Mostly, yes: a 2016 study identified a credible route that helps explain benzene found in some cherry-flavoured beverages. Benzaldehyde, a compound used in natural and artificial cherry flavour, can break down into benzene under heating conditions, particularly when vitamin C is present. This is an additional pathway to the better-known reaction involving benzoate preservatives and vitamin C. It does not mean every cherry drink contains benzene or explain every detection.

How benzene can form in beverages

Benzene is not necessarily added to a drink as an ingredient. It can form at low levels through reactions among other ingredients. The established pathway involves benzoate salts—used as preservatives—and ascorbic acid (vitamin C) or erythorbic acid. The U.S. Food and Drug Administration (FDA) says heat and light can stimulate benzene formation when those ingredients are present. FDA’s Q&A on benzene in beverages describes this pathway.

That pathway did not account for every reported detection in cherry-flavoured products, including some products without benzoic acid as a preservative. The question was whether a component of cherry flavour could provide another precursor.

Why cherry flavour raised a separate question

Benzaldehyde is a compound found in natural and artificial cherry flavours. It is not benzene: the two are different chemicals. In 2016, Christine Loch and colleagues published experiments showing that benzaldehyde could degrade into benzene under heating, especially in the presence of ascorbic acid. Their results offered a plausible explanation for benzene detections in cherry-flavoured beverages even when benzoate preservative was absent. The study abstract on PubMed describes the work.

What the 2016 study established—and what it did not

The study combined model experiments with analysis of market beverages. In the model experiments, heating benzaldehyde produced benzene, with more formation particularly when ascorbic acid was present. In a collection of 170 authentic beverages, the researchers found a correlation between benzene content and the presence of benzaldehyde (r=0.61, p<0.0001). Food-control sampling cited in the study had detected up to 4.6 μg/L of benzene in cherry-flavoured products.

These findings support a mechanism; they are not a survey of today’s cherry drinks. A correlation in the tested beverages does not prove that benzaldehyde caused every detection, and the model experiments do not show that every product containing cherry flavour will form benzene. The authors recommended monitoring benzene in cherry-flavoured beverages and avoiding formulations that combine ascorbic acid with benzoic acid or benzaldehyde.

How the two pathways differ

Pathway Relevant ingredients or conditions What the evidence supports
Benzoate pathway Benzoate salts with ascorbic acid (vitamin C) or erythorbic acid; heat and light can stimulate formation. FDA identifies this as a way benzene can form in some beverages.
Cherry-flavour pathway Benzaldehyde, a component of cherry flavour, can degrade under heating, especially with ascorbic acid. Model experiments and a correlation in 170 market beverages support this as an additional precursor route; they do not establish that it explains every detection.

What FDA’s testing says about detected levels

FDA says it first learned in 1990 that benzene could form at low levels in some beverages containing benzoate salts and ascorbic acid. After receiving further reports in November 2005, it began a survey. From 2005 through May 2007, FDA tested almost 200 soft-drink and other beverage samples; ten had levels above 5 parts per billion (ppb). Nine of those ten contained added benzoate salts and ascorbic acid. The tenth was a cranberry beverage with added ascorbic acid and natural benzoates. FDA’s Q&A and consumer guidance summarize these historical findings.

FDA reported that manufacturers reformulated or discontinued the products it identified above 5 ppb; reformulated products in follow-up testing were below 1.5 ppb. Those results describe the tested products and period, not current formulations or a guarantee about any particular drink. FDA says it continues to test beverages.

The measurement concern is also addressed, within limits, by FDA’s historical validation of an analytical method: its evaluated headspace GC/MS method did not generate benzene in the tested samples during analysis. That finding applies to the method and samples assessed, not every possible testing procedure. FDA’s 2006 method page provides the details.

Does benzene in beverages pose a health concern?

Benzene is a carcinogen, but hazard and risk are not the same question: risk depends in part on the level and exposure. FDA states that levels found in beverages to date do not pose a safety concern to consumers, and that almost all samples in its survey had no detectable benzene or levels below 5 ppb. This is FDA’s assessment of the levels found in the beverages it has evaluated, not a claim that benzene is harmless at any exposure.

The 5 ppb figure is not a universal legal limit for soft drinks. The Environmental Protection Agency’s maximum contaminant level applies to drinking water, and FDA adopted that level for bottled water. FDA says it has no benzene standard for beverages other than bottled water. Its Q&A explains the distinction.
