Usually, a Poly USB Bluetooth adapter is not the answer for connecting a Poly headset to Xbox. Poly documents its BT600 and BT700 adapters for computer use, not Xbox. A particular Poly headset might work through a wired 3.5 mm connection, but compatibility depends on the headset and controller. Check both models before buying anything.
Why a Poly USB Bluetooth adapter may not work with Xbox
Poly’s BT700 Bluetooth USB Adapter User Guide describes pairing the adapter with a Poly audio device and plugging it into a laptop or computer. Its media setup instructions cover Windows and Mac; it does not document Xbox support. That means the guide is not evidence that a BT600 or BT700 will carry headset audio to an Xbox console.
Do not assume that adding a USB-A-to-USB-C converter or a generic Bluetooth transmitter changes that. The cited documentation does not test or certify those combinations with Xbox.

Could a Poly headset work through a controller’s 3.5 mm jack?
Possibly, if your exact Poly headset has a suitable wired 3.5 mm connection and your Xbox controller has a matching headset connection.
