Goat is the closest direct meat substitute for lamb. Kid goat can be cooked in lamb recipes, while adult goat is particularly well suited to slow stews because its meat is relatively tough before braising but becomes tender and flavorful with moist heat. For an easy supermarket substitute, use beef chuck in long-cooked dishes. Chicken thighs or turkey give curries and stews a milder, leaner result. Lentils, chickpeas, beans, browned mushrooms and seitan cover the main vegetarian and vegan alternatives.

The right choice depends on the dish, the cooking time and the texture you want—not just on replacing one ingredient by weight. Use the guide below to choose a substitute and adjust browning, liquid, simmering and seasoning accordingly.

Choose the substitute by dish

Dish or need Best substitute How to adapt it Main trade-off
Long stew or braise Goat stew meat or beef chuck Brown the pieces, add liquid and cook gently until tender. Goat is leaner and can dry out; beef tastes less gamey than lamb.
Curry Goat, chicken thighs or turkey Keep the aromatics and spices, but change the simmer time to suit the cut. Poultry is milder and leaner; goat stays closest to lamb in flavor and texture.
Roast Kid goat leg or shoulder, beef roast or seitan roast Use a thermometer, then rest the roast before slicing. Beef changes the flavor profile; seitan has structure but no meat fat.
Vegetarian stew Lentils, chickpeas, beans or mushrooms Add legumes early enough to soften; brown mushrooms firmly before adding liquid. Legumes become softer than meat, while mushrooms are less fatty.
Vegetarian roast-like pieces Seitan Marinate and brown it before coating with sauce or gravy. Seitan contains wheat gluten and does not reproduce lamb fat.

Why goat is the closest meat replacement

Kid goat

USDA Food Safety and Inspection Service guidance says kid meat “lends itself to all recipes for lamb,” including chops, legs and shoulders, crown roasts, racks, saddles and kebabs. That makes kid goat the most direct swap when you want lamb’s distinctive savory, slightly gamey character without redesigning the recipe.

Use a similar cut and a similar cooking method. A kid-goat leg can stand in for a lamb leg, and shoulder works well anywhere a lamb shoulder would be braised or roasted. Because goat is generally lean, protect it from drying by avoiding an aggressive oven temperature, keeping a roast covered for part of the cooking time when appropriate, or supplying enough braising liquid for a stew.

Adult goat

Adult goat is usually tougher than kid meat. USDA FSIS notes that adult goat is “almost always stewed because of its relative toughness,” but becomes flavorful and tender in a stew. Choose it for curries, tagines, soups and other dishes with a long, gentle simmer rather than a quick grill or rare roast.

Cut adult goat into stew-sized pieces, brown in batches and simmer until a fork enters easily. The exact time depends on the animal, cut, piece size and cooking temperature, so tenderness—not an arbitrary clock—is the useful test. If the liquid evaporates before the meat softens, add more hot stock or water and continue cooking at a low simmer.

Beef chuck: the practical supermarket alternative

Beef chuck is widely available and contains enough connective tissue to become tender during a long braise. It is a dependable replacement when goat is difficult to find or when you want a familiar, less gamey flavor. Use chuck roast cut into large cubes, or buy beef stew meat and check that the pieces are not unusually lean.

Brown the beef thoroughly before adding onions, spices and liquid. Chuck can tolerate a long simmer, so it suits recipes written for lamb shoulder or neck. Expect the finished dish to taste more recognizably of beef: richer and often more pronounced in beefy flavor, but without lamb’s particular aroma. If the original recipe relies on lamb fat for richness, add olive oil or another suitable cooking fat during browning rather than expecting lean goat or very trimmed beef to provide it.

Chicken thighs and turkey for a milder curry or stew

Chicken thighs

Boneless or bone-in chicken thighs are useful when you want the spice blend, sauce and aromatics to remain central. Thighs stay juicier than breast meat during simmering and are usually ready faster than goat or beef. Add them after the sauce has developed, then simmer only until cooked through and tender; prolonged boiling can still make chicken stringy.

Chicken has a milder flavor and less of the deep, earthy character associated with lamb. Increase flavor with toasted spices, browned onions, garlic, ginger, tomato, stock or a finishing squeeze of citrus rather than simply adding more salt.

Turkey

Turkey thigh is the closer poultry analogue when you need pieces that can withstand a longer simmer. Turkey breast is leaner and can dry out, so it is better for a short curry or a sauce in which the meat is added near the end. Poultry makes a lighter-tasting dish and is useful for diners who do not enjoy gamey meat.

Plant-based substitutes that work in stews

Lentils

Lentils provide protein and body, and they absorb the surrounding spices. Add them early enough to cook fully in the broth. Brown or green lentils generally retain more shape than red lentils; red lentils break down and thicken the sauce, which can be useful in a dense curry but will not resemble chunks of meat.

Chickpeas and beans

Chickpeas and beans give a firm, spoonable bite. Canned versions can be rinsed and added after the sauce is made, while dried legumes need to be cooked according to their package directions before they are incorporated unless the recipe is specifically designed for them to cook in the stew. Their flavor is mild, so blooming spices in oil and browning onions or other vegetables matters more than it does with lamb.

Mushrooms

King oyster and other meaty mushrooms supply umami and a satisfying chew. Slice or tear them into large pieces and brown them hard in a wide pan before adding liquid. Crowding the pan causes them to steam and release water instead of developing the deep browned flavor that makes them convincing in a stew. British Heart Foundation guidance notes that parsley, thyme and coriander, along with umami-rich ingredients such as mushrooms, can add flavor and reduce the need for excessive salt.

Seitan for roast-like vegetarian pieces

Seitan has a firm, sliceable structure that works better than soft legumes when the recipe calls for a roast, carved chunks or a substantial stew component. The cited vegetarian cookbook guidance identifies seitan for roasts and stews. Marinate it first, then brown it in a little oil so the exterior develops color before adding gravy, sauce or braising liquid.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Seitan does not contain the fat or connective tissue found in lamb. Build richness with olive oil, mushrooms, tahini, nuts, coconut milk or a well-seasoned gravy, depending on the recipe. Because seitan is made from wheat gluten, it is not suitable for people with celiac disease, wheat allergy or a gluten-avoidant diet.

How to adapt a lamb stew

  1. Select the cut. Use goat stew meat or adult goat for the closest profile, beef chuck for availability, or a plant option matched to the desired texture.
  2. Dry and season the pieces. Pat meat dry so it browns instead of steaming. Season with salt in line with the recipe; plant-based products may already contain salt, so check their label.
  3. Brown in batches. Heat the pot, add enough fat to prevent sticking and brown each side. Remove pieces before adding onions and aromatics. Mushrooms especially need space to brown.
  4. Build the cooking liquid. Add the recipe’s stock, tomatoes, wine, coconut milk or other liquid, scraping up browned bits. Beef may need a little less added fat than very lean goat; do not leave goat in a dry pot.
  5. Simmer gently. Keep the liquid at a low simmer rather than a hard boil. Goat and beef chuck need time for connective tissue to soften. Chicken thighs require a shorter cooking period, and canned legumes need only enough time to absorb flavor.
  6. Check by texture. Meat is ready when it is tender to a fork. Lentils should be soft, chickpeas and beans creamy inside, and mushrooms tender without collapsing. Add hot liquid if the sauce thickens before the substitute is ready.
  7. Adjust at the end. Taste for salt, acidity and heat only after the substitute has absorbed the sauce. Fresh herbs, lemon or vinegar can brighten a dish that tastes heavy.

Adapting a curry

Using goat

Goat keeps the closest relationship to a lamb curry. Brown the goat, cook the onions and spices, then return the meat to the pot with enough liquid to cover or partially cover it. Adult goat generally benefits from a longer, gentler simmer than kid goat. Keep the lid on if the recipe is losing moisture before the meat is tender.

Using poultry

For chicken thighs or turkey, make the curry base first and add the poultry at the point that allows it to cook through without becoming dry. Bone-in thighs can handle more simmering than boneless pieces. Turkey breast should be cut larger and added later than a tough red-meat substitute.

Using vegetables or legumes

Add lentils at the start when they are intended to dissolve into the sauce. Add chickpeas, beans or browned mushrooms after the aromatics and liquid are established. Seitan can be browned separately and folded in near the end so it absorbs flavor without turning spongy.

Roast alternatives and temperature safety

Kid goat or beef roast

Choose a kid-goat leg or shoulder when you want the nearest lamb-roast experience. Beef roast is easier to source but produces a distinctly beef-forward meal. Roast according to the cut and use an accurate food thermometer rather than judging safety by color.

USDA FSIS says raw goat, beef steaks, chops and roasts should reach a minimum internal temperature of 145°F (62.8°C) as measured with a food thermometer before removal from the heat source. FoodSafety.gov lists 145°F (63°C) for beef, goat and lamb steaks, roasts and chops. Follow the relevant source’s instructions for resting the meat after cooking, and measure in the thickest part away from bone.

Ground goat

Ground goat is a different safety category from an intact roast. USDA guidance lists 160°F (71.1°C) for ground goat. Do not apply the intact-meat temperature to burgers, meatballs or other ground preparations.

Seitan roast

Seitan is already a prepared wheat-based food, so the meat temperatures above do not automatically apply. Follow the product’s package directions, heat it until hot throughout and use a covered roasting method or gravy to prevent the exterior from drying. Resting can help a seitan loaf firm enough to slice, but the timing depends on the recipe.

Comparison of the main options

Option Flavor intensity Texture after slow cooking Relative cooking time Fat level Dietary suitability Typical availability
Goat Closest to lamb; savory and potentially gamey Tender when braised; adult meat starts tough Long for adult goat; varies by cut Generally leaner than lamb Meat-based Often requires a specialty butcher or well-stocked market
Beef chuck Deep beef flavor, less gamey Very tender after a long braise Long Moderate to rich, depending on trimming Meat-based Usually easy to find in supermarkets
Chicken thighs Mild Juicy when not overcooked Shorter than goat or beef Moderate; skinless pieces are leaner Meat-based Widely available
Turkey Mild and lean Thigh stays firmer; breast dries more easily Moderate to short, depending on cut Lean Meat-based Availability varies by region and season
Lentils, chickpeas or beans Mild; take on spice and stock Soft to creamy Varies by type; canned is fastest Very low unless fat is added Vegetarian and vegan Widely available, dried or canned
King oyster mushrooms Umami-rich Meaty when browned, then tender Short to moderate Low Vegetarian and vegan Availability varies
Seitan Seasoning-dependent Firm and sliceable Short; mainly needs heating and flavor absorption Low unless prepared with added oil Vegetarian and vegan, but contains wheat gluten Available dried or prepared, depending on market

Common substitution mistakes

  • Using adult goat for a quick roast: its toughness is a reason to choose a stew or curry instead.
  • Keeping lamb’s cooking time for chicken: poultry can become dry or stringy when simmered for hours.
  • Treating lean goat like fatty lamb: add adequate braising liquid and avoid excessive heat.
  • Failing to brown mushrooms or seitan: without surface browning, both can taste watery or bland.
  • Adding canned beans at the beginning: they may split before the sauce is finished; add them once the base is ready.
  • Using meat temperatures for plant foods: seitan, legumes and mushrooms have different preparation instructions; follow the package or recipe.
  • Over-salting before the substitute cooks: sauces reduce and prepared seitan or canned goods may already be seasoned.

A practical shopping checklist

For a meat-based stew, look for goat stew meat or kid goat, or choose a chuck roast that you can cube yourself. For poultry, boneless chicken thighs are the most forgiving, while turkey thigh offers a firmer, leaner option. Plant-based cooks can combine dried lentils, canned chickpeas or beans, and king oyster mushrooms to create contrasting textures. Seitan chunks are the most useful purchase for a roast-like shape. An instant-read meat thermometer is the essential safety tool for intact and ground meat.

Bottom line: match the substitute to the cooking method

Choose goat when preserving lamb’s flavor and texture is the priority: kid goat can follow lamb recipes, and adult goat belongs in a slow stew. Choose beef chuck when availability and reliable braising matter more than matching lamb’s flavor. Choose chicken thighs or turkey for a milder, leaner curry. For vegetarian dishes, use lentils, chickpeas or beans for substance, brown mushrooms for umami, and seitan when you need firm pieces that can be roasted or carved.
