Yes—some green tomatoes exposed to frost can ripen indoors, provided they are still firm and have reached mature-green or breaker stage. Fruit that froze through often turns mushy as it thaws, while small, matte-green immature tomatoes are unlikely to ripen well. Sort the harvest by maturity and condition before deciding what to store.
Which frost-exposed tomatoes can still ripen?
Frost exposure alone does not mean every tomato on the vine is lost. The key questions are whether the fruit is mature enough and whether it stayed intact. A light frost and a hard freeze are not equivalent: tomatoes that froze through may become soft after thawing because, as an Adams County Master Gardener explained, “Freezing breaks the cell walls of the fruit.” That response, dated October 30, 2020, concerned tomatoes described as frozen after a hard freeze; it does not establish that all fruit touched by frost is damaged.
| What you see | Likely outcome | What to do |
|---|---|---|
| Pink blush on the fruit | Breaker stage; it can ripen off the vine. | Keep firm, intact fruit for indoor ripening. |
| Shiny green skin and a white-to-light-green star at the blossom end | Mature green; it can ripen, although flavor may not fully develop. | Store it under suitable conditions and inspect regularly. |
| Matte green skin, with no signs of maturity | Immature fruit is less likely to ripen successfully. | Use promptly in a suitable green-tomato dish rather than counting on indoor ripening. |
| Soft, split, visibly damaged, or frozen through | It may deteriorate or become mushy after thawing and will not retain a firm fresh texture. | Do not store it with sound fruit. A thawed tomato may be suitable only for an appropriate cooked use if otherwise acceptable; an Adams County Master Gardener advises discarding tomatoes that froze through because of poor texture and flavor. |
These maturity signs and recommendations are summarized by Colorado State University Extension. The frost-versus-freeze distinction comes from Ask Extension and the Adams County Master Gardener response.

What to do before and after frost
Before frost: pick sound, mature fruit
If frost is forecast and you can harvest beforehand, choose firm, defect-free tomatoes that are greenish-white or more mature. Iowa State University Extension and Outreach recommends removing the stems, cleaning and drying the fruit, and preparing it for indoor storage. See its indoor-ripening guidance.

After frost: sort before storing
Check each tomato rather than assuming all fruit on a frost-hit vine had the same exposure. Set aside fruit that is still firm and intact; separate fruit that is soft, split, visibly damaged, or frozen through. Mature tomatoes may continue to ripen if the plant is still alive, but immature fruit may not. Do not put questionable or decaying fruit in the same storage group as sound tomatoes.
Clean, dry, and arrange the fruit
For Iowa State’s method, remove stems, clean and dry the tomatoes, then wrap each one individually in newspaper. Put the wrapped fruit in a single layer in a box or on a table in a dark, cool place. Another extension-supported approach is a covered box or container lined with newspaper or cardboard. Whichever arrangement you choose, avoid overfilling and keep the fruit out of direct sunlight.

Choose a storage temperature for speed or keeping quality
Extension recommendations vary, so use their ranges as practical guidance rather than as one exact optimum or a guaranteed schedule.
| Source | Recommended temperature | Published timing or caveat |
|---|---|---|
| Colorado State University Extension (2023) | 55–70°F in a dark location | Estimates a couple of weeks near 70°F and about a month near 55°F; fruit stored below 50°F may be bland. |
| Iowa State University Extension and Outreach (page last updated 2024) | 60–65°F | Gives this as its indoor-storage recommendation. |
| University of Missouri Extension guidance reproduced in a 2018 publication | 65–70°F for mature-green tomatoes | Estimates about two weeks to ripen and notes that cooler temperatures slow ripening. |
The timing figures are horticultural estimates, not guarantees. Ripening depends on fruit maturity, variety, and conditions, and indoor fruit may have less flavor than tomatoes ripened on the vine. Colorado State’s details appear in its harvesting and storage guidance; Iowa State’s recommendation is in its indoor-ripening guidance.

Inspect stored tomatoes and manage ripening speed
- Check the fruit every few days, or every couple of days if using a covered container. Remove ripe tomatoes and anything that is decaying.
- Keep the storage area dark and out of direct sunlight. Excess humidity may encourage mold; too little humidity can cause shriveling.
- To encourage faster ripening, place a ripe tomato or banana with the green fruit. Ripe tomatoes release ethylene, which stimulates ripening.
- To slow the group, remove tomatoes as they begin to color.
These handling and ripening suggestions are included in Colorado State University Extension’s guidance and the Adams County Master Gardener response.

Matte, immature fruit is a better candidate for a green-tomato recipe than for weeks of indoor storage. Use damaged-but-usable fruit promptly rather than expecting it to ripen intact. For canning or other preservation, follow a tested recipe from a food-preservation authority; the horticulture guidance here is not a canning-safety recommendation.
