The safest choice is to discard a potato that is noticeably green, sprouted, or bitter. Green color is a warning sign: light can increase potato glycoalkaloids, including solanine and chaconine. Cooking does not reliably eliminate them, and peeling is not a guarantee of safety.
Why do potatoes turn green?
Light exposure prompts potatoes to produce chlorophyll, the pigment that makes them green, and can also increase glycoalkaloids. Chlorophyll itself is not toxic; the concern is that greening may signal elevated glycoalkaloids. These compounds can be more concentrated around the eyes, in green skin, and in sprouts. The visible color alone cannot establish how much is in a particular potato.
Can you make a green potato safe to eat?
There is no reliable home-use color or concentration cutoff that proves a green potato is safe. Poison Control recommends discarding green or sprouted potatoes. University of Minnesota Extension offers more graduated garden guidance: remove green areas, but do not eat potatoes with extensive greening; it also warns that sprouts can be toxic.

Cooking and peeling
Poison Control says baking, boiling, frying, and microwaving do not eliminate potato glycoalkaloids. Peeling before cooking may reduce their amount, but that reduction does not prove a green or sprouted potato is safe to eat.
Washing
Rinsing and scrubbing remove dirt and some surface contamination; they are not a dependable way to remove glycoalkaloids. For routine preparation, FoodSafety.gov advises rinsing potatoes under running water and scrubbing uncut firm produce with a clean brush. Do not use soap or bleach on produce.

What symptoms can potato glycoalkaloids cause?
Possible symptoms include nausea, vomiting, abdominal pain, and diarrhea. Headache, flushing, confusion, and fever have also been reported. Symptoms often begin within a few hours, but can be delayed for up to a day.
If someone has eaten a green or sprouted potato and you are concerned, contact a poison center: in the United States, call 1-800-222-1222 or use webPOISONCONTROL. Seek medical attention for severe or persistent symptoms, or if the person cannot keep fluids down.

How should you store potatoes to prevent greening?
- Keep potatoes in a cool, dry, dark place and away from light.
- Use a breathable container rather than sealing them in an airtight one.
- Buy potatoes close to when you plan to use them, and check for green areas and sprouts before cooking.
A breathable storage bag can help block light while allowing airflow, but it is optional and cannot reverse greening or make a questionable potato safe.
