Farmers reduce postharvest losses most effectively by finding the exact point where quantity or quality is lost, then matching the fix to the crop. Measure harvest, drying, storage, transport and sales separately; use moisture control and sealed storage for grains, and shade, rapid cooling, clean packaging and dependable transport for fresh produce. Equipment such as a grain moisture meter or cold room helps only when it addresses a measured bottleneck and can be operated, maintained and kept sufficiently utilized.

What the “one-third” figure really means

“Around one-third” was a widely used estimate for food lost and wasted across the whole food system. The Food and Agriculture Organization of the United Nations (FAO) said in its 2019 report that this historical estimate was being refined as measurement methods improved. It should not be read as a current, universal postharvest rate for every farm or crop.

Current indicators separate stages. FAO’s SDG indicator estimates that 13.3% of food was lost globally after harvest and before retail in 2023. That measure covers losses in activities such as handling, drying, storage, transport, wholesale and primary processing. Separately, FAO’s policy gateway reports that 19% was wasted at retail, food-service and household levels, based on 2024 United Nations Environment Programme (UNEP) statistics. These percentages describe different stages and years, so they should not be added together as a single farm-loss figure.

Country, commodity, season and infrastructure differences are substantial. A farm may lose little weight but suffer a large financial loss if bruising downgrades a crop, while another may lose volume to moisture, insects or spoilage. Local measurement is therefore the starting point for an effective program.

Find the critical loss point before investing

Map every handoff

Record what enters and leaves each stage: field, harvest container, drying area, store, vehicle, market or processor. Weighing is ideal, but counts, crate totals and quality grades can reveal patterns when scales are unavailable. Note dates, weather, waiting time and the reason for each rejected or downgraded batch.

Use a simple loss log

  • Quantity: kilograms, bags, crates or units at the start and end of each stage.
  • Quality: moisture, mold, insect damage, bruising, breakage, discoloration or decay.
  • Cause: late harvest, rough handling, rain, inadequate drying, pests, rodents, heat, vehicle delay or an unsold crop.
  • Value: selling price for sound produce versus the price of downgraded, processed or discarded material.

This record distinguishes a storage problem from a market problem. Buying a dryer will not solve a crop that waits three days for a buyer, and building a cold room will not correct damage caused during harvest.

Stage What to check Typical corrective direction
Harvest Maturity, weather, cutting or picking damage Crop-specific harvest timing, trained workers and suitable tools
Drying Moisture variation, rain exposure and drying delays Covered drying space, even drying and moisture verification
Storage Moisture, insects, rodents, mold and leaks Clean, sealed, ventilated storage matched to the crop
Transport Heat, vibration, stacking and waiting time Better containers, scheduling, roads and loading practices
Sale or processing Rejections, oversupply and buyer specifications Aggregation, contracts, demand information and alternative outlets

Improve harvest and handling first

Harvest at the crop’s usable maturity

Harvest timing affects both durability and market value. Crops picked too early may have poor quality or require extra handling; crops picked too late can split, shatter, over-ripen or encounter bad weather. Local extension guidance and buyer specifications should determine the target maturity rather than a single calendar date.

Reduce physical damage

Train workers to avoid dropping, dragging or overfilling containers. Use crop-appropriate knives, crates or padded collection bins, and keep harvested produce out of direct sun. Bruises and cracks can become decay routes even when the product initially looks saleable.

Shorten the unprotected interval

Plan labor, containers and transport before harvest begins. Move grain promptly to a protected drying area and move fresh produce to shade or cooling as soon as possible. A delay during the hottest part of the day can erase the benefit of careful picking.

Stop grain from spoiling in storage

Verify drying instead of judging by feel

Grain stored with excess moisture supports fungal growth, contamination and insect activity. A moisture meter gives a numerical check before the crop enters storage. UNEP cites the GrainMate moisture meter as an example of a tool farmers can use to verify that maize and other grains are sufficiently dry.

There is no universal moisture threshold that applies to every grain, bag, silo or climate. Use the meter according to its crop setting and follow the moisture level specified by local extension services or the storage system manufacturer. Sample several points in a lot; surface grain can be drier than the center.

Match the store to the hazards

  • Clean the store and remove old residues before loading a new crop.
  • Keep bags or bulk grain off the floor and away from walls where condensation or leaks can wet it.
  • Seal openings against insects and rodents, while providing the ventilation required by the storage design.
  • Inspect regularly for temperature changes, caking, insects, leaks and off-odors.
  • Use hermetic or other sealed systems only when grain is dry enough and the container is properly closed.

Drying equipment, airtight bags and improved stores are complementary: a sealed container cannot rescue grain that was loaded wet, and a good store cannot prevent damage introduced during harvest.

Protect highly perishable produce

Remove field heat quickly

Fresh fruits, vegetables, fish and other highly perishable products generally need shade, ventilation and rapid cooling rather than grain-style drying. Clean, stackable containers reduce compression and contamination. Packhouses can provide sorting, washing where appropriate, grading and pre-cooling in one controlled location.

Maintain the chain to the buyer

Cooling is effective only if temperature is maintained during loading, transport and delivery. Refrigerated vehicles, insulated containers or ice systems must be sized for the expected volume and travel time. Poorly planned loading, repeated door opening and long waits in the sun can overwhelm the cooling system.

A 2022 UNEP-FAO report states that 14% of food produced for human consumption is lost and that lack of effective refrigeration contributed to 12% of total food production lost in 2017. The report calls inadequate refrigeration a leading contributor, but a cold chain is not automatically the best answer for every farm.

Coordinate transport, markets and processing

Some “postharvest” losses are commercial rather than technical. Harvesting without a viable buyer can leave sound produce unsold. Cooperatives and buyers can reduce this risk by sharing demand forecasts, agreeing quality specifications, aggregating loads and scheduling collection. Better roads, crates sized for the vehicle and fewer reloading events reduce both damage and waiting time.

When fresh produce cannot reach a premium market in time, processing, drying or another local outlet may preserve value. The option should be assessed before harvest, including food-safety requirements and the cost of moving a smaller, processed product.

Is cold storage worth it for a small farm?

Cold storage can pay off when a high-value, perishable crop has enough volume and price difference to cover construction, energy, labor, maintenance and financing. It is a poor investment when utilization is seasonal, electricity is unreliable, roads prevent timely collection or no buyer rewards better quality.

Option Best fit Main requirements Risks and limits
Shade and ventilation Short holding periods for many fresh crops Roofed space, airflow, clean containers Does not remove heat; limited holding time
Packhouse with pre-cooling Aggregated produce needing grading and rapid dispatch Water or sanitation controls where used, trained staff, reliable power Needs steady throughput and buyer coordination
Cold room High-value perishables with predictable volume Insulation, refrigeration, monitoring, maintenance and energy Capital and operating costs; underuse can make each stored unit expensive
Refrigerated transport Longer routes or temperature-sensitive deliveries Suitable vehicle, pre-cooled load, route scheduling Fuel, maintenance and loading delays can compromise performance
Drying or sealed grain storage Grains and other storable crops Correct drying, moisture checks and pest exclusion Unsuitable for crops that require fresh-market quality

For a small farm, shared facilities, mobile cooling or cooperative aggregation may be more practical than owning a large room. Compare the expected reduction in loss and quality improvement with the facility’s realistic utilization, not its maximum rated capacity.

Choose interventions by evidence and economics

For each proposed change, document:

  • the crop and its perishability profile;
  • the specific loss mechanism it addresses;
  • up-front investment and recurring operating cost;
  • energy source, reliability and climate suitability;
  • capacity, expected utilization and seasonal demand;
  • maintenance, spare parts and operator training;
  • effects on grade, price and buyer access; and
  • environmental performance, including energy and refrigerant considerations.

Run a small pilot where possible. Compare measured quantity and quality before and after the intervention, including labor, energy, repairs and rejected loads. A technically effective solution that cannot be maintained or paid for is not a durable loss-reduction strategy.

A practical first 90 days

  1. Weeks 1–2: Choose one crop and log quantities, quality and causes at harvest, drying, storage, transport and sale.
  2. Weeks 3–4: Identify the stage with the largest avoidable loss or value reduction and verify the finding with several batches.
  3. Month 2: Apply low-cost changes: better harvest timing, gentler containers, shade, cleaning, scheduling and buyer coordination.
  4. Month 3: Test the relevant equipment, such as a moisture meter for grain or pre-cooling for produce, and record operating cost and results.
  5. After the pilot: Scale only if the measured savings, quality gains or improved price justify the capital, training, maintenance and energy requirements.

The objective is not to eliminate every loss. It is to prevent avoidable loss at the stage where a farmer can make a practical, economically sound change.
