The heat-related sucralose byproduct discussed in the European Food Safety Authority’s 2026 assessment is chlorinated furan-3-one. EFSA classifies it as a thermal degradation product and says its formation is not expected under the time and temperature conditions of currently authorised uses of sucralose (E 955). However, the agency says formation during variable, high-temperature home uses such as baking or frying cannot be excluded.

That qualification does not show that ordinary baked food contains a harmful dose, or that eating food made with sucralose causes DNA damage. No precise household temperature threshold, recipe-specific formation amount, or human health risk has been established in the cited assessment. A separate compound, sucralose-6-acetate, has also produced limited-relevance laboratory findings, but it is not the heat-formed compound described above.

The short answer: which compound is being discussed?

Sucralose can be discussed alongside several impurities and degradation products, so naming matters. In EFSA’s 2026 re-evaluation, the compound connected specifically with possible formation during heating is chlorinated furan-3-one. EFSA reports an in-silico signal suggesting potential genotoxicity, meaning a computer-based prediction raised a question about possible damage to genetic material. The same opinion says the compound is not expected under the time and temperature conditions of currently authorised food-additive uses.

EFSA’s plain-language summary adds an important limitation: formation during domestic high-temperature uses, including baking or frying, cannot be ruled out because home cooking conditions vary. That is a statement about possibility, not a finding that the compound definitely forms in every recipe or reaches a harmful concentration.

Sucralose-6-acetate belongs in a different category. It is a separate impurity or degradation product discussed in laboratory genotoxicity work. It should not be described as the chlorinated furan-3-one formed when sucralose is heated.

Chlorinated furan-3-one and sucralose-6-acetate are not the same

Question Chlorinated furan-3-one Sucralose-6-acetate
Relationship to sucralose Thermal degradation product Separate impurity or degradation product
How it appears in the 2026 EFSA assessment In-silico genotoxicity signal; formation is not expected under authorised-use time and temperature conditions Limited-relevance in-vitro clastogenic signal in a TK6-cell MultiFlow DNA-damage assay; negative bacterial mutation response
Is it the compound asked about in a heating question? Yes, this is the heat-related compound No; do not present it as the heat-formed compound
What is not established No precise home-cooking threshold, formation rate, dose, or consumer-health outcome is supplied A laboratory result alone does not establish harm to people consuming food

The distinction prevents two common errors. First, a computational alert for chlorinated furan-3-one is not the same as measured exposure in a meal. Second, a positive result in one laboratory assay for sucralose-6-acetate cannot be transferred to chlorinated furan-3-one or treated as proof that baking with sucralose is dangerous.

How could a sweetener produce a byproduct during cooking?

Heating can change food chemicals. A molecule may break apart, rearrange, or react with other ingredients, producing compounds that were not present in the original ingredient. When a sweetener’s structure changes because of heat, the products are called thermal degradation products. The exact products and quantities depend on conditions such as temperature, heating time, moisture, acidity, the surrounding ingredients, and the type of cooking process.

For sucralose, EFSA’s 2026 assessment considered whether chlorinated furan-3-one could form. The agency did not provide a single household temperature at which formation begins, nor did it publish a recipe-independent amount that would form during baking or frying. Without those measurements, it is not scientifically sound to convert the assessment into a rule such as “sucralose becomes toxic above a particular oven setting.”

Why home cooking is harder to predict

Industrial food-additive uses are specified by conditions such as the food category, permitted concentration, processing steps, and intended use. Domestic cooking is less controlled. An oven display may not equal the temperature at every point in the food; pan materials, surface drying, cooking time, moisture, and local hot spots can differ substantially. Frying introduces a different combination of high surface temperature, oil, and water loss. Those variables explain why EFSA says formation in high-temperature home uses cannot be excluded while also saying it is not expected under the conditions of currently authorised uses.

“Cannot be excluded” is not a measurement. It means the available assessment does not justify claiming that formation is impossible under every household condition. It does not establish that a particular cake, sauce, or fried food contains chlorinated furan-3-one.

What EFSA concluded about sucralose safety

EFSA’s 2026 re-evaluation covers sucralose (E 955), its impurities and degradation products, and an application to extend use in fine bakery wares. Its overall conclusion is specific: “The Panel concluded that there is no concern for the genotoxicity of sucralose when used as food additive (E 955).” That conclusion applies to the authorised food-additive uses evaluated by the panel.

The opinion considered several kinds of evidence rather than relying on one test. It reports relevant negative in-vivo mutagenicity results and interprets positive comet-assay findings in the context of other endpoints and a plausible indirect mechanism involving oxidative stress. The conclusion should therefore be reported with its scope intact: EFSA found no genotoxicity concern for sucralose used as E 955 under the evaluated authorised conditions. It did not certify every possible exposure scenario or every conceivable cooking treatment.

What an in-silico signal means

An in-silico signal is a prediction generated from a computational model, often by comparing a chemical’s structure with patterns associated with known hazards. Such a signal can identify a substance that deserves further assessment. It does not demonstrate that the chemical forms in food at a particular level, reaches human tissues, damages DNA in a person, or causes disease.

What the sucralose-6-acetate tests mean

EFSA reports that sucralose-6-acetate produced a clastogenic signature in a MultiFlow DNA-damage assay using TK6 cells. “Clastogenic” refers to effects associated with chromosome breakage or rearrangement. EFSA describes the relevance of that assay system and result as limited and also reports a negative response in a bacterial mutation test. These are laboratory observations about a separate compound, not evidence that chlorinated furan-3-one forms in a home oven or that consumers are harmed by sucralose-containing food.

How this fits the broader idea of process contaminants

The U.S. Food and Drug Administration uses the term process contaminants for unwanted chemicals that can arise during food processing, including heating, drying, or fermenting. This is a general category, not a finding about any one recipe or ingredient. The category helps explain why regulators examine chemicals that may appear after processing, but the definition alone does not prove that chlorinated furan-3-one forms in a given food.

Food processing can create both desirable and undesirable chemical changes. Browning, aroma development, texture changes, and nutrient loss may happen alongside the formation or disappearance of other compounds. A credible safety assessment therefore needs more than a chemical name: it needs evidence that the compound forms under realistic conditions, an estimate of exposure, and toxicological information relevant to that exposure.

What is known—and what is not known—about food made with sucralose

Established by the 2026 assessment

  • Chlorinated furan-3-one is the heat-related sucralose degradation product addressed in the assessment.
  • Its computational profile includes an in-silico signal for potential genotoxicity.
  • Formation is not expected under the time and temperature conditions of currently authorised sucralose uses.
  • Formation during variable, high-temperature domestic baking or frying cannot be excluded.
  • EFSA concluded that sucralose itself raises no genotoxicity concern when used as food additive E 955 within the evaluated authorised-use scope.
  • Sucralose-6-acetate is a separate compound with a limited-relevance in-vitro clastogenic signal and a negative bacterial mutation response.

Not established by the cited evidence

  • A universal oven or frying temperature at which chlorinated furan-3-one begins to form.
  • How much, if any, forms in a particular recipe, brand, batch, pan, or cooking time.
  • A measured consumer dose from ordinary home baking or frying.
  • That detecting a compound, or predicting a hazard in a model, automatically creates a human health risk.
  • That eating food prepared with sucralose causes DNA damage, cancer, or another specific disease outcome.

These boundaries are important because hazard and risk are different questions. Hazard asks whether a substance could cause harm under some conditions. Risk also requires knowing whether people encounter it, at what dose, for how long, and by which route. The cited assessment raises a formation question for certain high-temperature domestic conditions but does not supply the exposure data needed to calculate a household risk from a typical serving.

Can you bake or fry with sucralose?

The 2026 assessment does not provide a reason to claim that every baked or fried food containing sucralose is unsafe. It also does not support claiming that formation is impossible in all domestic conditions. Consumers who use sucralose should follow the product’s stated cooking directions and remember that products formulated for baking may behave differently from products intended only for drinks or cold foods.

General cooking practices can reduce avoidable overheating of any food ingredient, although they are not a proven method for controlling chlorinated furan-3-one because no household formation threshold has been established. Avoid burning food, use the process and time specified by the recipe, and do not treat an oven’s set point as a validated chemical-exposure measurement. Those steps are sensible food-handling practices, not evidence that a particular temperature guarantees safety.

How to interpret alarming headlines about “DNA-damaging sweeteners”

  1. Identify the chemical. Check whether the report means chlorinated furan-3-one, sucralose-6-acetate, or sucralose itself. They are not interchangeable.
  2. Identify the evidence type. A computer prediction, a cell assay, an animal study, and a human exposure study answer different questions.
  3. Check the conditions. Ask whether the finding concerns authorised additive use, a deliberately heated laboratory sample, or an uncontrolled home-cooking scenario.
  4. Look for an amount and exposure estimate. Without a measured concentration or dose, a hazard signal cannot be translated into the risk from a serving of food.
  5. Read the regulator’s conclusion in full. EFSA’s conclusion concerns sucralose used as E 955 under evaluated authorised conditions, while its warning about domestic heating is a qualification about possible formation.

Bottom line for readers

The “DNA-damaging sweetener byproduct” in the 2026 EFSA discussion is chlorinated furan-3-one, a possible thermal degradation product of sucralose. EFSA says it is not expected under the time and temperature conditions of currently authorised uses, but formation during high-temperature home baking or frying cannot be excluded. The assessment does not establish a temperature cutoff, recipe-specific amount, or human health harm. Sucralose-6-acetate is a different compound with a separate, limited-relevance laboratory finding. The most accurate conclusion is therefore cautious: the chemistry merits monitoring and further exposure assessment, but the cited evidence does not show that ordinary food cooked with sucralose causes DNA damage.
