A synthetic three-amino-acid peptide catalyst formed carbon–carbon bonds in laboratory reactions conducted in varied media, including milk, beer and cell lysate. The result shows that this catalyst can retain activity and selectivity in the particular complex mixtures tested; it does not mean it was used to make or treat food, or that it worked inside living cells.
What the study found
In a 2022 Chemical Science paper, Tobias Schnitzer, Jonas W. Rackl and Helma Wennemers reported a tailored tripeptide catalyst, H-DPro-αMePro-Glu-NHC12H15. It catalyzed stereoselective carbon–carbon bond-forming reactions in both hydrophobic and aqueous environments, including selected complex mixtures. The Royal Society of Chemistry’s paper record identifies the study and its authors.
The reaction involved aldehydes and nitroolefins. In the reported experimental systems, the paper’s indexed text gives desired-product yields of 80–97%, enantiomeric excess of at least 93%, and diastereomeric ratios of 85:15–94:6. These are ranges for the studied reaction conditions, not general performance guarantees for other reactions or mixtures. The numerical ranges appear in the ETH repository’s indexed paper text.

The liquids were laboratory reaction media, not ingredients or products being manufactured. Chemistry World reports tests in waters from different sources, milk and milk substitutes, juices, coffee, tea, honey solution, soft drinks, alcohol, vinegar and olive oil; it also reports activity in beer and cell lysate. These examples show performance in the specific media examined, not universal compatibility with any beverage or biological mixture.

Cell lysate is material obtained by breaking open cells. It contains a complex mixture of cellular components, but it is not an intact, functioning cell. The study therefore supports catalysis in a cell-derived mixture, not catalysis inside living cells.
How a small peptide can catalyze a bond-forming reaction
A peptide is a chain of amino-acid units. This catalyst is a deliberately designed synthetic tripeptide, not an enzyme or a naturally established catalyst. Its structure creates a chemical environment that can promote reaction between the aldehyde and nitroolefin while favoring particular product arrangements.

The authors highlight the α-methylproline residue as a way to influence the trans/cis ratio of a tertiary amide bond and help give the peptide a well-defined conformation. That structural tuning is relevant because the catalyst must retain a useful arrangement to guide a stereoselective reaction even when other molecules are present.

Small peptide catalysts are often studied in relatively defined solvents. Testing one in chemically varied media addresses a practical scientific challenge: other components can potentially interact with a catalyst, reactants or intermediates. The reported results suggest this tailored peptide can still promote the studied reaction with high selectivity in the specific environments tested.

The findings do not establish that the catalyst is naturally present, that it is useful for food production, or that it outperforms enzymes. The authors raise a broader question about the possible role of small catalytic peptides in the evolution of enzymes, but this experiment does not answer that question. Chemistry World quotes corresponding author Helma Wennemers saying the findings “provoke the question of the potential role of small catalytic peptides in the evolution of enzymes.”
