To build an offline recipe app for Mom, treat recording, transcription, recipe extraction, and saving as separate steps. Keep the recording or transcript available for checking, let her edit the recipe draft, and store the finished recipe on the device. The key technical choice is the speech API: Apple documents an on-device path through SpeechAnalyzer transcriber modules, but its SFSpeechRecognizer authorization guidance describes a flow that sends audio to Apple servers.
Design the app around a recipe Mom can trust
A spoken recipe is more than a list of ingredients. It may include the reason for an ingredient, a remembered substitution, or an instruction such as “keep stirring until it looks right.” Preserve that original context instead of replacing it with extracted fields.

- Record: Save the spoken recipe as an audio file.
- Transcribe: Convert the recording to text using a speech path suited to the app’s privacy and connectivity goals.
- Review: Show the transcript and let Mom correct it.
- Structure: Turn the reviewed text into an editable recipe draft.
- Save: Persist the recipe on the device so it remains available across app launches.
Keeping steps distinct makes mistakes easier to spot. A misheard quantity can otherwise become a misleading ingredient entry, while a transcription error can erase a useful family detail.

Record the recipe with a deliberate control
Apple documents AVAudioRecorder for recording audio from the system’s active input device to a file. On iOS and tvOS, configure AVAudioSession with the record or playAndRecord category. AVAudioRecorder supports stopping and pausing a recording, as well as specifying a duration.
Make recording status unmistakable: provide an obvious record/stop control and a visible indication when the microphone is active. Before the first recording, explain why the app needs microphone access. If access is denied, tell the user how to enable it in system settings and leave the rest of the app usable.

Keep the original audio, or provide a deliberate way to keep it, when Mom may want to check a name, amount, or phrase later. Recording duration, storage use, and deletion should be understandable in the app; Apple’s cited overview does not establish a universal maximum memo length.
Choose a speech path that matches the offline promise
Apple’s Speech framework supports live and prerecorded audio. Its current overview names SpeechAnalyzer and modules including SpeechTranscriber. However, Apple’s documentation distinguishes the network behavior of its APIs, so “Apple speech recognition” alone does not establish that audio stays on the device.

The SFSpeechRecognizer authorization guidance requires the NSSpeechRecognitionUsageDescription Info.plist value and says to obtain authorization before using the relevant APIs. Apple warns that omitting the purpose string can cause a crash when using those APIs.
Before promising that a particular iPhone, operating-system release, or language works offline, verify the selected module’s availability, device compatibility, language assets, and performance on the actual target hardware. The cited documentation does not establish a complete compatibility matrix or a transcription accuracy guarantee.

Show the transcript before extracting recipe fields
Put the transcript in front of the user before presenting an extracted recipe as finished. Speech recognition can be uncertain, and recipe details are consequential: “one” versus “five,” teaspoons versus tablespoons, or minutes versus hours can change the result.

- Ingredient names, quantities, and units
- Oven temperatures and cooking times
- Step sequence and the relationship between ingredients and directions
- Names, substitutions, and conversational notes that carry family context
Recipe extraction should produce an editable draft, not an unquestionable final recipe. If the original audio is retained, make it easy to refer back to when a transcript is unclear.
Save recipes locally, with cloud sync as a separate choice
SwiftData provides Apple-documented building blocks for modeling and persisting app data. A recipe model could include a title, ingredients, directions, the person or source, the recording date, the raw transcript, and an optional reference to the audio file. For ingredients, keep the original text even if the app also stores a parsed amount and unit; that gives Mom something faithful to review when parsing is uncertain.
SwiftData models, relationships, a ModelContainer, and a ModelContext can support persistence, while Apple’s guide to preserving model data across launches explains how to keep app data available between launches. Start with local storage as the baseline for offline use. SwiftData can also sync through CloudKit when configured with the required capabilities, but syncing is an independent product decision—not a prerequisite for local recipes to work.
A local-first design is not by itself proof that every subsystem keeps data private. Be explicit about the chosen transcription path, optional sync, backups, and any analytics or other services the app uses. Give the user a way to review and delete recipes and recordings, and consider consent before recording another person’s voice.
Build the first useful version in a small sequence
- Create the recording flow. Set up AVAudioSession appropriately, add a clear record/stop interaction, and write recordings to files with AVAudioRecorder.
- Select and verify transcription. Choose between SpeechAnalyzer modules and other speech APIs based on the required network behavior. Check deployment and language requirements on the hardware and OS versions you intend to support.
- Add transcript review. Show recognized text before extraction and make edits straightforward, especially for measurements, temperatures, timing, and order.
- Extract an editable draft. Map the reviewed content into recipe fields while retaining the raw transcript and, if desired, a link to the audio.
- Persist on the device. Use SwiftData or another suitable local persistence approach, then decide separately whether CloudKit sync belongs in the app.
This design makes the important promise concrete: a family recipe can be recorded, checked, corrected, and kept available on the device, while the app’s actual speech path determines whether voice audio is sent to Apple servers.
