If your goal is to block access to apps during certain hours, use Screen Time > Downtime instead. Downtime schedules restrictions on app use while allowing selected apps and contacts; Do Not Disturb is a Focus setting for managing notifications and interruptions. Apple explains Screen Time and Downtime separately from its Focus settings.
