Researchers engineered experimental potato tubers to produce much more carotenoid, including β-carotene, by adding three bacterial genes and directing their activity to the tuber. In selected lines, the 2007 study measured 47 µg of β-carotene per gram of dry weight and about 114 µg of total carotenoids per gram of dry weight. Those are laboratory measurements from research potatoes—not fresh-weight nutrition values, proof of a health benefit, or evidence that the potatoes are available to buy.

How does a transgenic potato boost carotenoid levels?

Carotenoids are pigments that include β-carotene, which the body can use to make vitamin A. In a 2007 proof-of-concept study, researchers introduced three bacterial genes from Erwinia into potato. Together, the genes provide a short pathway that converts geranylgeranyl diphosphate toward β-carotene.

  • CrtB encodes phytoene synthase.
  • CrtI encodes phytoene desaturase/carotene isomerase.
  • CrtY encodes lycopene β-cyclase.

The researchers used the potato tuber-specific patatin promoter to direct gene expression to the storage tuber. This targeting mattered: the striking golden-tuber result appeared in selected lines with all three genes under tuber-specific control, rather than consistently across every transformed plant. The study examined 86 independent transgenic lines containing six promoter-and-gene combinations; two of the nine lines with the full tuber-specific construct showed the standout golden phenotype. The 2007 PLOS ONE study reported that the selected tubers turned deep yellow while leaf carotenoid content and visible leaf morphology were not appreciably affected.

Later analysis of 24 lines and six transgene combinations likewise found that high β-carotene accumulation required high expression of all three genes under the Pat promoter. The 2010 analysis describes this as a specific combination of pathway activity and tissue targeting, not an automatic outcome of inserting any one carotenoid gene.

How much β-carotene did the engineered potato contain?

In the selected golden material, the 2007 study reported approximately 47 µg β-carotene per gram of dry weight and approximately 114 µg total carotenoids per gram of dry weight. The authors described these as roughly 3,600-fold and 20-fold increases, respectively, compared with the relevant non-engineered baseline in their experiment.

These concentrations are on a dry-weight basis. They should not be read as amounts per gram of fresh potato or as a serving-size nutrition label; the paper’s reported measurements do not establish a fresh-weight retail-food value. Nor should the fold changes be treated as a general value for all transgenic potatoes: the strongest result came from selected lines, while other transformants did not show the same extreme phenotype.

How do the other potato carotenoid studies differ?

Other experiments also increased carotenoids, but they used different genetic approaches and should not be merged with the three-gene golden-potato result.

The studies differ in genes, cultivar or line, storage conditions, and measurement context. Their fold changes therefore cannot be used as a simple ranking of which approach makes the “best” potato.

Does golden potato provide vitamin A?

The 2007 paper measured β-carotene in tubers and estimated a possible dietary contribution using an assumed β-carotene-to-retinol conversion ratio. It also stated that potato β-carotene bioavailability data were unavailable. The composition result is direct evidence that selected experimental tubers contained β-carotene; it does not demonstrate how much a person would absorb or whether eating them improves vitamin A status.

Is golden potato available to buy?

The studies describe experimentally transformed and propagated research lines. The cited work does not establish that the named lines are sold to consumers or gardeners, and it does not establish current regulatory approval in any jurisdiction. Availability and regulatory status would need to be confirmed with the relevant official regulator for the location in question.
