Many sea cucumbers are deposit feeders: they take in seafloor sediment, digest its organic fraction and eject the mineral material. Their food includes microalgae, bacteria, decaying plant and animal material, and tiny organisms—not mud as a food in itself. As they process and defecate sediment, they redistribute organic matter, stimulate microbial decomposition and alter exchanges of nutrients and oxygen between the seabed and seawater.
The effect is not identical everywhere. Species differ in feeding mode, some swim in the water column, and a sea cucumber’s influence depends on its habitat, sediment and food supply. Evidence from a New Zealand experiment, for example, shows both increased ammonium release and reduced benthic microalgae under organic enrichment.
What do sea cucumbers eat?
For many bottom-dwelling species, the short answer is sediment-bound organic matter. A sea cucumber takes in a layer of mud or sand, separates usable material during digestion and passes most mineral grains back to the seafloor. The sediment is the carrier; its organic coating and particles provide the calories and nutrients.

That distinction matters because “sea cucumbers eat mud” is an easy but misleading shorthand. Mineral particles are largely indigestible. The edible fraction can include microscopic algae, bacteria, detritus from plants and animals, and small organisms living between sediment grains. The exact mix changes with depth, grain size, oxygen conditions, season and the species doing the feeding.

Deposit feeding on the seabed
NOAA Ocean Exploration describes deep-sea deposit feeders using modified tube feet around the mouth to ingest seafloor mud, extract nutrition that remains in it and expel undigested sediment. By moving through and processing the upper sediment, they continually disturb the surface layer rather than grazing a single visible food item.
Collecting particles with tentacles
Other species behave more like scavengers. NOAA’s National Ocean Service describes tube feet surrounding the mouth that collect tiny algal particles and microscopic marine animals. These tentacles can sort and gather suspended or freshly deposited particles before they enter the digestive tract. Thus, “deposit feeder” covers a range of behaviors, from swallowing sediment wholesale to selectively picking up particles at its surface.
Species that do not feed on the bottom
Not every sea cucumber is a seafloor deposit feeder. NOAA also describes species that swim through the water column. Their feeding mode and food sources cannot be inferred from the habits of a burrowing or crawling species. Claims about what “all sea cucumbers” eat therefore overstate the evidence.

The main food categories in processed sediment
| Food component | How it reaches a sea cucumber | What the evidence supports |
|---|---|---|
| Microalgae and other tiny algae | Attached to or mixed through surface sediment, or collected by mouth tentacles | A major organic food source; algae were the dominant eukaryotic food detected in sampled Holothuria leucospilota |
| Bacteria | Living on sediment grains, in organic deposits and in ingested material | Consumed by some species; bacterial communities also participate in digestion inside the gut |
| Plant and animal detritus | Dead material settles from the water column or is deposited locally | Part of the organic fraction that deposit feeders process |
| Small organisms and particles | Collected with tube feet around the mouth or swallowed with sediment | NOAA describes microscopic marine-animal particles among the material scavenging species collect |
| Mineral sediment | Taken in along with the organic coating and pore-water material | Primarily a processing medium; much of it is expelled undigested rather than used as food |
How feeding changes the seafloor
A sea cucumber’s digestive tract acts as a conveyor through the seabed. The animal takes in sediment, exposes its organic contents to digestive processes, absorbs some products and ejects a reworked mass as feces. That cycle changes where particles sit, how large organic pieces are and how easily microbes can reach them.
- Ingestion: A mouth surrounded by tube feet gathers particles or draws in surface sediment. In a deposit-feeding species, the ingested material can contain a large proportion of mineral grains.
- Sorting and digestion: Organic coatings, algal cells, bacterial biomass and other digestible compounds are separated from the sediment during passage through the gut. Digestive enzymes and resident microbes help break complex material into absorbable molecules.
- Absorption: The animal takes up usable nutrients for maintenance, movement, growth and reproduction. Some bacteria in the gut also use or transform compounds before the material leaves the animal.
- Egestion: Undigested grains and residual organic matter leave as fecal casts. These casts have a different physical arrangement and chemical accessibility from the original surface sediment.
- Microbial decomposition: Bacteria and other decomposers continue breaking down the remaining organic compounds. Smaller particles and exposed surfaces can make this processing more effective.
- Sediment–water exchange: Dissolved products such as ammonium can move across the boundary between pore water and seawater. The direction and size of the flux depend on oxygen, organic loading, microbial activity and local hydrodynamics.
NOAA summarizes the consumer–microbe connection this way: “The particles they grind down to smaller pieces are further broken down by bacteria and become part of the ocean’s nutrient cycle.” The sentence describes a pathway, not a guarantee that every feeding event improves water quality. Processing can release nutrients while also changing oxygen demand and the abundance of benthic algae.
What the gut microbiome adds
A 2024 Nature Communications study of Holothuria leucospilota provides a detailed example of how food and microbes interact. In the sampled animals, algae were the primary eukaryotic food source identified in gut material. Several bacterial groups were less abundant in feces than in the surrounding sediment, a pattern consistent with those bacteria being consumed.

The relationship is two-way. Some bacteria that live in the gut contribute enzymes capable of digesting food compounds. Other bacteria are themselves broken down and become nutrients for the host. This does not mean a universal “sea cucumber microbiome” operates identically in every species: the finding is tied to H. leucospilota, its habitat and the study conditions.

A species-specific processing rate
The same 2024 article reports, with attribution to earlier work, that an individual H. leucospilota can ingest and defecate up to 88.8 grams of seabed sediment per day. This is a maximum figure reported for that species, not a standard rate for sea cucumbers generally. Body size, temperature, food availability and sediment composition can all change throughput.
Evidence from an organically enriched coastal sediment experiment
MacTavish, Stenton-Dozey, Vopel and Savage tested the New Zealand sea cucumber Australostichopus mollis in a controlled 2012 experiment. They enriched sediment with feces and pseudofeces produced by Greenshell mussels, then compared cores with sea cucumbers against matched enriched cores without them. Measurements included sediment organic matter, bacterial abundance, benthic microalgae, oxygen exchange and nutrient exchange.

What changed after 14 days?
| Measured feature | Result in the experiment | How to interpret it |
|---|---|---|
| Organic matter in the top 0.5 cm of sediment | 10.4% in mussel-biodeposit cores without sea cucumbers; 7.9% in enriched cores with sea cucumbers | Sea-cucumber processing was associated with lower retained organic matter under this enrichment treatment |
| Ammonium exchange | Ammonium efflux increased when sea cucumbers were present | More inorganic nitrogen moved from sediment toward the overlying water |
| Bacterial abundance | Increased with sea-cucumber activity | Reworking and released substrates supported greater bacterial abundance in the tested sediment |
| Microphytobenthos | Grazing reduced microphytobenthos | Less benthic microalgal biomass also means less oxygen production by those algae |
| Sea-cucumber biomass | Mean increase of 1.6% over 14 days | A measured experimental growth detail, not a general growth rate |
The experiment demonstrates why “nutrient recycling” should not be translated into “automatic cleanup.” Sea cucumbers enhanced mineralization-related processes and ammonium release, but their grazing reduced microphytobenthos and oxygen production. Whether that combination is beneficial depends on the management goal and the surrounding ecosystem.
Why results differ among sea cucumbers and habitats
Two studies can report different nutrient effects without either being wrong. The important comparison is not simply whether a sea cucumber was present, but what animal, what sediment and what measurement were involved.

What “recycling nutrients” means in practice
Nutrient recycling is a chain of transformations rather than a single service. Organic material arrives on the seabed, either as natural detritus or as concentrated biodeposit. A sea cucumber consumes part of it, physically breaks up the rest and returns processed material in feces. Microbes then convert remaining organic compounds into dissolved forms. Those forms can be taken up by microalgae or other organisms, transported away in seawater or further transformed under changing oxygen conditions.

The animal therefore links three compartments: the sediment surface where particles accumulate, the gut where selective digestion occurs and the overlying water where dissolved nutrients are exchanged. Its presence can speed some steps, suppress others through grazing and alter the timing of release. A conclusion about ecosystem benefit must specify which step and which measurement improved.
How to read claims about sea cucumbers and “cleaning”
- Check the species: A result for A. mollis or H. leucospilota should remain attached to that species unless broader evidence is available.
- Separate food from carrier: Saying that an animal ingests sediment does not mean mineral grains supply most of its nutrition.
- Identify the setting: Mussel biodeposits in experimental New Zealand cores are not equivalent to every reef, mudflat or aquaculture site.
- Look for the measured variable: Lower organic matter, higher ammonium efflux, more bacteria and lower microalgal production describe different outcomes.
- Watch the time scale: A 14-day experiment reveals short-term responses; it does not establish a permanent change in a whole ecosystem.
- Avoid the detoxification shortcut: Processing sediment can redistribute nutrients and stimulate decomposition, but it does not prove that pollutants disappear or that water quality always improves.
The bottom line for the seafloor
Many sea cucumbers eat the organic fraction of sediment—especially algae, bacteria, detritus and tiny organisms—while using the sediment itself as a transport medium. Their ingestion, digestion and defecation physically rework the seabed and give microbes new material to decompose. That activity can move nutrients such as ammonium from sediment into seawater, but grazing and oxygen effects can occur at the same time. The most accurate description is nutrient processing that varies by species, habitat and food supply, not a universal ocean-cleaning function.
