What the BES840 offers
Breville describes the Infuser as a machine that begins extraction with low, steady pressure for pre-infusion, then increases pressure for brewing. - Useful Tips: Please kindly note that do not brew coffee immediately after frothing milk. The machine must cool down first otherwise the temperature and the pressure inside the machine will be too high, and the machine will go into over-heating protection mode. Gauge and shot volume
The built-in gauge offers extraction feedback, while single- and double-shot settings provide preset volume control and the machine also supports manual/volumetric operation. These are controls to learn and use, not automatic corrections: a gauge reading by itself does not prove a shot is well extracted.

Manual milk texturing
The steam wand is manual. That gives the user direct involvement in texturing milk, but it also means milk preparation is a skill to learn rather than a hands-off step. Breville lists a stainless-steel milk jug in the box.
