Bell peppers have no chile heat and offer a familiar sweet, crisp flavor; poblanos are mild chiles with earthy, smoky, fruity flavor. Choose bell peppers when you want a heat-free raw snack or versatile cooked vegetable. Choose poblanos when mild heat suits the dish, especially for roasting or stuffing. A ripe, dried poblano is called an ancho.

How do bell peppers and poblanos differ?

Are poblanos hotter than bell peppers?

Yes. Bell peppers are rated at 0 SHU, while poblano ratings are in the low thousands: NIST lists 1,000–1,500 SHU and UF/IFAS lists 1,000–2,000 SHU. The ranges differ slightly, and neither should be read as an exact score for every pepper.

Heat can vary with pepper type and growing conditions. NIST explains that the traditional Scoville taste-panel test is subjective; high-performance liquid chromatography (HPLC) provides a more reproducible way to measure capsaicinoids. Its explainer, updated April 29, 2025, says Scoville ratings represent the dilution needed for the heat to become undetectable. [NIST]

What do they taste like?

Bell peppers

Bell peppers are sweet and mild overall. Green peppers are less mature and often have a stronger taste; as they mature and change color, their flavor generally mellows. That pattern is not universal across varieties. [UC ANR]

Poblano peppers

Poblanos bring more chile character than a bell pepper without the intensity associated with hotter chiles. UC ANR’s 2026 handout describes their flavor as earthy, smoky, and fruity. Their mild heat makes them a distinct ingredient, not a flavor-equivalent replacement for bell pepper. [UC ANR]

What are the best uses for each?

Use bell peppers for fresh crunch or familiar sweetness

  • Slice them into salads, sandwiches, or snacks when you want no chile heat.
  • Add them to cooked dishes such as meat, rice, or stir-fries when you want a versatile, sweet pepper. [UF/IFAS]

Use poblanos for roasting or stuffing

  • Roast poblanos when you want their chile flavor to lead the dish. Illinois Extension’s stuffed-poblano recipe roasts them and removes the skins; that is one recipe’s method, not a universal requirement. [Illinois Extension]

Can you substitute poblano for bell pepper?

You can, if the recipe can accommodate mild heat and a more earthy, smoky chile flavor. Use bell pepper instead when the recipe depends on heat-free sweetness or familiar raw crunch. Because the two differ in both heat and flavor, the substitution changes the dish; the cited sources do not establish a tested one-for-one rule.
