Neither category wins on every measure. A well-fortified soy beverage usually has a lower environmental footprint than cow’s milk and can provide useful protein. Precision-fermented dairy can deliver actual dairy proteins, including whey proteins with dairy-like functionality, while potentially cutting land, water and greenhouse-gas impacts dramatically. The right choice depends on the finished product’s nutrition label, fortification, allergen statement and independently documented life-cycle data—not on whether it is called “plant-based” or “animal-free.”

The short answer

Choose fortified soy or another well-formulated plant beverage when your priorities are avoiding dairy allergens, avoiding animal agriculture, or selecting a product category that generally has lower emissions than cow’s milk. Choose a precision-fermented dairy product when you want dairy proteins and their functional properties without a cow, provided you can tolerate milk protein and the product’s formulation meets your nutritional needs.

“Better” changes with the comparison. A low-protein, unfortified oat or nut beverage is not nutritionally equivalent to milk. A precision-fermented drink may match dairy protein quality but still contain added sugar, saturated fat or insufficient micronutrients. Environmental performance can also change with electricity, feedstock, factory scale, crop region, packaging and the way the life-cycle assessment counts nutrition.

The most defensible comparison is product-specific: read protein, calcium, vitamin D, vitamin B12 and iodine values; check saturated fat and added sugar; then look for life-cycle results that state the functional unit and the assumptions behind energy and feedstock.

What precision-fermented dairy actually is

Precision fermentation uses a programmed microorganism in a controlled bioreactor to make a specified protein. One common target is beta-lactoglobulin, a major whey protein. The microorganism is a production platform; it is not a cow and the final ingredient is not made by milking an animal.

After fermentation, the target protein is separated and formulated into products such as milk, yogurt, cream cheese or ice cream. Because the molecule is a dairy protein, it can provide dairy-like foaming, emulsification, texture and amino-acid nutrition even though no animal is used.

Two labels are easy to confuse:

  • Lactose-free means the milk sugar lactose is absent or reduced to a level allowed by the relevant labeling rules.
  • Milk-allergen-free means milk proteins are absent. Precision-fermented whey is still a milk-protein allergen unless the finished product is specifically formulated and labeled otherwise.

“Animal-free” describes the production method, not the protein’s biological identity. Someone with a milk allergy must follow the finished product’s allergen declaration and should not infer safety from “animal-free” or “lactose-free.”

Nutrition: where the categories differ

Protein amount and quality

Cow’s milk is a dense source of high-quality protein and supplies a broad micronutrient package, including calcium, phosphorus, riboflavin, vitamin B12 and iodine. Precision-fermented whey can reproduce a specific dairy protein, so its amino-acid profile and functional behavior are closer to dairy than to most plant beverages.

Plant beverages vary sharply. In a 2022 composition comparison, cow’s milk and soy drinks were the only tested categories that generally exceeded 3% protein; most other alternatives contained 1% protein or less. A beverage can look similar in a glass while contributing far less protein per serving.

Do not assume that “plant-based” means low protein or that “fermented” means high protein. Compare grams per serving and serving size on the actual carton. If protein is a major reason you drink milk, soy is usually the plant category to check first, while rice, almond and some oat formulations may contribute considerably less.

Calcium, vitamins and iodine depend on fortification

Fortification is decisive for plant beverages and varies by brand, country and recipe. Reviews commonly report added calcium, vitamins D and B12 and sometimes vitamin A, but the amounts are not standardized across the category. Iodine is especially important to check because it is not consistently added to plant drinks.

Replacing dairy with an unfortified plant beverage can reduce calcium, iodine, vitamin B12 and vitamin D intake. A product that supplies little protein and no meaningful calcium or B12 should not be treated as a one-for-one milk replacement without obtaining those nutrients elsewhere.

Precision-fermented dairy proteins do not automatically bring every nutrient found in a glass of cow’s milk. Calcium, vitamin D, B12, iodine, vitamin A, phosphorus and other nutrients depend on what the manufacturer adds to the finished formulation. The protein may be biologically dairy while the beverage around it is a separately designed recipe.

Calories, saturated fat and added sugar

Calories and fat are formulation questions, not category guarantees. Check the nutrition panel for total calories, saturated fat and added sugar. A plant beverage can be low in saturated fat but sweetened; a precision-fermented dairy drink can contain dairy proteins yet use added oils or sugars to reproduce mouthfeel. Unsweetened versions are not automatically nutritionally complete, and “dairy-like” texture does not indicate a particular calorie level.

A 2024 soy case study illustrates the trade-off

A 2024 nutritional life-cycle assessment found that soy drink had lower impact and fewer calories than cow’s milk in that case study. However, the unfortified soy drink was a worse calcium source. The result demonstrates why environmental and nutrition comparisons must be read together: a lower-impact beverage can still require fortification or another dietary source to match a nutrient supplied by milk.

Nutrition comparison at a glance

Question Cow’s milk Precision-fermented dairy Plant-based beverage
What supplies the protein? Proteins produced by a cow A specified dairy protein made by microorganisms in a bioreactor Proteins from crops such as soy, oats, peas, nuts or rice
Protein level Typically protein-dense; exact amount depends on product Can reproduce a whey protein, but total grams depend on formulation Highly variable; a 2022 comparison found most tested alternatives at 1% protein or less, while soy drinks exceeded 3%
Calcium, D and B12 Naturally supplies several nutrients, though amounts vary by type Must be included in the finished recipe unless naturally present from other ingredients Often added through fortification; amounts differ by product and country
Iodine A commonly recognized milk nutrient Depends on formulation Not consistently added; check the label
Milk allergy Contains milk proteins Precision-fermented whey remains a milk-protein allergen unless the finished product says otherwise Usually avoids milk protein, but inspect the allergen statement for the complete recipe
Lactose Usually present Can be lactose-free Normally lactose-free

Sustainability: what the evidence can and cannot say

Why plant beverages usually score better than cow’s milk

A 2024 review of 70 studies found that plant-based milk generally has lower greenhouse-gas emissions than animal milk. Cow-dairy hotspots include enteric fermentation from cattle, feed production and manure management. Plant beverages shift impacts to crop cultivation, processing, packaging, transport and, for some crops and regions, water use.

“Generally lower” is not the same as “lowest in every location.” Irrigation, fertilizer, yield, shipping distance, packaging material and factory energy can change the result. Almond, oat, soy, pea and other beverages do not share one environmental profile.

Why precision fermentation can have a large advantage

Precision fermentation can avoid the land required to grow feed and raise dairy cattle, and it avoids enteric methane from cows. The process instead requires feedstock for the microorganisms, electricity and heat for fermentation and downstream purification, plus conventional packaging and distribution.

A 2022 modeled study estimated about 10 tonnes of carbon-dioxide equivalent per tonne of precision-fermented protein. Its water-scarcity results ranged from 290 to 11,300 cubic metres of world-equivalent water per tonne, depending on the scenario. That wide range is a warning against treating one modeled number as a universal product score.

The Good Food Institute’s 2026 synthesis reported, for the analyzed precision-fermentation proteins, reductions of up to 97% in greenhouse-gas emissions, up to 99% in land use and more than 96% in water scarcity. The same synthesis stresses that electricity and feedstock can materially change the result. “These benefits are real but not automatic.”

A 2021, company-commissioned life-cycle assessment for Perfect Day’s fermentation-derived protein, reviewed to ISO 14067, reported 91–97% lower greenhouse-gas emissions, 29–60% lower nonrenewable-energy demand and 96–99% lower blue-water consumption than total protein in cow’s milk. Those figures describe that assessment’s product, boundary and assumptions; they are not a guarantee for every precision-fermented recipe.

2024 review of 70 milk studies Plant-based milk generally had lower greenhouse-gas emissions than animal milk Plant impacts still vary by crop, region, processing and packaging

The functional unit can reverse an apparent winner

Life-cycle assessments may compare a litre, a kilogram, a serving, a calorie or a quantity of protein. A 2025 review found that plant-based analogs usually look better per unit of mass or volume, but the advantage can shrink when protein quality and bioavailability are included.

For a household choosing a breakfast drink, volume and calories may be useful measures. For an athlete replacing a protein serving, digestible protein may be more relevant. Ask what the assessment compares before accepting a headline percentage. A beverage that uses less water per litre but supplies very little protein is not necessarily the best replacement when protein is the intended function.

How to compare two cartons or tubs

Use the following sequence for the exact products you are considering. It prevents a strong environmental claim from hiding a weak nutrition profile, and it prevents a high-protein label from being mistaken for a low-impact process.

  1. Define the job. Decide whether you need a milk replacement for drinking, coffee, cooking, yogurt texture, protein, calories or allergy avoidance. The appropriate comparison differs by use.
  2. Record protein per serving. Note grams and serving size. For plant beverages, pay special attention to whether the product is soy-based or one of the many alternatives that tested at 1% protein or less in the 2022 comparison.
  3. Check calcium, vitamin D, B12 and iodine. Write down both the amount and the percentage of the applicable daily value. Do not assume that a plant beverage is fortified or that a precision-fermented product contains the micronutrients naturally associated with cow’s milk.
  4. Review the ingredient and nutrition panels. Compare saturated fat, total calories, added sugar and sodium. These values are recipe-specific and can differ substantially inside the same category.
  5. Read the allergen statement. Precision-fermented whey can be lactose-free and still require a milk-allergen warning. Check the complete finished-product label rather than relying on front-of-pack terms.
  6. Find the environmental basis. Look for greenhouse gases, land, water and energy, and identify whether the result is per litre, kilogram, calorie or unit of protein. Note the country, electricity mix, feedstock and whether the assessment is modeled, independently reviewed or company commissioned.
  7. Check processing and availability. Fermentation-derived ingredients may be produced at demonstration or limited commercial scale, and retail availability and regulatory status can change by country. A theoretically strong option may not be available where you live.
  8. Compare like with like. Match unsweetened with unsweetened, fortified with fortified and protein-focused products with products serving the same purpose. Comparing a fortified soy drink with an unfortified nut drink answers a different question than comparing two complete milk replacements.

Which option fits common goals?

If your priority is the lowest likely climate impact

Start with a plant beverage whose life-cycle evidence covers the crop and region you are buying in, with fortified soy often providing a stronger protein profile than many alternatives. Precision fermentation may achieve even larger reductions than conventional dairy in some modeled or assessed systems, but verify the product’s electricity and feedstock assumptions and do not generalize an “up to” result to all manufacturers.

If your priority is dairy-like protein and functionality

Precision-fermented dairy is the closer biological match because it can contain a specified whey protein. That can matter for foaming, emulsification, texture and amino-acid composition. Confirm the total protein per serving; reproducing one dairy protein does not guarantee that the finished drink matches the protein concentration of cow’s milk.

If you have a milk allergy

Do not use precision-fermented whey unless your clinician has given you a safe, product-specific plan. The protein remains a milk allergen. Choose a product with a clear allergen statement that excludes milk protein and check for cross-contact information where relevant.

If you are lactose intolerant

Lactose intolerance and milk-protein allergy are different conditions. A lactose-free precision-fermented product may address lactose, but it does not address a milk allergy. Plant beverages are normally lactose-free, yet their fortification and protein still need checking.

If you need a nutritional milk replacement for children or vulnerable adults

Prioritize adequate protein, calcium, vitamin D, B12 and iodine, and consider the entire diet rather than a single carton. Because formulations differ, compare the label with the nutrient requirements relevant to the person and consult a qualified clinician or dietitian when intake is restricted.

Market and regulatory context

The Good Food Institute’s 2024 industry report identifies beta-lactoglobulin as the primary whey protein in milk and yogurt and describes demonstration-scale production and regulatory work. The organization also reported animal-free milk and yogurt made with fermentation-derived whey in U.S. stores. Retail presence, permitted claims, product recipes and regulatory status are volatile and differ by jurisdiction, so a historical market example should not be treated as a guarantee of current local availability.

For shoppers, this means the category is still less standardized than ordinary dairy or established plant beverages. Product labels and current local rules matter more than a category-wide promise.

What remains uncertain

No cited study proves that every precision-fermented product beats every plant-based product on total environmental impact or health. Many precision-fermentation assessments are modeled or company commissioned, while plant-milk results vary by crop and region. Direct, product-specific comparisons that measure nutrition and life-cycle impact using the same functional unit remain limited.

That uncertainty does not make the categories equivalent. It means the honest conclusion is conditional: fortified soy and other well-formulated plant beverages usually offer a lower-impact route than cow’s milk, while precision-fermented dairy offers the possibility of dairy-level protein functionality with very large resource reductions. The finished product’s label and transparent environmental accounting decide which option is better for your purpose.
