Apollo 7’s astronauts ate packaged, mostly freeze-dried meals mixed with hot or cold water; wore pressure garments for launch and reentry phases but coveralls during routine work; and spent almost 11 days testing whether an Apollo Command and Service Module could operate reliably in Earth orbit. Walter M. Schirra Jr., Donn F. Eisele, and R. Walter Cunningham launched on October 11, 1968, completed systems tests, engine burns, rendezvous practice, experiments, and seven live television broadcasts, then returned on October 22.

The details below separate what NASA’s September 27, 1968 press kit planned from what later NASA mission accounts report the crew actually did.

Apollo 7 in context: an engineering test, not a lunar landing

Apollo 7 was the first crewed flight of the Apollo Command and Service Module. Its purpose was to show that the spacecraft, its guidance systems, life-support equipment, communications, and Service Propulsion System could work together in orbit before later missions attempted lunar operations.

Schirra, the commander, flew with command-module pilot Eisele and lunar-module pilot Cunningham. Apollo 7 carried no lunar module and did not travel to the Moon. It launched atop a Saturn IB on October 11, 1968, and splashed down on October 22. NASA’s mission overview gives the flight duration as 10 days, 20 hours, 9 minutes, 3 seconds.

Schirra summarized the Saturn ride with the line, “She is riding like a dream.” NASA later quoted General Samuel C. Phillips, director of the Apollo Program Office, describing the mission as having “accomplished 101%” of its planned objectives. That phrase is an enthusiastic assessment, not a literal success measurement.

What food did the Apollo 7 astronauts eat?

The crew ate packaged food selected from more than 60 available items. NASA’s 1968 press kit describes three meals a day built around bite-size, freeze-dried foods that could be rehydrated. The spacecraft’s preparation station supplied either hot or cold water, allowing the astronauts to prepare meals and drinks without conventional cooking.

How an Apollo 7 meal was prepared

  1. Select a packaged item from the available menu.
  2. Add water at the preparation station. Hot water was available for foods that benefited from warming, while cold water could be used for other items and drinks.
  3. Allow the food to rehydrate in its package, then eat it according to the meal plan.

The press kit assigned a planned average of 2,500 calories per crew member per day across three meals. This was a planning figure for the mission, not a measured record of each astronaut’s actual intake.

Examples from the historical menu

The menu was varied by the standards of early spaceflight, although it was still designed around storage, preparation, and weight limits. A sample day in the press kit lists the following foods:

Meal or menu grouping Examples listed by NASA
Breakfast-style items Peaches, bacon squares, cinnamon-toasted bread cubes
Soup and sandwich items Corn chowder, chicken sandwiches
Main dishes Beef stew bites, beef and gravy
Desserts and snacks Sugar cookies, chocolate pudding

Other menu days included applesauce, sausage patties, spaghetti with meat sauce, tuna salad, fruit cocktail, pot roast, chicken salad, and gingerbread. These are examples from the planned menu; they do not establish that every item was eaten every day.

Food preparation became part of the mission’s public demonstration

During the third live television broadcast, about 119 hours into the flight, the astronauts showed viewers how a food package was rehydrated with hot water. The same broadcast showed them vacuuming small pools of condensate and dumping the collected water overboard. The demonstration made an otherwise hidden spacecraft routine visible while also showing that ordinary housekeeping was part of a long-duration flight.

What did Apollo astronauts wear inside the capsule?

The crew did not remain in bulky spacesuits for the entire mission. Clothing changed according to the phase of flight and the work being performed.

Pressure garments for launch and the deorbit phase

NASA’s press kit describes the A7L pressure garment assembly as including a helmet, torso section, and gloves. The astronauts wore this pressure-garment configuration during the first hours of flight and again during the period before the deorbit burn, when a cabin or spacecraft emergency would have made rapid protection especially important.

Constant-wear garments and in-flight coveralls

Under the pressure suit, each astronaut wore a one-piece constant-wear garment similar to long underwear. That same underlayer could be worn with the in-flight coveralls during shirtsleeve operations. The two-piece coveralls provided warmth and included pockets, making them practical for routine work inside the command module.

In practical terms, the usual working outfit was therefore an undergarment and coveralls, while the complete pressure garment assembly was reserved for specific mission phases rather than everyday activity.

The unusual helmet-free reentry

NASA’s later mission account reports that Schirra wore his spacesuit for reentry but omitted the helmet and gloves. All three astronauts had head colds and were concerned that congestion could make it difficult to clear their ears as cabin pressure increased during descent. After discussing the issue with Mission Control, the crew received agreement to reenter without helmets.

This was a decision made for Apollo 7’s circumstances. It should not be treated as the standard configuration for every Apollo reentry or as general advice about pressure suits.

What was a normal day like in Apollo 7?

The 1968 press kit laid out a demanding but flexible work-rest plan. At least one astronaut was supposed to remain awake at all times. The normal cycle was 16 hours of work followed by eight hours of rest, with roughly one hour allocated to each meal. Whenever possible, all three crewmen were expected to eat together.

That schedule was a plan, not a promise that every day followed the same clock. The press kit explicitly allowed changes when mission opportunities, spacecraft conditions, or other factors required them. A rendezvous exercise, engine firing, experiment, or troubleshooting task could shift sleep, meals, and individual duties.

How the routine balanced individual sleep with continuous coverage

  • Continuous watch: at least one crew member remained awake so the spacecraft was never left unattended.
  • Work period: the planned normal work block lasted 16 hours.
  • Rest period: each astronaut was allocated eight hours of rest in the normal cycle.
  • Meals: about one hour was reserved for each meal, with the crew eating together when feasible.
  • Adjustments: the timeline could change to take advantage of opportunities or respond to conditions in flight.

What did the Apollo 7 crew do in space?

Almost everything the astronauts did served the spacecraft test. Their work was not a sightseeing mission with occasional experiments; it was a continuous checkout of a vehicle that future crews would need to trust near the Moon.

Spacecraft and guidance-system checkouts

The crew operated and evaluated the command and service module’s systems, including guidance functions and equipment needed to control, communicate with, and monitor the vehicle. These checkouts helped engineers verify that hardware and procedures worked together under real crewed orbital conditions.

Service Propulsion System burns

Apollo 7 performed planned firings of the Service Propulsion System, the large engine mounted on the service module. The burns tested the engine and associated systems in flight and provided operational experience with maneuvers that would be important on later Apollo missions.

Rendezvous practice with the spent S-IVB

The crew practiced rendezvous and tracking procedures involving the spent S-IVB upper stage. Although Apollo 7 was not going to the Moon, this exercise let the astronauts and flight controllers rehearse the navigation, observation, and maneuvering work required when two spacecraft or stages had to be located and approached in orbit.

Thermal, radiator, photography, and other experiments

NASA’s accounts describe radiator testing, photography, and additional experiments. The astronauts photographed Earth through the command module’s windows. They also performed a passive thermal test by slowly rotating the spacecraft, allowing engineers to study how the vehicle’s surfaces gained and lost heat while exposed to orbit’s changing sunlight and shadow conditions.

The work combined scheduled tests with the practical tasks of recording observations, operating equipment, and maintaining the spacecraft. The press kit’s flexible schedule was necessary because these activities did not all fit neatly into identical daily blocks.

Why were Apollo 7’s television broadcasts important?

Apollo 7 carried out seven live television broadcasts, the first such broadcasts from an American spacecraft. The programs were not merely publicity appearances. They gave viewers a direct look at the command module and showed how astronauts worked, ate, and lived during a mission that otherwise would have been visible mainly through technical reports.

Across the broadcasts, the crew toured the cabin, explained their work, demonstrated food preparation, and showed viewers their nine-day beards. The food demonstration, including the use of hot water to rehydrate a package, translated an unfamiliar orbital procedure into something audiences could understand immediately.

Planned routine versus reported events

Two kinds of information survive in the Apollo 7 record, and they answer slightly different questions. The September 27, 1968 press kit describes what NASA intended: the menu selection, the planned calorie average, pressure-garment phases, the 16-hour work and eight-hour rest cycle, and the expectation that meals would usually be shared.

Later NASA mission accounts describe what the crew is reported to have completed: the engine tests, rendezvous and tracking work, Earth photography, the slow-rotation thermal test, seven television broadcasts, and the helmet-free reentry decision. A planned meal or schedule block should therefore not be read as a precise diary of consumption or sleep, while a reported activity should not be mistaken for a generic rule for every Apollo mission.

What everyday life on Apollo 7 reveals about the mission

The ordinary details—rehydrating food, storing items in coverall pockets, managing sleep, cleaning condensate, and deciding when to wear a pressure garment—were inseparable from the engineering purpose. Apollo 7 had to prove not only that its engine could fire, but also that three people could function inside the spacecraft for nearly 11 days.

The crew’s food system had to work repeatedly; clothing had to support both emergency protection and comfortable shirtsleeve labor; the schedule had to preserve rest while keeping a continuous watch; and the television demonstrations had to be conducted without disrupting technical objectives. Together, those details made Apollo 7 a test of a complete crewed spacecraft system rather than a single piece of hardware.
