Hone after sharpening. Sharpening removes metal to create a new cutting edge; honing then realigns and smooths that edge. Afterward, hone routinely between sharpening sessions. When honing no longer restores cutting performance, sharpen again.
Honing and sharpening do different jobs
Knife edges can lose performance in two ways. The very thin edge may bend or become displaced during normal cutting, while repeated wear eventually removes enough metal that a new bevel is needed. Honing addresses the first problem; sharpening addresses the second.
What honing does
Honing realigns a slightly bent edge and can smooth its surface. In the common steel-rod use case, it removes little or no metal, so it is suitable as frequent maintenance. A honing steel, ceramic rod or diamond rod is drawn along the edge at a controlled angle.
What sharpening does
Sharpening uses an abrasive stone, disc or other sharpener to remove metal and form a new cutting edge. Because it changes the bevel, it should be performed less often than honing and with more attention to angle and pressure.

Where deburring fits
Sharpening commonly leaves a burr—a fine fold of metal along the opposite side of the edge. Light finishing or deburring strokes reduce that burr and smooth sharpening scratches before the knife is used. Deburring is a finishing step, not a substitute for either sharpening or routine honing.
The correct order after a knife has gone dull
- Inspect and clean the blade. Remove food residue and check for chips, cracks or other damage. A damaged blade may need professional repair rather than ordinary maintenance.
- Sharpen with a suitable abrasive. Use a stone or guided sharpener appropriate for the blade and keep the intended angle consistent. Uneven angles create an irregular bevel and can reduce cutting performance.
- Deburr and finish. Use light, controlled strokes to remove or reduce the burr and refine the sharpening scratches. Excessive pressure can roll the new edge.
- Hone the newly sharpened edge. A steel, ceramic or diamond rod aligns the edge after the abrasive work. This is the post-sharpening step that brings the bevel into service-ready alignment.
- Wipe and test safely. Clean away any metal particles, then test on suitable food or paper while keeping fingers clear of the edge. Do not test sharpness by running a finger along the blade.
Victorinox’s care guidance explicitly says to use the honing steel after sharpening. Its procedure holds the knife at about 20 degrees, draws the blade from heel to tip, and repeats the motion five times on each side. Treat that angle and count as a practical manufacturer recommendation, not a universal rule for every knife geometry.

How often to hone versus sharpen
Hone frequently
Hone before or after each cooking session, or every few uses, depending on how much the knife is used and how the edge feels. Frequent light passes are preferable to forceful passes on a severely misaligned edge.

When a properly performed honing session no longer restores clean cuts, the edge has likely worn beyond realignment and needs material removal. Victorinox gives roughly 30–40 uses or a few times per year as examples, with the interval varying by use and knife condition. These are manufacturer recommendations, not independent universal standards; a heavily used knife may need sharpening sooner, while an occasional-use knife may go longer.

Choosing a rod or sharpener
| Tool | Metal removal | Best use | Angle control and finish |
|---|---|---|---|
| Traditional honing steel | Little or none in normal use | Frequent alignment between sharpening sessions | Requires a steady hand; leaves a smooth aligned edge when used correctly |
| Ceramic rod | Can remove a small amount of metal | Alignment with mild refinement for suitable steels | Hard, fine surface; use controlled pressure to avoid unnecessary wear |
| Diamond rod | More abrasive than steel or ceramic | Harder steels or light corrective work | Removes material faster; a consistent angle is especially important |
| Sharpening stone or guided sharpener | Yes—this creates the new edge | Dull knives that honing cannot restore | Stones demand technique; guided systems simplify angle control |
A rod should not be chosen solely by appearance. Match its hardness and abrasiveness to the blade steel and the amount of correction needed. A coarse sharpener is for establishing an edge, not for every maintenance session.
Grit progression and finishing
When using stones or a staged system, begin with a coarse stage only when enough metal must be removed to establish the bevel, then move to finer stages to refine it. HONE documents a progression in which a #400 stage establishes the edge before finer refinement and ceramic finishing. Follow the progression specified for your system; skipping directly to a fine surface may not repair a significantly dull edge, while starting coarse unnecessarily removes metal.

Signs you are honing instead of sharpening—and vice versa
- Honing is appropriate: the knife still cuts but feels less crisp, and a few light rod passes restore performance.
- Sharpening is needed: the knife remains dull after correct honing, slips on food, or cannot make a clean paper cut.
- Stop and inspect: you see a chip, bent section, corrosion pit or damage that ordinary passes cannot correct.
- You may be overworking the edge: heavy pressure, many rapid passes or a strongly abrasive rod is being used for routine alignment.
Safe technique for post-sharpening honing
Use a stable cutting board or another secure surface, keep the rod and knife path controlled, and move from heel toward tip so the entire edge contacts the rod. Keep the angle consistent on both sides and use light pressure; the rod does not need force to realign a freshly sharpened edge. Wipe the blade afterward and store it so the edge cannot strike other utensils.
