Beef tenderloin is the best default choice for Steak Diane if you want tender, compact medallions. Sirloin, New York strip and ribeye are also used in published recipes, while one recipe offers top round as another option. There is no single required cut.
Which cut should you choose?
Choose tenderloin for tenderness and a classic medallion-style presentation. If you prefer another cut or it is more practical to buy, sirloin, New York strip and ribeye are recipe-supported alternatives. Top round appears in one recipe, so it is a less commonly documented choice in the recipes cited here.
The available recipes establish that these cuts are used for Steak Diane; they do not provide a controlled taste test or a price comparison. Consider tenderness, marbling and flavor, local availability, price, and whether the steak’s thickness and shape suit quick skillet cooking.

| Cut | How a published recipe uses it |
|---|---|
| Beef tenderloin | Paula Deen’s recipe uses one pound cut into eight slices. Le Creuset’s recipe calls for four six-ounce tenderloin steaks. |
| Sirloin, New York strip or ribeye | A Publix recipe lists these as examples of boneless grilling steaks. |
| New York strip | The Lake Buena Vista Club recipe published by Disney Parks uses four trimmed six-ounce steaks. |
| Top round or tenderloin medallions | The Washington Post recipe lists four-ounce top round steaks or beef tenderloin medallions. |
Match the steak to the cooking method
Steak Diane is made as a quick skillet steak served with a pan sauce in the recipes reviewed. Cuts, portions and directions vary, so use the selected recipe’s instructions for thickness, cooking time and doneness rather than applying one timing to every cut. The Disney Parks version, for example, uses brandy and flambé; sauce ingredients and methods differ among recipes.

Keep doneness guidance distinct from food-safety guidance
The Publix recipe describes medium-rare and medium temperatures as traditional values, not USDA recommendations. It states that USDA recommends cooking beef to an internal temperature of 145°F and resting it for three minutes. Follow food-safety guidance separately from a recipe’s preferred steakhouse doneness.
