A 2007 laboratory study showed that an engineered surface could repel liquids and then become wettable when electrical voltage was applied. The researchers measured contact angles as high as 150° without voltage, but this was a demonstration of tunable wetting—not a non-stick coating for pans or a proven consumer product.
What the “switch” did
Ahuja and colleagues designed a surface whose interaction with liquid could be changed electrically. With no voltage, the surface was superlyophobic: liquids tended to bead rather than spread. When voltage was applied, the researchers observed a transition toward wetting. The paper’s abstract puts it plainly: “Upon application of an electrical voltage, a transition from the superlyophobic state to wetting is observed.” The study appeared in Langmuir.
That is the sense in which the surface was “non-stick at the flick of a switch.” It describes changing how a liquid wets a material, not a mechanical switch or a coating demonstrated for cooking. “Liquid-repellent” is the more precise description; ordinary cookware non-stick performance is not established by this experiment.
How the nanonail surface was built
The University of Wisconsin–Madison’s account describes a forest of conductive silicon shanks capped with non-conducting silicon oxide heads. In the unpowered state, the geometry helped keep liquid from spreading across the surface. Applying current allowed liquid to pass the heads and spread between the shanks, wetting the surface. “Nanonails” is a vivid name for this nanoscale, capped-shank structure. The important idea is the combination of surface geometry and electrical input: the design made the surface’s wetting behavior controllable rather than permanently repellent.
What the researchers measured
Without voltage, the researchers reported contact angles as high as 150°. A high contact angle indicates that a droplet beads up instead of spreading. Their tested liquids spanned surface tensions from 21.8 mN/m for ethanol to 72.0 mN/m for water. These values describe the laboratory results, not guaranteed performance for every liquid or surface condition. The paper’s publisher record reports the experimental findings.

When the work was published
Ahuja and colleagues’ paper was published online on October 12, 2007, then appeared in the January 1, 2008 issue of Langmuir, volume 24, issue 1, pages 9–14. PubMed’s bibliographic record lists these publication details. The University of Wisconsin–Madison reported on the work on January 29, 2008.

What it might be useful for—and what it does not prove
The university report suggested lab-on-a-chip devices and batteries as possible application areas. Those were prospective uses discussed in 2008, not evidence that nanonail surfaces became products or are currently deployed in those settings.

The study’s core contribution was a way to manipulate small amounts of liquid through a surface’s electrical response. The results do not, by themselves, establish the voltage and current requirements, reversibility, long-term durability, or manufacturing practicality needed to assess a real-world product.

In consumer use, “non-stick” usually means food releases easily from a cooking surface. This study instead examined whether liquids bead up or wet a specially structured surface, and whether voltage can change that behavior. Its results are relevant to switchable liquid handling at small scales, but they are not a test of food release, cleaning, heat resistance, or cookware safety.
