To change the email Chrome fills in, first check whether it comes from a saved contact entry or from your signed-in Google Account. On a computer, open Passwords and autofill → Contact info to edit or remove a saved entry. If Chrome is using your Google Account name and email, update them under Google Account → Personal info instead.
Change a saved email address in Chrome on a computer

Open Chrome and select the three-dot menu in the top-right corner, or open the profile menu.

Select Passwords and autofill, then Contact info.

Select the saved entry containing the old email. Edit it if the option is available; otherwise, remove it and add a corrected entry.

Check that the relevant Save and fill control is enabled.

Chrome lists Contact info among the autofill categories managed through Passwords and autofill. Its computer help also explains how to check whether the name and email being used come from your Google Account: Google Chrome Help: Fill out forms automatically.
When the email comes from your Google Account
If the old email is the name or email associated with the Google Account signed in to Chrome, changing a separate saved contact entry may not change it. Open Google Account Personal info and update the account details there. Google’s Android instructions say changes to Personal info are automatically reflected in Chrome autofill settings: Google Chrome Help for Android.

Update autofill details on a phone or tablet
Android
In Chrome, open Settings → Autofill and passwords → Addresses and more to manage saved address information. For a name or email sourced from your Google Account, change it under Google Account → Personal info. Make sure Save and fill is on for the relevant information.
iPhone and iPad
Open Chrome Settings → Addresses and more, then select the saved information to edit it. Chrome may ask you to authenticate with Face ID, Touch ID, or your device passcode. If the information is saved in Google Wallet, Chrome redirects you to Wallet to edit it. When you are signed in with the same Google Account, changes can appear on your other Chrome devices. If Chrome still suggests the old email

Check that Save and fill is enabled for addresses or contact information. If it is off, Chrome will not autofill that category. The setting is covered in Google’s computer instructions.

Confirm which source supplied the suggestion: a saved Chrome contact entry or the signed-in Google Account’s Personal info. Update the source that contains the old value.

If the suggestion appears only on one website, Chrome may not recognize that site’s form fields. Google notes that even secure sites can contain fields Chrome does not detect; see Chrome’s autofill help.

As a last resort, Chrome’s Delete browsing data → Advanced → Autofill form data option removes saved autofill form data in bulk, not just one email address. Use it only if you are prepared to clear other saved form entries too. See Google Chrome Help: Delete browsing data in Chrome.

When you are signed in, changes to saved autofill data may appear on other devices using the same Google Account.
