“Besan ki sabji” can mean different dishes: some recipes use it as another name for gatte ki sabji, while Rajasthani pitod ki sabzi is a distinct besan-based preparation. For a useful comparison, this article distinguishes pitod (also called patodi) ki sabji from gatte ki sabji. Both use gram flour, but the besan is shaped and cooked differently.
Are besan ki sabji and gatte ki sabji the same?
Not always. A recipe may call gatte ki sabji “besan ki sabji,” so the names can overlap. But when “besan ki sabji” refers to Rajasthani pitod or patodi ki sabzi, it describes a different preparation. Check the method or ask which dish is meant rather than relying on the name alone.
The distinction is clearest in how the besan is formed: gatte begin as rolled dough cylinders, while pitod is cooked into a set preparation and then cut into pieces.

How the two dishes are prepared
Gatte ki sabji
In the representative recipe published by Rotary News, besan is seasoned and combined with a little curd and oil, then kneaded into a firm dough. The dough is rolled into cylinders, boiled, cut into pieces and added to a spiced, curd-based gravy. See the Rotary News recipe by Diksha Rathi.

Pitod or patodi ki sabji
NDTV Food’s Rajasthani pitod recipe seasons besan with turmeric, red chilli, salt, hing, cumin, ajwain and oil. The mixture is cooked until set, then cut into pieces for the curry; it is not first rolled into cylinders and boiled as in the cited gatte method. This is one recipe’s ingredient list, not a universal formula. See NDTV Food’s Rajasthani Pitod Ki Sabzi recipe.
Ingredients, shape and texture compared

How gatte fits into Rajasthani cuisine
Rajasthan Tourism describes several besan-dumpling preparations, illustrating that gatte dishes do not have just one canonical form. Its page describes Gatte ki Khichdi with spices, green peas, boiled or fried besan dumplings and aromatic rice, and Shahi Gatte with deep-fried stuffed besan dumplings in thick curd-based gravy. These examples provide regional context, rather than establishing an exclusive origin story or a single recipe for gatte ki sabji. See Rajasthan Tourism’s overview of Rajasthani cuisine.
