Red wine is made by fermenting crushed grapes with their skins, then pressing the fermenting wine, managing any malolactic fermentation, and confirming stability before adding sulfur dioxide or aging. The choices that matter most are fruit condition, skin contact, temperature, cap management, and whether—and when—to encourage malolactic fermentation.

How red wine is made, step by step

Harvest timing depends on grape variety and the intended style: sugar, acidity, flavor development, and fruit condition all affect the resulting must. Penn State Extension explains how harvest decisions relate to variety and style in its winemaking overview.

Harvest, sort, crush, and destem

After harvest, damaged or unsuitable fruit can be sorted out. Grapes are destemmed and crushed to release juice and create must—the mixture of juice, skins, seeds, and sometimes stems that enters fermentation. Red wine typically ferments with skins in contact with the juice, allowing color and other compounds to be extracted.

Choose whether to cold soak

A cold soak chills crushed must before alcoholic fermentation begins. It can be used to shape extraction and style, but it is optional, not a required stage. It also calls for adequate cooling and attention to oxygen exposure and microbial conditions. The Australian Wine Research Institute outlines practical cooling and vessel-covering considerations in its cold-soak guidance.

Ferment with skins and manage the cap

Yeast consumes grape sugar and produces alcohol and carbon dioxide. As carbon dioxide lifts skins and other solids to the surface, they form a cap. Punchdowns push that cap back into the liquid, helping maintain skin contact and manage extraction.

Temperature guidance depends on the context. Penn State gives 68–86°F as a typical range for red-wine fermentation; an Oregon State University Extension microfermentation protocol uses 70–80°F. These are distinct guidance ranges, not a single universal target. The Oregon protocol checks Brix and temperature daily and uses punchdowns; it is a small-sample research procedure, not a general commercial recipe. See Penn State’s overview and OSU’s microfermentation protocol.

Press and assess alcoholic fermentation

When to press depends on the wine and production plan. In OSU’s specific microfermentation protocol, pressing follows a prescribed period of skin contact, and the wine is checked for dryness before the next steps. That timing should not be treated as a rule for every batch. For any process, measurements are more reliable than judging fermentation by appearance alone.

What malolactic fermentation does

Malolactic fermentation (MLF) is a bacterial conversion, commonly carried out by Oenococcus oeni, in which malic acid becomes lactic acid and carbon dioxide. It is not a second yeast fermentation. MLF can reduce perceived acidity and influence aroma, so pursuing it—or preventing it—is a style and process decision. It is common in red winemaking, but not automatic or appropriate in every wine.

OSU Extension describes MLF conditions and confirmation in its winemaking protocol. Its guidance gives 64–71°F as an MLF temperature recommendation and describes completion as malic acid below 30–50 mg/L, confirmed with an enzymatic assay or external laboratory analysis. These are source-specific recommendations; wine chemistry, cellar conditions, and culture instructions also matter.

Sequential or simultaneous MLF?

With sequential inoculation, MLF is started after alcoholic fermentation; simultaneous inoculation introduces bacteria while alcoholic fermentation is underway. Sequential MLF is common and gives the winemaker more opportunity to assess the wine after yeast fermentation. Simultaneous MLF can suit some styles, but depends on compatibility between yeast and bacteria and on fermentation conditions.

Consideration Sequential MLF Simultaneous MLF
Timing After alcoholic fermentation. During alcoholic fermentation.
Control over whether MLF proceeds Allows a decision after assessing the wine. Commits to managing both fermentations together.
Culture compatibility Still relevant when selecting bacteria and managing conditions. Especially important because yeast and bacteria coexist.
Risk if alcoholic fermentation is troubled Separates the MLF decision from the active yeast fermentation. A troubled alcoholic fermentation can create volatile-acidity concerns; the choice needs careful management.
Style considerations Can be chosen to suit the desired acid and aroma profile. May suit some styles and desired diacetyl character, but is not ideal in every case.

Both approaches remain sensitive to temperature and sulfur dioxide. OSU’s discussion of the trade-offs and compatibility considerations is available in its protocol; guidance on MLF strategies is also covered by the Australian Wine Research Institute.

Confirm MLF before stabilizing and aging

Do not assume MLF is complete because bubbling has stopped or the wine tastes less sharp. OSU advises confirming low residual malic acid with an enzymatic assay or external laboratory analysis before adding sulfur dioxide. This sequencing helps avoid treating an unfinished conversion as a stable wine.

After fermentation and stabilization decisions, aging can allow flavors to develop. The time required varies with the wine and its intended style; a home-winemaking process may take a couple of months, but that is not a universal aging schedule. Penn State discusses the broader home-winemaking timeline and aging in its winemaking overview.

Practical decisions that shape the result

  • Fruit condition: Sort carefully and account for the condition of the grapes when planning handling and oxygen management.
  • Extraction: Decide whether a cold soak fits the intended style and whether cooling and microbial management are practical.
  • Fermentation monitoring: Track temperature and sugar progress rather than relying on visual signs alone; the OSU small-sample protocol checks Brix and temperature daily.
  • MLF strategy: Choose whether to pursue MLF and whether to inoculate sequentially or simultaneously based on style, compatibility, and process conditions.
  • Stability: Confirm MLF completion analytically before adding sulfur dioxide.
