Create a new column for Hebrew text
For example, this table defines a name_he column explicitly with utf8mb4:
CREATE TABLE people (
name_he VARCHAR(100) CHARACTER SET utf8mb4
);The character-set clause applies to that column. Use a suitable character type and length for your data; Hebrew does not require a special MySQL data type. Oracle’s MySQL manual recommends utf8mb4 for new applications: MySQL character sets.
Choose where the character set is defined
A column can specify its own character set, or inherit a default. Column settings take precedence; otherwise, a column can inherit from its table, which can in turn inherit from the database. A table default can be set like this:

ALTER TABLE people
DEFAULT CHARACTER SET utf8mb4;This changes the default for columns that do not specify their own character set; it is not the same as explicitly modifying every existing column. Setting utf8mb4 on the specific field makes the intended encoding clear for that field. See the MySQL manual on column character sets and collations.
Set a collation only when you need to control comparisons or sorting
A character set determines how text is encoded; a collation determines how text is compared and sorted. You can declare a collation for a column when the application requires particular behavior. Check that the collation is available on the MySQL version you use: defaults and supported collations can vary by version. Do not select a collation merely because the text is Hebrew.

Change an existing column carefully
To modify an existing column, restate its type and the relevant attributes. For example:
ALTER TABLE people
MODIFY name_he VARCHAR(100) CHARACTER SET utf8mb4;- Inspect the current definition. Note properties such as whether the column permits
NULL, its default value, comment, and collation. - Back up the data. MySQL attempts to map values when converting character sets, but incompatible source and target encodings can cause data loss.
- Modify the column and preserve required attributes. Include those attributes in the
MODIFYdefinition; otherwise, the revised definition may not retain them. - Check the stored text after conversion. Confirm the Hebrew displays as intended in the application.
For details about conversion behavior, consult the MySQL manual on character set conversion. If the existing text is already garbled because it was stored under an incorrect character-set declaration, a straightforward conversion may not repair it. First diagnose how the original bytes were encoded.

Use utf8mb4 instead of the ambiguous utf8 alias
Use the explicit name utf8mb4 for new work. MySQL documents utf8 as a deprecated alias; under the default SQL mode it resolves to utf8mb3, though a SQL mode can change how the alias is interpreted. Explicitly naming utf8mb4 avoids relying on that mode. Check the manual for the Unicode character sets supported by your server.
Check the connection if Hebrew displays incorrectly
A column definition is only one part of character-set handling. If Hebrew appears as question marks, replacement symbols, or garbled text in your application despite the column being configured correctly, check the character sets used by the client/server connection as well as the stored column.
