If one side of your food is browned while another stays pale or undercooked, start with the load and cooking process rather than assuming the appliance has failed. Overfilled baskets, overlapping pieces, different-sized cuts, no mid-cook shake or turn, incorrect settings, and residue blocking airflow are the most common causes. Cook a smaller, evenly arranged batch, move the food when the recipe calls for it, and verify the time and temperature in your model’s manual.

When the same basket area remains undercooked after those checks, the pattern deserves model-specific troubleshooting and manufacturer support. It may reflect how that appliance routes heat and air—or a fault—but uneven results alone do not prove a defect.

What uneven air-fryer cooking looks like

Uneven cooking is more than a single piece finishing slightly sooner. Typical patterns include fries on the top becoming crisp while those underneath remain soft, chicken pieces near one wall browning faster than pieces in the center, or a repeatable pale strip in the same part of the basket. The pattern helps determine whether you are seeing a loading problem, a setting mismatch, or a possible appliance issue.

  • Random variation within a crowded batch: usually points to blocked airflow or pieces shielding one another.
  • Differences that disappear after shaking or turning: usually reflect food position rather than a failed heater.
  • The same zone staying pale on several separate cooks: check the manual, cleaning condition, warranty and support process before considering replacement.

Air fryers cook by moving heated air around the food. Anything that limits that circulation, puts food in the wrong position, or changes the distance from the heater can produce different browning in different spots. Even a batch that weighs less than the stated maximum can be too dense if the pieces form a solid mound.

Most likely causes, in order

1. The basket is too full

Overfilling leaves little open space for hot air to pass around each piece. Food can steam in the center of a pile while exposed surfaces brown. Tower Housewares Support states, “Avoid overfilling the basket, as overcrowding can prevent hot air from circulating properly” (updated August 3, 2026). The AF902C manual likewise says smaller batches cook more evenly.

Capacity numbers are not a promise that every food will brown evenly at that volume. A light, loose food may need a different arrangement from dense potatoes or thick portions. Divide a full basket before changing temperature; the split-batch test is the quickest way to see whether circulation is the limiting factor.

2. Pieces overlap or are different sizes

A thick piece takes longer for heat to reach its center than a thin piece. Pieces lying across one another also create sheltered surfaces. Even when the total weight is within the stated capacity, an irregular pile can cook unevenly. A large potato wedge can hide a smaller wedge, and a folded or doubled piece can stay soft where it touches another piece.

Sort pieces by approximate thickness when practical. Put similarly sized portions together and avoid allowing a larger item to cover a smaller one. This is especially useful for foods cut by hand, where the nominal recipe size may conceal substantial differences.

3. Food was not moved during the cook

Many foods need a shake, toss or turn halfway through. A fixed position exposes one face to the stronger airflow while another face remains against the basket or another piece. Some recipes do not require movement, so follow the recipe and your appliance instructions rather than shaking delicate food automatically. A gentle turn may be safer than a vigorous toss for fragile fish, battered foods or soft vegetables.

If you discover a sheltered side late in the cycle, turn those pieces and continue cooking rather than judging them by the browned side alone. Movement cannot correct a batch that is fundamentally too large, but it often corrects pieces that simply stayed in one orientation.

4. Time, temperature or starting conditions do not match the recipe

Different models heat and circulate air differently. A time and temperature that works in one appliance may leave food underdone in another. COSORI UK lists cold-start loading as one common contributor, but that is vendor guidance rather than a rule for every model. Use the manual’s recommended preheating or cold-start procedure and confirm settings before raising the heat.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Check that the selected program is the intended one, that the temperature unit is correct, and that the timer has not been shortened by an earlier adjustment. If your model calls for preheating, follow that instruction; if it is designed for a cold start, do not assume a separate preheat is required. Correcting the starting procedure is preferable to increasing heat blindly.

5. Food is positioned too close to the heating element

Food touching or nearly touching the element can brown on the exposed surface while the rest cooks differently. Keep the load within the basket or rack positions specified by the manual. A tall pile, an overfilled rack, or an accessory that raises food into the element’s clearance can all change the intended airflow path.

Loose coatings and lightweight pieces deserve extra care because moving air can lift them. Keep batter, crumbs and other loose material away from the element, and use only racks or inserts approved for the exact model.

6. Grease or debris is affecting airflow

Residue in the basket, drawer, vents or around the element can alter circulation and create smoke or hot spots. Cleaning methods and parts that may be removed vary by model. A dirty surface can also make it harder to tell whether a pale area is caused by the food position or by the appliance’s condition.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Inspect the holes in the basket, the drawer path and visible vents. Remove food debris using only the tools and cleaning products permitted in the manual. Do not assume that a dishwasher-safe basket means the housing or heating assembly may be immersed.

7. A repeatable hardware or design pattern

Some stacked dual-basket appliances share heating and airflow hardware. COSORI UK says that arrangement can produce different results between zones, but its explanation is manufacturer-authored and should not be generalized to every dual-basket design. A persistent same-zone pattern is a reason to consult the manual and support team, not proof that the appliance is defective.

Run a controlled comparison before drawing conclusions. If the manual allows independent operation, test each zone alone with the same small batch and settings. A difference that appears only when both zones run may relate to shared capacity or airflow. A zone that remains pale when operating by itself deserves model-specific support.

Step-by-step fix for an uneven batch

  1. Stop and assess the food. If any meat, poultry, seafood or other safety-sensitive food is undercooked, continue cooking it until it reaches the safe internal temperature specified by your local food-safety authority. Do not judge doneness by color alone. Separate pieces that are done from those that need more time so you do not overcook the finished portions.
  2. Reduce the quantity. Divide the batch and cook half at a time. Leave visible gaps between pieces. A smaller test batch tells you whether crowding is the main cause. Note whether the formerly pale area improves when the basket is less dense.
  3. Make the pieces consistent. Cut vegetables, potatoes or other ingredients to similar thickness. Keep larger pieces from covering smaller ones. If portions cannot be made uniform, plan to remove thin pieces earlier and continue the thickest pieces.
  4. Use one layer where practical. Arrange food across the basket floor rather than building a tall pile. If your model includes racks or multiple levels, use only the positions and capacities allowed in its manual. More levels are not automatically better if they obstruct the fan or place food too near the element.
  5. Set a movement point. Set a reminder to shake, toss or turn halfway through when the recipe calls for it. Turn pieces that have been lying across one another so previously sheltered surfaces face the airflow. If the manual specifies a different interval, use that interval rather than a generic halfway point.
  6. Verify the programmed settings. Check the selected mode, temperature and remaining time against the recipe and your model’s manual. Do not compensate for an uncertain setting by blindly increasing temperature; the outside can burn before the center is done. Confirm whether the unit was expected to start cold or after preheating.
  7. Check clearances. Make sure food is not touching the heating element or blocking vents. Confirm that the drawer is fully seated and that any rack is installed in the correct orientation. Remove unapproved accessories while testing, since they can change the distance and airflow around the food.
  8. Repeat with the same ingredients in a controlled test. Use a small, single-layer batch of similarly sized pieces. Record where the first browning appears and whether movement changes the result. A controlled repeat separates a one-off loading mistake from a consistent location-based pattern. Keep the mode, temperature, timing and starting condition the same so the comparison is meaningful.

How to arrange common foods

Fries and other small pieces

Spread pieces in one layer when possible. If the amount requires more than one layer, use a smaller batch or the model-approved rack arrangement and shake at the recipe’s halfway point. Wet surfaces and tightly packed pieces can also slow crisping, so follow the recipe’s drying or oil instructions. Compare pieces from the top and bottom after the shake rather than assuming the top layer represents the whole batch.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Chicken, fish and other individual portions

Leave space around each portion and avoid placing one piece directly on another. Turn portions when instructed. Pieces of unequal thickness should not be expected to finish together; check the thickest piece for doneness. Arrange portions so the thickest sections are not all packed into one sheltered corner.

Vegetables

Cut pieces to a similar size and avoid covering the basket with a dense mound. Delicate vegetables may need a gentler movement than fries; use the recipe’s direction to prevent breaking or drying. If some pieces are much smaller, check them early and leave larger pieces in the appliance longer.

Battered or lightweight foods

Keep batter and loose coatings away from the heating element. A rack or accessory that is not approved for your model can change clearances and airflow, so use only compatible parts. If the coating shifts during cooking, avoid adding more loose material until you have checked the model’s instructions.

Cleaning without creating a new problem

Always unplug the air fryer and let it cool completely before cleaning. Remove the basket and drawer only as the manual permits. Wash or wipe those parts according to the stated materials and finish. Cooling is important both for burn prevention and because handling a hot drawer can damage coatings or seals.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

The AF902C manual gives model-specific precautions: do not use harsh abrasives or oven cleaners, do not immerse the housing, and lightly brush residue from the heating element only if required. Those instructions cannot automatically be applied to another model. Check your own manual for whether the element may be brushed, which detergents are allowed, and which parts are dishwasher-safe.

  • Inspect the basket holes, drawer channel and visible vents for grease or food debris.
  • Do not scrape coated surfaces with metal tools.
  • Keep water away from the electrical housing and controls.
  • After cleaning, dry all removable parts fully before reassembly.
  • Do not open the housing to reach hidden wiring or components.

A soft cleaning brush can help remove residue only when your manual permits brushing. It will not repair a damaged element, sensor or electrical connection. If residue returns quickly, smoke appears, or a component looks damaged, stop using the appliance and contact the manufacturer rather than trying a deeper electrical repair.

Use a simple symptom-and-check table

What you observe First checks What the result suggests
Top pieces brown, lower pieces stay soft Reduce the batch, use one layer, shake or turn halfway Restricted circulation or food shielding is likely
One side browns faster in a single cook Rearrange similarly sized pieces and repeat with a smaller load Position and piece size may explain the difference
Food is pale everywhere Verify mode, temperature, time and any required preheat A setting or starting-condition mismatch is possible
Food near the top burns while the center is underdone Lower the load, keep food away from the element, check rack position Excessive proximity or blocked airflow may be involved
The same basket zone is undercooked on repeated small batches Clean safely, review the manual and contact manufacturer support Model-specific airflow behavior or a fault needs evaluation
Only one zone differs when both baskets run Test each zone separately if permitted and compare identical loads Shared heating or airflow hardware may be influencing the result

When unevenness may indicate an appliance problem

Do not open the housing or attempt electrical repairs. Instead, document the conditions under which the problem occurs: model and serial number, selected mode, temperature, time, batch size, food arrangement, whether you preheated, and which zone stayed pale. Photos of a controlled test can help support staff identify a pattern. Keep your receipt or other proof of purchase if warranty service may be needed.

Consult the troubleshooting section for your exact model when all of the following are true:

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.
  • You have tested a small, single-layer batch of similar-sized pieces.
  • The basket and drawer are clean, dry and correctly seated.
  • Food is clear of the element and vents.
  • You followed the stated time, temperature and movement instructions.
  • The same area still cooks differently across repeated tests.

Tower advises contacting customer service for persistent uneven cooking during the warranty period. Other manufacturers may require proof of purchase, a serial number or specific tests. Follow the support and warranty terms for your appliance before paying for service or discarding it. Support can also tell you whether a zone difference is an expected design characteristic for that model.

Understanding dual-basket and stacked designs

Two-basket models are not all built the same. Some have independent heaters and fans; others share parts of the heating or airflow system. Shared hardware can make the zones respond differently to load, position or selected modes. Manufacturer explanations about a particular model describe that design, not the entire category.

If one zone repeatedly underperforms, run each zone separately if the manual allows it, using the same small test batch and settings. A difference that appears only when both zones operate may relate to shared capacity or airflow. A difference that remains in one zone by itself should be reported to the manufacturer. Do not use a vendor’s product comparison or fries test as proof that every appliance with independent components will cook more evenly.

Should you replace the air fryer?

Replacement is a last step after routine checks and warranty or service options. If you are comparing models, evaluate features that affect consistency rather than relying on a single marketing claim.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.
Comparison point Questions to ask
Heating independence Does each basket or zone have its own heater, and can it operate independently?
Airflow independence Does each zone have an independently driven fan, or do zones share airflow hardware?
Capacity and footprint Will the usable basket area let you cook a single layer without exceeding your counter space?
Cleaning access Can you reach the basket, drawer and permitted element-cleaning areas without unsafe disassembly?
Warranty and service What coverage, parts availability and support process apply in your region?
Independent testing Are consistency claims supported by testing that is independent of the manufacturer?

Do not treat a manufacturer’s product comparison or fries test as independent evidence. Confirm model-level specifications and service terms for the country where you will use the appliance. A larger capacity is not useful if your usual foods still have to be piled deeply, and a compact unit may be more consistent when it allows a true single layer.

Answers to common questions

Why does my air fryer cook food unevenly on one side?

Usually because pieces are crowded, overlapping, different in size or left unmoved. If a small, evenly arranged batch still shows the same one-sided result, check the model’s manual and contact support.

Is uneven cooking a sign my air fryer is broken?

Not by itself. Unevenness is often corrected by changing the batch size, arrangement, movement and settings. A persistent same-zone pattern after those checks warrants manufacturer evaluation, especially while the appliance is under warranty.

Should I raise the temperature to fix a pale area?

No. First verify the specified time and temperature, reduce crowding and move the food as directed. Raising heat can brown exposed surfaces before the center is cooked.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Does preheating always solve uneven cooking?

No. Some models and recipes call for preheating, while others are designed for a cold start. Follow the instructions for your model. If unevenness remains after the correct starting procedure, test the load and arrangement before changing temperature.

Can I use a cleaning brush on the heating element?

Only if your model’s manual permits it. Unplug the appliance and let it cool completely first. The AF902C manual allows light brushing where required and prohibits harsh abrasives, oven cleaners and immersing the housing; other models may differ.

Why is one basket different from the other in a dual-basket fryer?

Zones may use independent or shared heating and airflow hardware, and the load in one zone can affect results in some designs. Test each zone separately if allowed, then consult the model’s support team if the difference persists.

Frequently Asked Questions

Why does my air fryer cook food unevenly on one side?

Crowding, overlapping pieces, different sizes and missed shaking or turning are the usual causes. Test a smaller single-layer batch; if the same side remains pale, consult the manual and manufacturer support.

Is uneven cooking a sign my air fryer is broken?

Not necessarily. Correct the load, arrangement, movement, settings and cleaning first. Persistent unevenness in the same zone after those checks should be evaluated under the warranty or support process.

Should I raise the temperature to fix a pale area?

No. Verify the model’s time and temperature, reduce crowding and move food as directed. Higher heat may brown the outside before the center is cooked.

Can I brush residue from the heating element?

Only when your specific manual allows it. Unplug the unit and let it cool completely, and never use harsh abrasives, oven cleaners or water on the housing.

The Bottom Line

Start with a smaller, single-layer batch of similarly sized pieces, leave airflow space, and shake or turn when instructed. Verify your model’s settings and clean it only as its manual permits. If the same zone remains undercooked after controlled tests, stop guessing: document the pattern and use the manufacturer’s troubleshooting, warranty and support channels.
