日本マクドナルドのCTO、杉林孝彦氏が描くのは、AIとIoTを単なる省力化ツールではなく、調理から受け渡しまでの速さや、店内での過ごしやすさを高める手段として使うレストランだ。2026年3月のインタビューでは、厨房の温度・鮮度データをリアルタイムに収集する取り組みと、厨房全体をネットワーク化する将来像が語られた。生成AIについては、意欲ある部門から始め、業務を見直しながら導入範囲を広げる考え方が示されている。
テクノロジー投資の目的は、効率化と顧客体験の両立
杉林氏が重視するのは、ITで店舗運営を効率化するだけでなく、顧客にとっての価値も高めることだ。目標として挙げるのは、調理から商品の受け渡しまでを速くすること、混雑時の待ち時間を短くすること、店内や購入時の体験をより快適にすること。数秒、あるいは一瞬の改善もブランド体験に関わるという考えを示している。

厨房IoT：現在のデータ収集と、将来の接続された厨房
現在語られているのは温度・鮮度データの収集
杉林氏によると、IoTを使って厨房の温度や鮮度に関するデータをリアルタイムに収集している。こうした情報は、食品の状態を把握し、店舗運営を支えるための基盤となる。

厨房全体のネットワーク化は今後の構想
一方、機器や工程を含む厨房全体がネットワークでつながり、その情報を運営方法の変化に結びつける姿は、インタビューで示された将来像だ。現行のデータ収集と、接続された厨房が実現済みであるかのような表現は区別する必要がある。インタビューは導入店舗数やIoTによる投資対効果を示していない。
CIO Japanのインタビューに加え、CIO Leadership Liveのエピソードページは、国内3,000店超の運営を背景として紹介している。この店舗数は同ページによる説明であり、IoTの成果を示す数字ではない。

生成AIは、小さく始めて業務の再設計とともに広げる
杉林氏が説明するAI導入は、ライセンスを配るだけの計画ではない。まず利用意欲のある部門で試し、効果を見える形にし、社内の需要を育てる。そのうえで経営の承認を得て展開を広げ、部門横断のAIアンバサダーを置き、法務部門と利用方針やガイドラインを整えるという進め方だ。

本社での生成AI活用と、店舗訪問支援の構想
2025年9月のISS Consultingのインタビューでは、本社での生成AI利用について、当初の約10人分のライセンスから、ほぼ全ての本社社員に広げる計画が承認されたと説明されている。例として、メールの要約、業務プロセスの簡素化、会議資料や職務記述書の草案作成が挙げられた。

ISS Consultingの2025年9月のインタビューは、約3年間で約1,000店舗を改装する計画を報じている。セルフオーダーキオスクに対応しやすい設計や、厨房レイアウトの見直しも含むとされた。これは当時の計画であり、完了した店舗数や現在の進捗を示す報告ではない。

杉林氏は2025年1月に日本マクドナルドのCTOに就任した。NTTで営業からキャリアを始め、技術やシステムへの関心を深めた後、Gap Japan、Coach Japan、Tapestryでテクノロジー関連の仕事を担った。Coachで経験豊富な社内チームがない状態からEC立ち上げを引き受けた経験を経て、アジアや欧州を含む役割に広がったという。本人は、17年以上にわたり20カ国以上の事業を支援したと説明している。
同氏が語るリーダーシップは、完璧な答えを待つより、まず試し、結果を見て調整することに重きを置く。また、CTOには事業や組織への理解、グローバルと地域の要請をつなぐ力、技術選択の意味を説明する力が必要だとしている。「やってみなはれ」という言葉も大切にしているが、これはサントリー創業者の鳥井信治郎氏の言葉として引用している。CIO Japan、2026年3月9日
