Food delivery apps do not rely on one all-knowing AI to choose what you see, set what you pay, and send your order to a courier. They combine separate systems: models select and rank available restaurants, merchants and platform rules shape prices and fees, and prediction models plus optimization software coordinate pickup, dispatch, batching, and routes. The details vary by platform, market, and date; public disclosures from Uber Eats, DoorDash, and Meituan show how some of those decisions work.

Why does one restaurant appear before another?

A restaurant has to pass two different tests to appear prominently: it must be a feasible option for your address and the current moment, and it must rank well among the options that are feasible. A result near the top is not, by itself, proof that the restaurant paid for placement.

First, the app selects restaurants that can serve you

The candidate set depends on practical constraints such as your location, whether a merchant is open and accepting orders, its delivery area, and whether delivery is possible at that time. A restaurant outside its delivery radius or unavailable during a busy period may not be a realistic candidate, regardless of its popularity.

Then, an organic ranking predicts what may suit you

Uber’s 2025 Algorithmic Transparency Report for Europe says its discovery ranking can consider location, time of day, merchant availability and proximity, past preferences, and estimated delivery time. These are disclosed Uber examples, not a universal recipe used by every delivery app.

In an engineering post dated April 16, 2026, Uber described a newer home-feed approach that combines conventional inputs—such as numeric and category-based features—with an encoder for sequences of customer behavior. The aim is to use both established preferences and more recent context while balancing familiar choices against discovering something new. That description applies to Uber Eats; it does not establish that every platform uses transformer-based recommendations.

Sponsored placement is a separate path

Uber describes sponsored listings as taking relevance into account alongside a merchant’s bid. Its 2025 Europe report gives the example of a customer’s vegetarian-order history making a sponsored plant-based restaurant more relevant than a higher-spending burger restaurant. A bid can affect paid placement, but it does not alone explain every result or guarantee the top position.

Who sets the menu price, and why do fees change?

“The app’s AI sets the price” collapses several different charges into one. Restaurant menu prices are generally set by the merchant; delivery, service, small-order, long-range, and other fees are separate charges with rules that depend on the market and order.

Menu prices and platform fees are different

Uber Eats help material for specific regions says restaurant prices and offers may differ from prices or offers in person. The menu total therefore need not match what the restaurant charges at its own counter. That does not mean a platform model selected each restaurant’s menu price.

Uber’s help pages describe delivery-fee inputs that can include delivery location or distance, nearby courier availability, demand or busy periods, and basket size. They also distinguish delivery charges from other possible fees. The names, applicability, and calculation rules differ by country, city, merchant delivery model, and time; check the fee breakdown shown at local checkout rather than assuming a universal formula or percentage.

A changing total does not prove personalized base pricing

A checkout amount can change because the destination, distance, courier supply, demand, basket size, merchant’s menu prices, or local fee rules changed. That is not enough evidence to conclude that the app individually raised the base price for a particular customer.

Uber’s 2026 pricing-principles one-pager says that, for its consumer-facing US products with prices set by Uber, the company does not use personal data to personalize prices for individual consumers. It says location may inform factors such as time and distance or real-time supply and demand. The statement is limited: it notes that practices may differ for enterprise offerings, third-party-set prices such as restaurant menus, and markets outside the United States. It should not be read as a claim about every delivery platform or as a statement that personalized discounts and individualized base prices are the same thing.

How does a platform decide which courier gets an order?

Dispatch is a sequence of predictions and operational choices, not just a nearest-courier lookup. The platform must estimate what is likely to happen, choose an assignment, and respond when conditions change or a courier declines an offer.

Predict readiness, travel time, and acceptance

DoorDash engineering describes machine-learning predictions for when an order will be ready, how long travel will take, and whether a courier is likely to accept an offer. Readiness matters because sending a courier too early can leave them waiting at the restaurant; sending one too late can leave prepared food waiting and delay delivery.

Score offers, consider batching, and time dispatch

DoorDash says an optimization layer scores and ranks possible offers, decides whether orders should be batched, and may delay dispatch strategically. It must balance timing and fulfillment goals while allowing for rejected offers and keeping orders on time. A courier’s proximity can matter, but it is only one element in a decision that also depends on readiness, predicted travel, and the other available assignments.

In an earlier technical post, DoorDash described generating possible courier routes and selecting assignments in real time. The post explains why a simple one-order-at-a-time matching setup was insufficient for more complex routes involving multiple deliveries. That is a historical engineering account, not a complete specification of DoorDash’s implementation in 2026.

What makes a delivery route “best”?

The shortest route by distance is not necessarily the best operational choice. A route or assignment has to work with restaurant readiness, expected travel time, courier waiting, delivery promises, possible order bundles, and the quality of fulfillment. Under uncertain conditions, the system is balancing competing goals rather than finding one permanently optimal path.

For example, adding a second nearby delivery may reduce courier travel per order, but only if the extra pickup and drop-off fit the timing constraints. Likewise, dispatching immediately may seem faster, yet it can send a courier to wait for food that is not ready. The system’s predictions estimate likely outcomes; optimization compares feasible choices and selects one under the platform’s operational objectives.

What a published Meituan result does—and does not—show

A 2023 article in INFORMS Journal on Applied Analytics describes Meituan’s real-time dispatch system as combining operations research and machine learning to assign orders in a dynamic, uncertain delivery network. The article reports that the system solved assignment problems in seconds. It also reports that, after implementation in 2019, average delivery time decreased by 20.96% and average courier travel distance per order decreased by 23.77%.

Those figures are reported for Meituan’s system and its implementation, not as a cross-platform trial or a guarantee of what another app will achieve. They illustrate how an assignment system can pursue delivery speed and courier efficiency together; they do not show that every individual route is shortest or that the same results apply to other services.

What can customers reliably infer from the app?

  • A restaurant’s position may reflect availability, fit with your preferences, estimated delivery, and—in a sponsored placement—paid promotion combined with relevance.
  • A fee change can reflect location, distance, supply, demand, basket size, or local rules; the total alone does not reveal which factor changed.
  • A courier assignment can reflect readiness and route-wide efficiency as well as distance to the restaurant.
  • Public company disclosures explain selected systems, not every decision rule or the complete ranking, pricing, and routing blueprint for every platform or market.

“AI” here covers different tools: recommendation and prediction models estimate relevance or likely outcomes, while optimization can use operations-research methods to compare assignments and routes. Knowing that an app uses machine learning does not mean every decision is made by a neural network.
