Sourdough flavour comes from a changing mix of acids, aroma compounds and their precursors—not one signature molecule. Fermentation creates much of that mix; baking then adds heat-generated flavours, especially in the crust. Which compounds dominate depends on the flour, starter culture and fermentation conditions.

What gives sourdough its flavour?

Two overlapping systems shape what you taste and smell. Organic acids contribute sour taste and acidity. Volatile compounds evaporate into the air and supply much of the bread’s aroma. Some compounds can contribute to both, but a sour taste is not the same thing as a sourdough aroma.

Lactic and acetic acids are central fermentation products, and succinic acid has also been detected in sourdough and bread. Their relative amounts vary between formulations, so there is no universal acid ratio that defines good sourdough. In a study of four formulations, all three acids were detected, but their amounts differed among the samples (2021 study of volatile compounds in breads prepared with different sourdoughs).

Which compounds contribute to aroma?

Sourdough aroma comes from a mixture of volatile compounds rather than a single odorant. Studies report compounds from several chemical families:

  • Alcohols: ethanol, 3-methyl-1-butanol, phenylethanol and 2-methyl-1-propanol.
  • Aldehydes and other carbonyls: acetaldehyde and 2,3-butanedione, among other compounds.
  • Esters: including acetate esters.
  • Acids, ketones and lactones: volatile members of these groups also appear in sourdough profiles.
  • Other compounds: terpenes and heterocyclic compounds have been reported, too.

These are examples found in particular studies, not a complete list or a guaranteed profile for every loaf. Detecting a volatile compound does not, by itself, prove that it has a strong sensory effect at the amount present. The 2017 review discusses odor quality and thresholds, but the literature does not establish one universally valid ranked list of the most important odorants for all sourdough breads (Pétel, Onno and Prost, 2017 review).

How fermentation changes the flavour profile

Yeasts and lactic acid bacteria (LAB) produce and transform compounds during fermentation. Their activity, and the balance among microbial groups, can shift both acidity and aroma. Flour, added ingredients, fermentation duration and temperature, and starter refreshment practices also affect the resulting profile.

Different cultures can produce different volatile profiles

In a 2022 study, researchers made wholemeal breads using 12 mixed sourdough cultures and found three clusters with different volatile and physicochemical profiles. One cluster included ethanol, 3-methyl-1-butanol, phenylethanol, 2-methyl-1-propanol, acetaldehyde and 2,3-butanedione, and was associated with yeast activity and increased lactic acid production. A second cluster was associated with acetic acid, acetate esters and acidity measures. A third was associated with yeast activity and lipid fermentation, and had more aldehydes and lactones. The authors linked the differences to fermentation activity and the balance of yeast and LAB groups (Warburton, Silcock and Eyres, 2022).

Flour and fermentation time matter, too

A study comparing wheat and teff flours, starter strains, citrate and malate, and 24- and 72-hour fermentations reported ethanol as the major volatile tentatively identified. It also observed alcohols, aldehydes, esters, terpenes and heterocyclic compounds. Several volatiles trended higher in sourdough fermented for up to 72 hours, while teff breads had profiles distinct from wheat-based breads. These findings describe the tested combinations; they do not establish that a longer fermentation or a particular flour will produce a specific flavour in every recipe. The study also notes that its method could not distinguish some measured compounds from one another (Van Kerrebroeck and colleagues, 2018).

Why amino acids and baking matter

Free amino acids are released as proteins are broken down during fermentation. They can affect flavour intensity directly and can also serve as precursors for volatile compounds. That makes them part of the flavour pathway even when they are not themselves the aroma compounds a reader notices.

Fermentation is not the whole story. The crumb is more influenced by enzymatic changes during fermentation, while crust flavour is more strongly shaped by baking heat, including Maillard reactions and caramelization. The same dough can therefore have a different flavour balance in its crust and crumb.

How many flavour compounds are there?

Published totals depend on which samples and studies are counted, as well as on measurement and extraction methods. They should not be treated as competing estimates of one fixed inventory.

  • A 2021 systematic review reported about 90 volatile organic compounds in sourdough breads in the mass-spectrometry literature it summarized. The review also describes free amino acids as potential volatile precursors and contributors to flavour intensity (systematic review published in 2021).
  • A 2017 review covered more than 540 volatile compounds reported across sourdoughs and sourdough breads (Pétel, Onno and Prost, 2017).

The figures have different scopes: one concerns sourdough breads in a review of mass-spectrometry literature, while the other spans reports on both sourdough and sourdough bread. Neither is a definitive count of every compound in every loaf.

What this means when comparing sourdough breads

There is no evidence here for ranking one sourdough method as universally more flavourful. A useful comparison looks at several factors together:

  • Acidity: the kind and balance of acids affect sour taste, but acidity alone does not describe aroma.
  • Aroma: alcohols, aldehydes, esters, acids, ketones, lactones and other volatiles can appear in different combinations.
  • Flour and ingredients: wheat, teff and other formulations can yield distinct profiles.
  • Culture and conditions: microbial balance, fermentation duration and temperature, and refreshment practices influence the compounds formed.
  • Crust or crumb: fermentation-related changes shape the crumb, while baking heat adds a different set of influences to the crust.

These factors explain why two sourdoughs can differ in both sourness and aroma. They do not allow an exact sensory prediction from a single ingredient, acid or fermentation schedule.
