Beef production is linked mainly to methane (CH₄), nitrous oxide (N₂O), and carbon dioxide (CO₂). Methane is produced inside cattle during rumen digestion and released mostly through belching. Methane and N₂O also come from manure and nitrogen cycling in soil. CO₂ and N₂O are generated while producing feed and fertilizer, while fossil energy, land-use change, processing, refrigeration, and transport add further CO₂.

There is no single percentage split that applies to every steak or every country. The answer changes with geography, pasture and feedlot practices, feed composition, manure handling, land-use assumptions, and whether an assessment stops at the farm or follows beef through processing and retail.

A map of greenhouse gases across beef production

The emissions pathway begins before cattle arrive on a farm and can continue until beef reaches a customer. The same gas may have several sources, so identifying both the gas and its location is more useful than assigning one gas to one stage.

Gas Main locations How it is produced What changes the estimate
Methane (CH₄) Cattle digestion; manure storage and treatment Rumen microbes ferment feed. Anaerobic decomposition of manure can also form methane. Feed quality and intake, animal and production characteristics, storage conditions, and manure-management systems
Nitrous oxide (N₂O) Manure, urine, pasture, cropland, and fertilizer applications Nitrogen moves through soils and manure. Direct emissions occur at the site; ammonia and nitrogen oxides can later create indirect N₂O. Fertilizer and manure rates, deposition, soil conditions, and management
Carbon dioxide (CO₂) Feed and fertilizer supply, farm machinery, land-use change, processing, refrigeration, and transport Fossil fuels are burned; manufacturing and moving inputs use energy; clearing or converting land can release stored carbon. Energy sources, transport distance, processing boundary, and land-use assumptions

These stages overlap. For example, a feed crop can require fertilizer that creates N₂O, diesel that creates CO₂, and land conversion that releases additional CO₂ before the crop is fed to cattle.

On the animal: enteric-fermentation methane

Why cattle produce methane

Cattle are ruminants. Microorganisms in the rumen ferment feed and create methane as a by-product. The animal releases it chiefly by belching, rather than by intestinal gas. This is the largest readily identifiable on-farm pathway in many beef systems.

EPA says feed quality and feed intake affect methane production. In general, lower-quality feed and greater intake lead to more methane, although the actual rate also depends on the animal, diet, and production management. A change in forage quality, growth rate, or feeding system therefore changes the estimate even when the number of cattle is unchanged.

What the U.S. inventory numbers mean

The U.S. Environmental Protection Agency’s 2024 inventory reports that beef cattle produced 71 percent of U.S. livestock enteric-fermentation methane in 2022, with 137.0 million metric tons (MMT) of CO₂-equivalent attributed to beef-cattle enteric methane in that year. Both figures describe a U.S. inventory source category. They are not 71 percent of all beef-production emissions, not a global share, and not a complete life-cycle footprint that includes feed, land, processing, or transport.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

EPA’s inventory also treats annual net CO₂ emissions from livestock in this category as zero: CO₂ absorbed by plants and returned through animal respiration is counted as part of a short biological cycle. That convention does not remove fossil CO₂ from diesel, electricity, fertilizer manufacture, land-use change, slaughter, refrigeration, or freight elsewhere in the beef supply chain.

Manure and nitrogen: two gases from several management points

Methane from oxygen-poor manure

Manure contains organic matter. When it decomposes without oxygen, microbes can produce methane. Conditions that keep manure wet or enclosed, including some liquid-storage systems, are more conducive to this pathway than dry handling. The relevant location may be a barn, a storage pond, a tank, or another treatment system rather than the pasture where the manure originated.

Nitrous oxide from manure, urine, and fertilizer

Manure and urine contain nitrogen. After deposition on pasture, storage, treatment, or application to cropland, that nitrogen moves through biological reactions in soil. Those reactions can emit N₂O directly at the managed site. Nitrogen can also leave as ammonia or nitrogen oxides and later contribute to indirect N₂O after it is deposited elsewhere.

Consequently, a grazing system does not avoid nitrogen emissions simply because manure is not collected. The timing and distribution of deposition, soil moisture, temperature, and later fertilizer use determine which pathways are counted and where they occur.

Why manure handling changes results

Two farms with the same cattle numbers can have different methane and N₂O estimates if one stores manure as a liquid and the other deposits it on pasture or handles it in a drier system. An assessment should state whether it includes storage, treatment, field application, and emissions after nitrogen leaves the original farm.

Feed, fertilizer, and land-use change

Emissions before feed reaches cattle

Feed production shifts part of the footprint from the animal to cropland and supply industries. Manufacturing synthetic fertilizer uses energy and can create CO₂. Applying fertilizer, spreading manure on feed crops, leaving crop residues, and depositing nitrogen on pasture can all contribute N₂O. Tractors, harvesters, irrigation equipment, grain dryers, and trucks burn fuel and add CO₂.

Whether a study includes fertilizer manufacture, farm inputs, feed storage, and transport is a boundary decision. A farm-only inventory may count some field emissions while excluding emissions embodied in purchased fertilizer or imported feed. A life-cycle assessment normally attempts to include those upstream processes.

When land conversion releases stored carbon

Expanding pasture or feed-crop area can release carbon stored in vegetation and soil. Clearing forest for grassland is one example; the estimate may include immediate biomass loss and changes in soil carbon over time. Land-use-change results are especially sensitive to the assumed previous land cover, time period, allocation method, and data quality.

In the Food and Agriculture Organization of the United Nations’ global ruminant assessment, which analyzed supply chains around 2005, land-use change associated with grassland expansion into forest was estimated at 14.8 percent of beef-production emissions. FAO cautions that land-use-change estimates vary greatly with assumptions, data, and methods. The 14.8 percent value is therefore a historical modeled finding from that assessment, not a universal current ratio for all beef.

Farm energy and the downstream supply chain

Energy used on farms

Diesel and other fossil fuels used by tractors, pumps, loaders, feed mixers, and generators produce CO₂. Electricity can add CO₂ indirectly when it is generated from fossil fuels. Buildings, water systems, and feed preparation may be included in a detailed life-cycle study, but an on-farm inventory may use a narrower boundary.

Processing, refrigeration, and transport

After cattle leave the farm, slaughter and fabrication require energy. Refrigeration, packaging, cold storage, and distribution can add CO₂, as can transporting animals, feed, carcasses, and finished beef. Retail and consumer stages may or may not be included, depending on the stated system boundary. A number calculated only to the farm gate cannot be compared directly with one calculated to retail without adjusting the boundary.

Why published percentages do not line up

Different figures often answer different questions. The following examples should be read with their scope, year, and unit attached.

Assessment Figure What it covers What it does not establish
U.S. EPA inventory, 2024, reporting 2022 Beef cattle were 71% of U.S. livestock enteric-fermentation methane; beef-cattle enteric methane was 137.0 MMT CO₂-equivalent A U.S. inventory category for methane from livestock digestion The share of all beef life-cycle emissions or a global beef breakdown
FAO livestock agrifood-systems assessment, 2023, reference year 2015 6.2 gigatonnes (Gt) CO₂-equivalent per year Global livestock production and selected supply-chain processes; direct emissions were 60% of the sector total Beef alone, or a direct comparison with the U.S. enteric category
FAO global ruminant assessment, 2013, supply chains around 2005 Enteric methane was about 47% of ruminant-supply-chain emissions; grassland expansion into forest was estimated at 14.8% of beef-production emissions A historical modeled global ruminant and beef assessment A current universal percentage; FAO says results are subject to revision and land-use estimates vary by method
U.S. EPA inventory update, 2025 Enteric-fermentation emissions fell 2.9% from 2022 to 2023 A national source-category trend, largely reflecting a decrease in beef-cattle populations A beef-only percentage change or a global trend across all production systems

FAO summarizes the limitation of complex global modeling this way: “In a complex analysis such as this, results are not definitive, but rather the best assessment that could be made and subject to improvement in subsequent revisions.” That qualification matters most for land-use change, soil carbon, and systems with incomplete records.

How to compare two beef-emissions estimates fairly

Before comparing farms, countries, or production systems, put both studies on the same accounting basis. Use this checklist:

  • Functional unit: Check whether results are per animal, per kilogram of live weight, per kilogram of carcass, or per kilogram of edible product.
  • Geography and year: Record the country or region and assessment year. Climate, yields, herd composition, and electricity sources differ by place and time.
  • Production system: Identify pasture-based, feedlot, mixed, or other systems. Do not infer performance from the label alone; feed, growth, and replacement practices matter.
  • Feed and fertilizer: Check feed ingredients, forage quality, fertilizer manufacture, fertilizer application, manure used on crops, and imported feed.
  • Manure boundary: Confirm whether pasture deposition, storage, treatment, field application, and indirect nitrogen emissions are included.
  • Land-use change: Ask whether conversion of forest or grassland is counted, what baseline land use is assumed, and how carbon is allocated over time.
  • Downstream stages: Note whether transport, slaughter, processing, refrigeration, packaging, retail, and consumer use are included.
  • Gas accounting: Verify whether methane and N₂O are reported as separate gases or converted to CO₂-equivalent using a stated characterization method.

A national inventory category and a life-cycle footprint are not interchangeable. Even when both use CO₂-equivalent, they may count different gases, stages, years, and functional units.

Where emissions occur in a typical supply chain

  1. Feed and input production: Fertilizer manufacture and fuel use create CO₂; fertilizer, manure, residues, and pasture nitrogen can create N₂O; land conversion can release stored carbon.
  2. Animal digestion: Rumen fermentation creates methane that cattle release primarily by belching.
  3. Pasture or housing: Urine and manure begin nitrogen and methane pathways immediately, depending on moisture and oxygen conditions.
  4. Manure storage and treatment: Oxygen-poor storage can generate methane, while nitrogen handling can produce direct and indirect N₂O.
  5. Harvest, farm operations, and transport: Machinery, pumps, dryers, and vehicles add fossil CO₂.
  6. Slaughter, processing, and cold chain: Energy for processing, refrigeration, packaging, and storage adds further CO₂.
  7. Distribution: Moving products to retail and other destinations adds transport-related CO₂ when those stages are inside the study boundary.

What a careful answer should—and should not—claim

The defensible answer is that beef production has three principal greenhouse gases, with methane usually most visible at the animal, N₂O concentrated in manure and nitrogen management, and CO₂ spread across energy use, feed and fertilizer supply, land-use change, processing, and transport. The relative importance of each pathway cannot be stated responsibly without naming the geography, production system, year, functional unit, and boundary.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

For that reason, a single “beef emissions percentage” can mislead when it combines a U.S. inventory statistic with a historical global life-cycle estimate. Use each number only for the category it measures, keep its date attached, and treat land-use and soil-carbon results as method-sensitive rather than fixed constants.
