA gives the same time limits for perishable foods. See the FDA’s “Are You Storing Food Safely?” guidance and USDA’s Food Safety Basics.
- Separate raw animal products. Keep raw meat, poultry, seafood, and eggs apart from produce and ready-to-eat foods during transport and storage. Place meat, poultry, and seafood in leak-containing packaging or a container, and position it where raw juices cannot drip onto other food. Cover or seal refrigerated items.
- Decide what to use soon and what to freeze. Refrigerate only what you expect to use within the safe storage window. Divide bulk purchases into practical meal-sized portions and freeze the surplus promptly. Add a date or intended meal to each package as an organization aid—not as a safety guarantee.
Set refrigerator and freezer temperatures
Keep the refrigerator at 40°F (4°C) or below and the freezer at 0°F (-18°C) or below. FDA and USDA recommend appliance thermometers because a control dial setting does not tell you the actual temperature inside. See the FDA storage guidance and USDA Food Safety Basics.
Use or freeze high-risk foods on time
USDA’s refrigerator guidance gives these windows for fresh meat and cooked leftovers. Keep the food refrigerated at 40°F or below while it awaits use; freeze it within its window if you will not cook or eat it in time.

Freeze bulk purchases and leftovers safely
Portion uncooked food before freezing
Split large packs into amounts suited to a meal, seal them in freezer-safe packaging, and label them with the date or planned use. This makes it easier to thaw only what you need and helps you keep track of older packages. The label is for organization; it does not replace safe handling.
Cool leftovers in shallow containers
Divide a large pot or serving dish into shallow, covered containers and refrigerate or freeze promptly. USDA recommends shallow containers to help leftovers cool faster. Reheat leftovers to 165°F. Most cooked leftovers should be used within three to four days if refrigerated; freeze portions for longer storage.

Know what freezer time means
Food kept continuously frozen at 0°F remains safe indefinitely, according to the FDA; recommended freezer storage durations are generally about quality, which can decline over time. Freezing does not make mishandled food safe again. See the FDA’s “How to Cut Food Waste and Maintain Food Safety”.

There is no single safe-storage timeline that covers every produce or dairy item in a large shop. Check package handling directions, refrigerate items that require it, and plan meals around the more perishable purchases first. The FDA cautions against impulse or bulk purchases of produce and dairy with limited shelf life. Buying a quantity your household can use—or freezing suitable portions promptly—is a better waste-prevention strategy than assuming every bulk item will keep equally well.

Does a warehouse-club shop need different food-safety rules?
The FDA and USDA guidance cited here applies to household groceries generally; it does not establish a separate set of food-safety rules for warehouse-club purchases. The practical difference is often quantity: more food may need sorting, portioning, and freezing at once, so clear appliance space and a plan for the most perishable items before shopping.
