A laboratory “tongue” made with one fluorescent polymer distinguished patterns from 25 commercial fruit juices—not by tasting them like a person, but by measuring how the samples changed the polymer’s fluorescence. In a 2017 study, researchers combined readings at three pH levels with statistical classification to identify the tested apple, grape, and blackcurrant juices.
How can one polymer tell juices apart?
The sensor used a positively charged fluorescent polymer called P2, a poly(para-phenyleneethynylene). When constituents in a juice interact with the polymer, its fluorescence is quenched: the emitted light changes in intensity. The researchers measured those responses under three conditions—pH 3, pH 7, and pH 13—then used linear discriminant analysis (LDA) to classify the resulting patterns.
In effect, the polymer produced a chemical fingerprint for each sample. The statistical method looked for patterns that separated the tested juices. The “tongue” is therefore an optoelectronic sensing and classification system, not a material that physically tastes or recognizes flavor as a human does.
What did the study distinguish?
The team reported discriminating 25 commercial juice products: 14 apple juices, six grape juices, and five blackcurrant juices. These are the samples tested in the paper, not evidence that the method can identify every juice, brand, or formulation. The Royal Society of Chemistry’s paper describes the method and its results.

What are the method’s limits?
The researchers also tested a negatively charged fluorescent polymer, P1. It discriminated samples too, but required 50 times the analyte concentration used for P2. That result is a specific comparison in this study; it does not establish that P1 is inferior in every application or operating condition.
Mixtures exposed limits in classification. Some mixtures of blackcurrant and red grape were classified as red grape. A red-and-green grape mixture was classified as red grape when it contained more than 70% red grape. These cases show why “distinguish” should be understood as successful classification of the reported samples and conditions, not perfect identification of arbitrary mixtures.

Is this a practical juice-testing product?
The 2017 work is a laboratory proof of concept. The cited paper and coverage do not establish a retail sensor, an at-home test, universal juice identification, or routine commercial quality-control performance. Chemistry World reported that corresponding author Uwe H. F. Bunz hoped the sensor might eventually help with quality control of expensive beverages or detect counterfeit alcoholic drinks. Those were proposed future uses, not demonstrated deployments. Chemistry World’s 2017 coverage discusses the researchers’ aspirations and the study.

Jinsong Han, Benhua Wang, Markus Bender, Kai Seehafer, and Uwe H. F. Bunz reported the work in the journal Analyst. The journal record lists first publication on 16 January 2017. The journal entry provides the publication record and paper details.
