For most people, carmine is permitted in U.S. foods when used under FDA regulations, but it is not risk-free for everyone. FDA says sensitive consumers can have allergic reactions, including anaphylaxis. If you have reacted to carmine or cochineal extract, avoid it until you have discussed the reaction with a qualified healthcare professional. To check U.S. packaged foods, look for “carmine” or “cochineal extract” in the ingredient list; neither is a major allergen that must appear in a FALCPA “Contains” statement.

What is carmine, and why is it in food?

Carmine is a red color additive derived from insects. FDA also identifies cochineal extract as insect-derived; both are associated with the color additive designation E120. FDA’s color-additive summary lists cochineal extract under 21 CFR 73.100 with 1967 as its approval year, and carmine under the same regulation with 2009 as its listed year. These are regulatory dates, not health-risk statistics. FDA’s summary cautions that the controlling regulation, rather than the summary, determines exact permitted uses and restrictions.

In the United States, FDA permits carmine and cochineal extract for specified food uses under conditions in 21 CFR 73.100. That authorization does not mean every person can consume them without risk: an additive can be permitted for regulated uses and still trigger a reaction in susceptible people. FDA’s food-safety guidance describes the potential for allergic reactions, including severe reactions such as anaphylaxis, in sensitive consumers.

Can carmine cause an allergic reaction?

Yes. FDA identifies carmine and cochineal extract as allergenic substances and says sensitive consumers can experience severe allergic reactions, including anaphylaxis. That describes a possible serious outcome, not how often it happens. The FDA material cited here does not establish the prevalence of carmine allergy, a dose that triggers a reaction, or a complete symptom profile, so a reliable risk percentage or universal symptom checklist cannot be given from these sources.

If you suspect a reaction, do not treat it as a confirmed diagnosis based on the ingredient alone. A healthcare professional can assess your history and advise you on appropriate precautions. FDA also accepts reports of suspected adverse reactions related to color additives through its consumer reporting channels.

Who should avoid carmine?

If you have had symptoms after eating a product listing carmine or cochineal extract, avoid re-exposure while you seek individualized advice from a qualified healthcare professional. This is cautious risk management given FDA’s description of potentially severe reactions; it does not establish that you have an allergy. People without a known or suspected reaction are not advised by the cited material to avoid carmine categorically.

How do I find carmine on a U.S. food label?

When carmine or cochineal extract is present in a U.S. human food, FDA rules require it to be identified by its common or usual name in the ingredient statement. FDA’s compliance guide says the requirement applies to foods intended for human use, including products such as butter, cheese, and ice cream.   1. Find the product’s ingredient list.
  2. Check for the exact terms “carmine” and “cochineal extract.”
  3. Do not rely on a major-allergen “Contains” statement to check for either name.

Carmine and cochineal extract can cause allergic reactions, but they are not among the major allergens in the FALCPA definition. As a result, a major-allergen statement is not a substitute for reading the ingredient list. The declaration rule described above is U.S.-specific; labeling wording and requirements elsewhere may differ. FDA also has separate U.S. labeling rules for these additives in cosmetics, which are distinct from food-label advice.

What FDA’s approval does—and does not—tell you

FDA’s regulatory status means the additives are permitted for specified uses under the applicable conditions; it is not a guarantee that no individual can react. Conversely, the possibility of allergy does not mean a severe reaction is typical or that everyone needs to avoid the ingredient. For exact permitted uses and restrictions, consult the controlling text of 21 CFR 73.100; FDA notes that its color-additive summary is not a substitute for that regulation.
